For a liter jar we will need:

Prepare the cucumbers: put them in a basin and fill them with cold water for 2 hours. After that, wash them and cut off the ends on both sides.

We take jars and put dill, horseradish leaves, currants and cherries in them. Horseradish can also be taken by the root. We also add pepper, bay leaf and garlic. If you need spicy cucumbers, you can add hot pepper. Next, fill the jars with cucumbers. They should be located quite tightly.

After this, add sugar, salt and vinegar. Pour boiling water, close the lid and set to sterilize. After this, roll up the lids, wrap them in a towel and leave to cool.

As soon as the jars have cooled, put them away for storage.

Two methods of pickling

There are two options for pickling cucumbers.

The first is the cold method. In this case, the brine is prepared from cold water and salt. Cucumbers are placed in jars with spices and herbs and filled with cold brine. Cover the jars with nylon lids and store in a cool place. The cucumbers will be ready in a month. This is a longer cooking method.

If you pour hot brine over the cucumbers, they will be ready in 5-7 days. If the recipe uses vinegar, then only the second method is suitable. Place spices (bay leaves, spices, horseradish and currant leaves) into boiling water with salt and pour in the prepared cucumbers.

Preparing brine for cucumbers is not difficult. The main thing is to know how much salt to put in. On average, this is two tablespoons per liter of water. But this indicator can be changed, and then the cucumbers are more or less salted.

Pickling cucumbers for the winter in a 2 liter jar. Real jam!

Required ingredients:

  • cucumbers
  • Red pepper – 2 pcs.
  • Garlic – 4 cloves
  • Horseradish and currant leaves
  • Peppercorns – 2 pcs.
  • Allspice – 4 pcs.
  • Vinegar 9% - 1 tbsp. l.
  • Salt - 1 tbsp. l.
  • Sugar - 2 tbsp. l.
  • Dill

Wash the cucumbers and soak them in cold water for 5 hours. Prepare the greens.

Place herbs, peppers, and garlic in jars. After that, add the cucumbers themselves.

Pour boiling water into the jar and let stand for 10 minutes. After this, drain the water and add more boiling water for 10 minutes.

Prepare the brine using the drained water: add salt, sugar and boil for 5 minutes.

Pour the brine into jars and add vinegar. Roll up the lids, turn over, wrap in a towel and leave to cool. After the jars have cooled, remove them.

Cool pickle

Cucumbers in this brine turn out crispy and taste lightly salted, despite the large amount of salt.

  1. For a three-liter jar you need to take young cucumbers, horseradish leaves, black currants, cherries, fresh dill, two cloves of garlic, a glass of salt, a small spoon of vinegar and 2 liters of water. Place the cucumbers in a suitable container and add all the herbs and spices to them.
  2. Separately prepare the brine for the cucumbers. Place half a glass of salt per liter of water. In our case, let's take two liters of liquid and a glass of salt. It is better to take filtered or boiled water, cooled. We dilute the brine and pour it over the cucumbers. They should be completely covered with liquid.
  3. After three days, wash the vegetables and put them in a jar. You don't need to add any more spices. Fill the cucumbers with boiling water without salt, pour in a small spoon of vinegar and roll up. Store in a cool place. The cucumbers turn out very tasty. Repeatedly pouring water makes them moderately salty and crispy.

Crispy cucumbers for a 3 liter jar

For a three-liter jar we will need:

  • cucumbers – 5 kg.
  • hot pepper – 1 pc.
  • horseradish root – 1 pc.
  • garlic – 1 head,
  • cloves – 10 pieces,
  • allspice peas – 4 peas
  • black peppercorns – 4 peas
  • bay leaves – 6 pcs.
  • dill and parsley
  • vinegar 9% - 25 g.
  • salt – 2 tbsp. l.
  • sugar – 1 tbsp. l.

Wash the cucumbers and soak them in cold water for 5 hours. It is better to use small cucumbers up to 20 cm.

We are preparing the jars. Place cloves, garlic, bay leaf, dry and fresh pepper on the bottom. Add dill and parsley. Cut the horseradish root into small pieces.

We take the cucumbers out of the water, cut off the ends on both sides and put them in jars.

Pour boiling water into the jars and close the lids. So we warm them up for 10 minutes. Then pour the water into a saucepan and add salt and sugar. Boil the brine. Add vinegar to the jars and fill with boiling brine.

We roll up the lids of the jars, turn them over and leave them to cool.

How much vinegar mixture should be used for a liter jar of cucumbers?

Traditionally, no more than a few tablespoons of the ingredient are used per 1 liter of water . If table vinegar is in the concentration range from 3% to 15%, then the amount is determined mathematically. As a standard, 80 ml of 9% or 100 ml of 6% are added per liter, so you can easily calculate the required amount of the ingredient.

The sugar to salt ratio is also important . The more salt added, the brighter the taste of the pickling. Example - if you need lightly salted cucumbers, then you need to add no more than 20-30 grams per liter. To make it salty, use at least 50 grams. A large amount of sugar will make the appetizer with a sweet tint, and if you add more acetic acid, you will get a sweet and sour marinade.

Classic brine recipe with 9% vinegar:

  • salt – 40 – 50 g;
  • sugar – 30 g;
  • 80 ml vinegar.

Recipe with 70% solution:

  • salt and sugar - in the same amount per liter of water;
  • vinegar - 10 ml or one teaspoon.

An example of such a cucumber recipe, ingredients for a liter jar:

  • 700 g vegetables;
  • 3 blackcurrant leaves;
  • 2 cloves of garlic;
  • 2 pcs. sweet pea,
  • 3 pcs. black pepper;
  • 2-3 pinches of cloves;
  • 1 horseradish leaf;
  • 1 bay leaf;
  • cherry leaf;
  • optionally, the tip of hot pepper, this will add a spicy aftertaste.

To prepare the solution:

  • 2 tablespoons salt;
  • a tablespoon of sugar;
  • one dessert spoon of 70% acetic acid;
  • liter of water (per jar).

If desired, you can add pieces of carrots, plums, apples or bell peppers to the cucumbers.

To make a sweet marinade, increase the amount of added sugar , but at the same time reduce the content of salt and vinegar (or leave it the same).

Brine mixture (liter) – 150 g of sugar, 40 g of salt and one teaspoon of citric acid.

Sweet and sour brine is prepared with a predominance of sugar and acetic acid . Salt is added in moderation. An example of marinade per liter of water is 300 g of sugar, 30 g of salt and 150 ml of vinegar 9%.

To make cucumbers spicy to taste, you need to add one ingredient - chili peppers to the main composition of the preparation. In this case, the marinade is prepared in a classic way, but you should add 2 small hot peppers to each jar of pickles.

  • a kilogram of fresh cucumbers suitable for pickling;
  • small chili peppers, 2 pieces per jar;
  • garlic clove;
  • liter of water;

Preparation for the winter

Brine for cucumbers for the winter is prepared in the same way as for everyday pickling. They are usually prepared in large quantities in large containers (buckets or barrels) and without vinegar. A lot of spices are used for pickling, which give vegetables an extraordinary taste and aroma.

For 10 kilograms of cucumbers you need to take 350 grams of dill (inflorescences, stems and seeds), 60 grams of horseradish leaves, 20 grams of garlic, some black currant leaves. You can use any spices you like.

How to prepare pickle for cucumbers?

  1. Take 60 grams of salt for 1 liter of water. It should be coarsely ground and not iodized. Now put the spices on the bottom of a suitable container, and then the cucumbers.

Initially soak the cucumbers in cold water for three hours.

We take a jar, put herbs, pepper, garlic, currant leaves and laurel on the bottom. Now we fold the cucumbers soaked in water tightly and tightly. Top with more seasonings and a horseradish leaf.

Features of preparing marinade with vinegar for preparing cucumbers

What vinegar solution is suitable?

Attention! An exception is if the user has done the sealing many times and knows what taste suits him individually, and for this it is necessary to select the type of vinegar in the required concentration that he likes most.

Less experienced users are better off using a traditional supplement , you can just choose a different concentration. Ingredients for 1 liter:

  • cucumbers;

  • peppercorns, cloves, cherry leaf.

Soak the cucumbers in water for 2 hours. In liter jars (pre-washed) put chopped onion, cloves of garlic and carrots, parsley and dill cut into strips. Add cucumbers.

Ingredients:

  • Cucumbers - 1 kg.
  • Salt - 2 tbsp. l.

Required ingredients:

  • Cucumbers – 1-1.5 kg
  • Dill
  • Horseradish leaves - 2 pcs.

  • Salt - 5 tbsp. l.

  • Red hot pepper - 1 pc.

Wash and soak the cucumbers, then cut off the ends. Place the spices in the jars and pack the cucumbers tightly.

Then pour boiling water into the jars and cover with lids. So the jars should stand for 10 minutes.

Prepare the marinade. Boil water and dissolve salt, sugar and citric acid in it. Pour hot marinade over cucumbers in jars.
