This dressing has a pleasant, rich range of flavors - it is prepared on the basis of soy sauce, rice vinegar and sugar with the addition of aromatic garlic and ginger, as well as sesame oil. By the way, sesame oil goes perfectly with all types of edible algae.
The appetizer has a crispy texture and a pleasant taste; it will perfectly decorate the table as a salad or side dish. This dish is a storehouse of nutrients. Kombu seaweed is a rich source of iodine, an essential element for a healthy body, and is also high in dietary fiber (fiber). Black rice vinegar contains a large amount of valuable amino acids and antioxidants, as well as vitamin E, phosphorus and calcium. Unrefined sesame oil has a beneficial effect on digestion, the cardiovascular system and metabolism.
Ingredients (for 2 servings):
- dried Kombu seaweed (kelp) - 15 g,
- vegetable oil - 2 tbsp.,
- dried red chili pepper - 2 pods,
- green cilantro - 2-3 sprigs.
for dressing sauce:
- light soy sauce – 0.5 tbsp.,
- black rice vinegar – 0.5 tbsp.,
- sesame oil - 1 tsp,
- garlic - 2 cloves,

First you need to prepare the Kombu seaweed. In the Middle Kingdom, fresh or dried seaweed is used with equal success for this salad. In our case, it is dried seaweed.
Place a piece of dried seaweed in a suitable container and fill it with water. Leave to swell for 15 minutes - this is quite enough. The algae will swell from the water and become noticeably thicker than dry algae.
Drain the water, squeeze out the seaweed and cut it into thin strips, like noodles.

Now the seaweed straws need to be blanched. Wait until the water boils again and blanch the seaweed for 2 minutes. Then place the straw on a sieve and rinse with running water. Leave to drain.
Peel the garlic and ginger, then cut them into small cubes.
Place the ingredients for the sauce, including ginger and garlic, into a bowl of suitable size. Stir the contents until the sugar and salt dissolve.
Place seaweed strips in a heatproof bowl and pour the sauce on top. At the same time, try to keep the ginger and garlic in a pile on top.
In the smallest frying pan (for example, IH Diamond HappyCall Frying Pan (3001-0139) 20 cm), heat the vegetable oil until very hot, then add the dried red chili pods, continue to fry until they begin to darken.
As soon as the pods begin to change color, immediately pour hot oil from the frying pan into a container with algae.
At the same time, try to get the hot oil onto the pile of ginger and garlic.
Then mix the seaweed straws and the dressing. Salad ready. When serving, the salad can be decorated with chopped cilantro along with the stems.
This salad (or cold appetizer) is good either freshly prepared or chilled.
