Beets are extremely useful in their raw form, because during a long period of cooking, all the microelements necessary for the body go into the water. Everyone knows about the benefits of raw vegetables, but not everyone is ready to chew hard fibers. By grating vegetables on a coarse grater, people will completely protect their teeth from the labor-intensive process of chewing, especially since young beets themselves are unusually juicy. And if you want a clearly structured type of vegetable fiber, then buy a Korean carrot grater, because you can grate any hard vegetables on it.
Raw beet and carrot salad with cucumber
Many people know about the ideal combination of boiled beets and carrots with pickled cucumber in vinaigrette. But not many people risk transferring this combination to a salad made from similar raw ingredients. But in vain, and it’s not even about the spicy filling. Try it and you will be very pleased. To prepare the vegetable base you will need one piece at a time:
- carrots;
- beets;
- cucumber;
- blue onion
A salad of raw beets and carrots will turn out much piquant if you add one tablespoon of mustard grains to the dressing. In addition, the ingredients for the sauce include:
- olive oil (in extreme cases, replace it with any other vegetable oil) – 3 tbsp. spoons;
- ground black pepper – 2 g;
- salt, sugar to taste;
- wine vinegar - a few drops.
We already know that vegetables just picked from the garden are much juicier and sweeter than those that have been stored for a long time. Therefore, let’s not miss the opportunity to make such a salad in the summer as often as possible.
Recipe for fresh vitamin salad from beets, carrots and apples
Ingredients:
- raw small beets
- raw small carrots
- average apple
- lemon juice - teaspoon
- 2 tablespoons vegetable oil
How to cook:
- Wash, peel and grate all vegetables coarsely. It is recommended to cook the apple last in the salad - it may darken from oxidation.
- Collect all ingredients in containers and add a few lemon crystals, mix, add oil.
- When placing the salad on the table, optionally sprinkle with fresh green onions and your family’s favorite herbs.
Vegetable base
Let's start the chopping process with onions. Beautifully chop the sweet and extremely healthy blue onion into half rings. The cucumber does not need to be peeled, because it contains the lion's share of vitamins. Let's arm ourselves with a large grater and grind the cucumber mass. A raw beet and cucumber salad recipe will disappoint you if you don't drain the grated cucumber in a colander and let the juice drain out properly. Be sure to do this, otherwise the dish will be watery. After this, all that remains is to grate the carrots and beets, combine all the vegetable ingredients and pour in a spicy dressing. Recipe with carrots

Ginger is simply indispensable for burning calories, and raw beets cleanse the stomach well with fiber. Therefore, this recipe for raw beet salad will appeal to those who like to go on a diet, and will also be suitable as lunch for a fasting day. Here we will also use a complex dressing, for which you will need the following ingredients:
- olive oil - a quarter cup;
- juice of half a lemon;
- apple cider vinegar – 1 tbsp. spoon;
- turmeric and ground ginger - 1 teaspoon each;
- salt and pepper.
Here is a list of vegetables for our dietary dish:
- large beets - 1 piece;
- carrots – 1 piece;
- thick stalk of celery;
- parsley – 200 g.
If you grate carrots and beets on a coarse grater, you should visually get about 2 times more beets than carrots. Chopped parsley should occupy ¼ of the resulting beet volume.
Herring and beet salad
To prepare you will need:
- 1 boiled beet; - 150 g champignons; — 150 g of herring, preferably lightly salted; - tomato; - large red onion; - 150 g mayonnaise; - 2 boiled eggs; - a small bunch of greens: lesson and parsley; - 1 teaspoon butter; - salt, black allspice.
To prepare the salad, you need to wash the champignons and cut them into small cubes. Then simmer them in butter, pepper and salt. While the mushrooms are cooling, you need to cut the onions, beets and tomatoes into small cubes. Pepper and salt them. Now you need to finely chop the eggs, herbs and herring. The salad can be served in layers, or you can simply mix all the ingredients. If you put the vegetable salad in the refrigerator for a couple of hours, its taste will be much richer.
Preparing the sauce
Let's not disrupt technological culinary processes and arm ourselves with a separate bowl for preparing the filling. This raw beet salad recipe only guarantees perfect flavor when poured right before serving. Therefore, if you are not going to serve the dish right away, then put the chopped vegetables in the refrigerator and place the dressing nearby: combine the ingredients immediately before serving.
Mix olive oil, spices, lemon juice and vinegar, add some salt and expect that the specific beetroot taste will simply drown in the spicy sauce. Consequently, such a dish will be appreciated even by those who, to put it mildly, do not like beets.
With nuts and prunes
Not everyone likes this salad, because not everyone likes the combination of sweet prunes and spices. But it turns out really original, many guests will like it. Some even add citruses, but we won't. Grocery list:
- 3 beets
- 2 cloves of garlic
- 6 prunes
- 6 pieces of nuts (we will use walnuts)
- 60 gr. mayonnaise
- 0.5 tsp. salt
- A pinch of pepper
Let's start cooking:
- We cook the root vegetable. It needs to be washed, but the skin should not be removed. Depending on the size, the vegetable can cook from 30 minutes to 1 hour.
- We clean the main product. Three it on a fine grater.
- Pass the garlic through a press.
- Place the prunes in a bowl. Fill with boiled water. Cover the container with a lid and wait 5 minutes.
- Drain the water from the prunes. Remove the pit from the last one and chop it into small pieces.
- Cleaning the walnuts. Finely chop with a knife. A blender is not the best idea, because we don’t need powder; the recipe calls for hard parts of the nuts.
- Next, mix all the processed ingredients. Add dry spices and season with sauce.
- It is advisable to put the dish in the refrigerator for 1 hour so that it is saturated with spices.

Raw beet salad: recipes without spicy dressing
As they say, you can whip up a light salad without using a spicy sauce. We take beets, carrots and an apple, wash the vegetables, peel them, and remove the core from the apples. Grate the ingredients into a specially prepared bowl. This recipe for raw beet salad contains citric acid. Pour a few grains into the grated apple so that the mass does not turn black. True, beets themselves are capable of coloring any of the components, but we’ll still play it safe. All that remains is to pour in a couple of tablespoons of sunflower or olive oil, mix everything - and our quick vitamin salad is ready!
For garlic lovers
If we continue to recall purely male salads, which women also eat with pleasure, albeit in smaller quantities, then we cannot ignore the traditional beets with garlic. The dish is most often prepared from boiled beets, but today we have a raw food diet at the forefront, so we will use fresh vegetables for cooking. Take the beets, peel them, grate them on a coarse grater and put them in a bowl. Separate large cloves from a whole head of garlic, peel them and squeeze them through a garlic press into the beets. If you don’t mind your fingers, you can easily grate the cloves on a fine grater. By the way, those who like it spicy will have to increase the dosage of garlic. Season the mixture with mayonnaise and mix. Raw beet salad with garlic is ready!
Recipe 4: Beet salad with garlic and horseradish
This salad is also dressed with sour cream, which can be replaced with mayonnaise if desired. For those on a healthy, low-calorie diet, make a salad dressing by mixing lemon juice with olive oil.
Required ingredients:
- 100 ml – sour cream;
- 4 teeth - garlic;
- 2 pcs. - beet;
- 50 g – horseradish.
Cooking method:
Of course, the first thing we need to decide is what kind of beets we will use when preparing the salad - boiled or raw. It is important to note that some varieties of raw beets are so tasty and tender that heat treatment will only eliminate these invaluable characteristics of the root vegetable. Therefore, try to buy delicious root vegetables and prepare beet salads with garlic from raw ingredients.
So, directly to the dish, the beets are rubbed with long strips, the garlic is pressed with a garlic press. Horseradish is also grated; for this dish we need 3 tablespoons of grated horseradish. Separately prepare the dressing, add spices and a little ground red pepper to the sour cream. Mix the ingredients and add sauce.
It is worth noting that the combination of garlic with horseradish and raw beets forms a powerful vitamin cocktail, which can be very useful during colds.
The hottest salads
Have you ever wondered why beets go so well with particularly spicy ingredients? That's right: because it itself has a sweetish and slightly tart taste. We don’t miss the season of the young burgundy vegetable and actively use the time to prepare such a dish as Korean raw beet salad. In addition to this, we will need:
- garlic;
- hot red pepper;
- paprika – 1 teaspoon;
- sunflower oil;
- coriander;
- ground black pepper;
- vinegar and sugar to taste;
- salt.
Let everyone choose the proportions to their own taste. Some people like a slight spiciness, so they will limit themselves to half a pod of hot pepper. The same recommendation applies to garlic and spices. Well, the beets need to be chopped on a Korean carrot grater. Do an experiment. Prepare this dish and serve it to your guests, and then it’s safe to say that almost all of them will think that they are being treated to tinted carrots and will never recognize the beetroot taste.

Preparing the dish:
- The root vegetable must be boiled directly in the peel. This will take approximately half an hour. After that we clean it.

- Salt and pepper.
