Remove the pan from the heat and set aside. In a large bowl, combine the cheddar and parmesan cheeses, oregano, basil, salt, pepper and egg. Mix this mixture with eggplants and onions. Then spoon the mixture into skin boats, place on a lightly greased baking pan and bake for 40 minutes.

Eggplant baked in the oven with cheese, garlic and tomatoes

Often, eggplants are simply baked in the oven, mixed with other ingredients. Without laying out layers and other unnecessary efforts. The author of our first recipe follows the same principle. Preparing the vegetable mixture is not difficult at all and very quickly. But even with such a simple technology, the result is an incredibly beautiful, aromatic dish.

Ingredients:

  • 1 eggplant;
  • 2 cloves of garlic;
  • 1 tomato;
  • 60 g cheese;
  • Salt to taste;
  • 1 tsp. vegetable oil;
  • 1-2 tbsp. l. sour cream.

Subsequence:

Wash the eggplant, dry it thoroughly and cut into thin slices. Lightly sprinkle them with salt.

Wash the tomatoes too. Cut them into medium cubes.

Grind the cheese and garlic using a fine grater.

Place tomatoes, garlic and cheese in a deep bowl. Fill them with the specified amount of sour cream and mix.

Place the resulting mixture in a greased baking dish, alternating its layers with eggplants.

Place in the oven, preheated to 180 degrees, for 30 minutes.

The appetizer can be served either cold or hot - it is equally good. Bon appetit!

Another recipe variation

The above recipe also has another version, which involves baking eggplant, tomatoes, cheese, garlic and mayonnaise in the oven. If you want to cook vegetables this way, then at the stage of frying the pulp with onions, add finely chopped tomato. During further preparation, replace the egg with 1-2 tablespoons of mayonnaise. This modification of the recipe does not affect the cooking time. You can also use just one type of cheese of your choice, not necessarily cheddar or parmesan.
