Today's issue contains a recipe for pork ribs with potatoes. Initially I wanted to stew it in a saucepan, but my beloved insisted on cooking it in a cauldron with smoke. The recipe is easy to follow and cooks quickly. The option when you don’t want to be fancy with a recipe, but take simple ingredients and cook a hearty lunch. The potatoes are soaked in zirvak, and the broth itself is rich in taste. It turns out – appetizing and tasty!

When serving the dish, you can control its thickness - only potatoes with ribs, or in combination with broth. The broth, during the stewing process, turns out incredibly tasty, and only with it you can get enough of it. Not to say that the dish is very fatty in taste... But if you compare it with the same stewed potatoes with chicken, then it is much heavier for the body. The problem is that it’s hard to put down, and you end up eating a full bowl at a time. Delicious! Therefore, it is important to control yourself.

Ribs can be beef or lamb. Here it is as you prefer! The most important thing is that the recipe is universal, and you can repeat it with any meat on the bone, or simply stew potatoes with meat. I guarantee it will turn out very tasty!

Ingredients you will need:

  • Ribs (in my case, pork) – 500 grams
  • Onion – 2 onions
  • Carrots – 1 pc.
  • Potatoes – 500 grams
  • Salt and pepper to taste
  • Coriander, Khmeli Suneli – level teaspoon
  • Water – 2 liters
  • Bay leaf – 2 pcs.

Simple recipe

This dish does not require many ingredients; in addition, all products can be purchased at your local store. One of the simplest recipes requires the following ingredients:

  • 1 kg of ribs;
  • 1.5 kg of potatoes;
  • two onions;
  • one carrot;
  • a couple of bay leaves;
  • 1.5 tablespoons of tomato paste;
  • four tablespoons of vegetable oil;
  • three cloves of garlic;
  • salt and pepper to taste.

Some people replace tomato paste with one tomato, after removing its skin. But in this case, the fruit should be ripe and fleshy.

Beef ribs stewed with potatoes

So, let's start our culinary journey by preparing beef ribs. This dish does not require a side dish, as it is quite filling on its own. This is the perfect solution for a quick dinner.

Compound:

  • 0.8 kg beef ribs;
  • 1 kg of potatoes;
  • 100 ml mayonnaise;
  • curry seasoning;
  • freshly ground red and black pepper;
  • salt;
  • greenery.

Advice! The dish will be tastier if the ribs are pre-marinated.

Preparation:

  1. We wash and dry the ribs, cut off the veins and film from them.
  2. Cut the ribs into portions, rub with salt, curry and pepper, place in a deep container.

  3. We clean and rinse the root vegetables. Chop the potatoes into medium cubes. Do not chop the potatoes too much, as they may become mashed during the stewing process. Lightly salt the potatoes.

  4. Place the ribs and root vegetables in a baking bag and add mayonnaise. If you wish, you can add carrots, after chopping them into circles.
  5. Close the bag and shake it well so that the mayonnaise is distributed evenly. Attention! Lightly pierce the top of the bag in several places with a knife so that it does not burst during the heat treatment.

  6. Bake the ribs with potatoes for 1.5 hours at a temperature of 200 degrees.

  7. Sprinkle the finished dish with chopped herbs.

How to cook?

Pour vegetable oil into a frying pan and heat it up. Place the ribs and fry them until a crust appears. Then they are transferred to a cauldron. The oil is not drained.

One onion is cut into cubes, the carrots are grated on a fine grater. Fry both vegetables in the remaining oil until soft. At the end, add tomato paste. The finished mixture is transferred to the ribs.

Peel the potatoes, cut them into cubes and add them to the cauldron. The remaining onion is finely chopped and added to the rest of the ingredients. Fill everything with water so that it completely covers the food.

Prepare stewed pork ribs with potatoes according to the recipe for about forty minutes. Ten minutes before the end, add salt, spices, crushed garlic, and five minutes before the end, add bay leaf. After cooking, you need to let the dish simmer for another five minutes under the lid. Then the bay leaf is removed. When serving stewed pork ribs with potatoes (according to the recipe), you can garnish them with fresh herbs.

How to stew pork ribs in a cauldron. Recipe:

You could stew it in a saucepan at home, or cook it in the oven. But when you cook in a cauldron, you get a unique taste that is difficult to achieve at home. Be sure to try it! The recipe is especially popular during the young potato season. When the potatoes are still young, and it is enough to wash them and not peel them (I remember country-style potatoes). And then, stewing it with ribs will be incredibly tasty. What can I say... stewed potatoes with ribs is always a hearty dish that is prepared periodically in many families.

Step 1.

Fry the ribs in a hot cauldron. Literally 5-7 minutes until blush...

To make the ribs more expressive in taste in the finished dish, salt them immediately. Don’t be afraid to over-salt, as there will be more ingredients later, the main one being potatoes. The taste will be smooth! And at the end, when we add water, you can taste the salt again and add salt if necessary.

Step 2.

After frying the pork ribs, add the onion, cut into half rings. How you cut the onion won’t make much difference. I only recommend not to cut it finely, since during the stewing process, it will dissolve due to the temperature of the cauldron. Half rings - 0.3-0.5 cm in size, or 1 by 1 cm cubes will be optimal. Fry the onion until golden brown. Literally, so that it becomes transparent... 5 minutes, and we move on to the next stage, sending the carrots.

Step 3.

Carrots always add color to dishes in a cauldron. I also like the bright colors from peppers - red, yellow, green (traffic light). But in this recipe we do without pepper.

Step 4.

I recommend adding seasonings before water. Fry the carrots for 3-5 minutes, and you can add pepper, coriander, suneli hops. Literally a pinch of each, and you can mix:

Here they are fried ribs with onions and carrots. They look delicious, and at this stage you could already serve them as a side dish. They literally need 20-30 minutes to be ready. It cooks faster in a cauldron than in a saucepan.

Step 5.

We continue the recipe and send the potatoes...

With potatoes, everything is also simple - don’t cut them finely. In this case, the cubes are around 2 by 2 cm. By eye, of course... Use the photo as a guide and do the same. It’s just that if you chop it finely, it turns out that it still needs to be stewed for some time... The point is that it doesn’t boil over, but holds its shape. Potato varieties are also very important here. But when it is large, it will be easier to control readiness.

Don’t dare pour water over it, let the potatoes fry for literally 5-7 minutes.

There is a point here that carrots were previously added in strips, and it is important that the carrots also do not turn into mush. It is advisable to add water at the stage when the carrots are almost cooked. You can check its readiness simply by breaking it in half with a ladle. If it breaks easily, it means it’s ready. Later, during the stewing process, the potatoes can be checked in the same way for readiness.

Step 6.

Fill with water until the potatoes are almost covered. In my case, it took 2 liters of water. If you add a little more, it's okay. You will get more broth.

Potatoes will be stewed in zirvak. Look at the photo, this is not just clear water. There is already a combination of ribs, onions, carrots, and seasonings... All this imparts a unique taste to the potatoes during the stewing process.

Spicy dish with tender pork

This dish is especially popular with men. If you want less spicy stewed pork ribs with potatoes, the amount of pepper and garlic in the recipe is halved. In order to prepare the dish, you need to take:

  • 1 kg each of ribs and potatoes;
  • a couple of onions;
  • one large carrot;
  • hot peppers;
  • a head of garlic;
  • salt and ground black pepper;
  • a couple of allspice peas;
  • a little smoked paprika.

You can also use bay leaves to add flavor.

Note to the hostess

If you decide to add other vegetables to the potatoes, calculate their quantity in such a way that the main place is given to the potatoes, and they only serve as a vegetable additive.

You can diversify the taste of stewed potatoes with pork ribs by first marinating the meat in soy sauce or a mixture of herbs.

Do not marinate ribs in vinegar or any acid. Marinated meat, of course, tastes better, but potatoes in an acidic environment will stew longer and will turn out less crumbly, but more dense.

This option turns out to be very rich. It is better to cook it in a cauldron. For this recipe for stewed pork ribs with potatoes you need to take:

  • 700 g ribs;
  • 800 g potatoes;
  • onion head;
  • small carrots;
  • a tablespoon of flour;
  • 50 g celery root;
  • 20 g parsley root;
  • 50 g each of tomato paste and melted lard;
  • three bay leaves;
  • greenery;
  • salt and pepper to taste.
  • Pork ribs are washed, dried with a towel, sprinkled with pepper and salt, and rolled in flour. Fry in lard to form a small crust. Place on a separate plate.

    Vegetables are washed and peeled. Root vegetables are finely chopped, carrots are chopped into larger pieces. Finely chop the onion. Everything is fried in the fat left over from the ribs. Also put on a plate.

    List of required products:

    • pork ribs – 400 g;
    • garlic – 2-3 cloves;
    • potatoes – 4 pcs.;
    • green beans – 2-3 handfuls;
    • onions – 1 medium onion;
    • carrots – 1 pc. medium size;
    • sweet bell pepper – 1 pod;
    • dry white wine – 0.5 glass;
    • salt, dried herbs and spices - to taste;
    • olive oil (you can take sunflower, but odorless) – 2-3 tsp;

    Let’s look at the recipe step by step to see how we’ll cook it:

    1. Peel the carrots, potatoes, onions, and remove the core from the pepper. Cut all vegetables into cubes (moderately thick strips).
    2. Mix all the chopped vegetables, add oil, spices, herbs and salt to taste. Mix everything well. If you decide to add mushrooms to the dish, lightly fry them in a small amount of oil.
    3. Cut the meat from the ribs along with the layers of fat. In this case, there is no need to remove the fat - it will melt during baking, soften the meat fibers, making the pork more juicy and tasty. The ribs themselves (bones) are not required - you can use them to make broth for another dish.
    4. Rub the prepared meat with spices and salt.
    5. Place the vegetable mixture in a heatproof dish.
    6. Spread the meat in a second layer.
    7. Mix wine with half a glass of water and pour over pork and vegetables.
    8. Close the pan with a lid (if you have one) or cover it with thick food foil. Place in a preheated oven. Cook for the first 10-15 minutes at 180 degrees, then reduce the heat to 150-160 degrees and continue to simmer for 1 hour.

    You can periodically open the pan and stir the dish so that it cooks evenly. To obtain a crust on the meat, you can remove the lid (foil) shortly before the expected readiness.

    For the recipe for stewed pork ribs with potatoes in the oven you need to take:

    • 1 kg of potatoes;
    • 700 g ribs;
    • two tablespoons of dried marjoram;
    • a little rosemary;
    • two tablespoons of mustard;
    • a little salt and pepper;
    • three cloves of garlic.

    The ribs are washed, dried, rubbed with marjoram, rosemary and salt. Add pepper to taste. Garlic is passed through a press and also added to the ribs. Cover them with cling film and leave for twenty minutes.

    The potatoes are peeled, cut into circles, salt and other spices are added to them, and mixed. Place potatoes on a baking dish and cover with ribs. Lubricate everything with mustard. Pour water so that it covers the bottom.
