I love dishes that are prepared quickly, always turn out, and can be offered both for a family meal and for a holiday table. Pork ribs with potatoes in the oven is one such dish. Its preparation does not require any super culinary abilities, and although it does not take 5 minutes to prepare, there is no need for your constant control over it, which is very convenient, you will agree.

The result is a very tasty dish, which also solves two problems - we simultaneously prepare the meat and the side dish for it. You can bake pork ribs with potatoes in the oven in different ways - in a sleeve, in pots, on a baking sheet, and each time it will be new dishes with the same set of ingredients.

Pork ribs with potatoes in the oven, baked in a sleeve

A wonderful device is a sleeve or baking bags. Dishes prepared this way turn out juicy, tender, and a pleasure to cook.

Ingredients:

  • pork ribs - 800 gr.
  • potatoes - 7−9 pcs.
  • onions - 1−2 pcs.
  • mayonnaise
  • mustard
  • salt
  • pepper

Prepare according to the recipe:

  1. Cut the ribs into portions, add salt and pepper. Add a little mustard to the mayonnaise, mix and coat the pieces of meat. Leave for 30 minutes. If you are against mayonnaise, you can replace it with kefir or sour cream. Mustard can be replaced with soy sauce, it will be a different marinade, but no less tasty.

  2. Wash the potatoes, peel them, cut them into pieces, add finely chopped onions and salt.

  3. Cut the baking sleeve a little longer than the required length, since we will need to tie it. Tie one edge, put potatoes in the sleeve, pork ribs on it, tie the sleeve on the other side, put on a baking sheet. Use a toothpick to make several small holes on top so that the sleeve does not burst when heated.

  4. Place in an oven preheated to 180 degrees. Cooking time for pork ribs with potatoes in the sleeve is about an hour.
  5. If you want to brown the dish, then 10-15 minutes before the end, take out the baking sheet, cut the sleeve in the center, open it and put it back in the oven.

For baking, it is better to take meaty pieces, but there should also be a small layer of fat - the juiciness of your dish will depend on this.

Pork ribs with potatoes in the oven

A simple recipe for baking ribs with a side dish is delicious, satisfying and doesn’t require much time!

  • Pork ribs 600 g;
  • Potatoes 9 pieces;
  • Salt pepper;
  • Garlic 2 cloves.
  1. The potatoes must first be peeled, then grated onto a baking sheet, after evenly greasing it with vegetable oil. Sprinkle the grated round potatoes generously with salt, stirring with your hands. We distribute the potatoes on our metal sheet.
  2. We wash the ribs, freeing them from excess fat, and cut them into medium pieces. Salt, pepper, add garlic and mix.
  3. Place the pork ribs on top of the potatoes so that they are completely covered. We place the ribs on top, since they are fatty and will melt as they cook, and the fat will lubricate the potatoes well. We do not add oil, everything will cook in its own juice.
  4. Place in the oven at 180 degrees. Bake for 45-60 minutes, be sure to remember to turn the pork ribs halfway through the process.

A simple recipe for pork ribs with potatoes and garlic in foil

This recipe used boneless rib meat, but you can also make it with bones. It is tasty and aromatic in any form and without much effort your family dinner will turn into a wonderful feast.

Ingredients:

  • pork meat - 800 gr.
  • peeled potatoes - 700 gr.

spices for meat:

  • oregano - 1 tsp.
  • pepper mixture - 0.5 tsp.
  • tomato ketchup - 3 tbsp. l.
  • salt

spices for potatoes:

  • sweet paprika - 1 tsp.
  • salt

How to cook:

  1. Wash the pork and cut into medium-sized pieces. Place in a cup, add salt, ketchup, oregano, pepper, and salt. Mix everything well and leave at room temperature for 1-2 hours.

  2. Cut the potatoes into pieces, mix with salt and paprika.

  3. Place the ribs in a baking dish and place the potato pieces among the meat.

  4. Cover with foil and place in the oven. The baking temperature should be 180 degrees.

  5. In an hour, the dish will be ready, but if you want to brown it a little, you can leave it for another 15 minutes, removing the foil. But these 15 minutes will be torture for your loved ones, since the aroma in the kitchen will be fantastic.

To prepare potatoes with ribs in the oven in a bag, you can use another recipe. The dish will have a sharper and more pronounced taste. And one more plus: although the ribs will be in a bag, they will have a delicious crispy crust.

Ingredients:

  • chopped ribs - 1 kg;
  • salt - 1 tsp;
  • mixture of Provencal herbs - 1-1.5 teaspoons. spoons;
  • potatoes - 500-600 g;
  • mustard - 2 teaspoons spoons;
  • dry adjika - 1 table. spoon;
  • vegetable oil.

Preparation:

  1. Wash the pork ribs and allow excess liquid to drain.
  2. Cut the meat into individual ribs or into small pieces - 2 to 3 cm in size. You can leave the whole piece!
  3. Prepare the marinade. Take dry adjika or spices separately (hops-suneli, different types of pepper, dill, coriander, garlic), pour into a deep bowl. Add salt

  4. Mix seasonings with mustard. Add vegetable oil to them.
  5. Place the ribs in the prepared marinade. Stir with a large spoon to coat them with flavor. “Press” the pork a little with your hands to help it soak in better.

  6. Keep the ribs in the marinade at room temperature for 20-30 minutes or put them in a cool place for 2 hours.
  7. Wash the potatoes. Clean and cut out the eyes.
  8. Cut it into not too thin slices.
  9. Sprinkle the potatoes with spices. You can use thyme, rosemary, marjoram, basil or other seasonings. To give the potatoes a golden hue, add turmeric or curry.
  10. Pour a spoonful of olive oil into the potatoes and add a pinch of salt. Mix everything.
  11. Take a heat-resistant baking bag. Place meat on the bottom and potatoes on top.

  12. Tie the bag tightly and place on a baking sheet.

  13. Wait until the oven reaches 180°.
  14. Bake the pork ribs and potatoes in the oven for 40 minutes. Then open the bag to allow the meat to brown (about 20 minutes).

How to deliciously cook pork ribs with potatoes in the oven

According to this recipe, the dish is prepared on a baking sheet without a sleeve and without foil. But don’t worry, it will turn out just as juicy and tasty. The trick is in the unusual marinade. This dish can be safely included in the holiday menu - it will delight your guests with both appearance and taste.

You will need:

  • pork ribs - 1.2 kg.
  • potatoes - 1.5 kg.
  • onions - 2 pcs.
  • for the marinade:
  • tomatoes - 1-2 pcs.
  • beer - 1 glass
  • cognac - 1 tbsp. l.
  • salt
  • sugar
  • basil
  • black pepper

Step-by-step description of the recipe:

  1. Wash the meat and cut into pieces, I don’t recommend chopping, make the pieces a little larger than average size, put them in a bowl where you will marinate the ribs.
  2. Prepare the marinade - cut the onion into half rings, add 1 tsp. salt and 0.5 tsp. sugar and mash well with your hands so that the onion releases juice. Cut a large tomato into pieces, also chop basil (3-4 sprigs) and place in the onion along with the tomatoes. If you don't like basil, you can replace it with another herb, such as parsley. But I would still use basil, it not only goes well with meat, but is also very healthy.

  3. Add the prepared mixture, salt, pepper to the meat, mix well and pour in beer, cognac, mix again. Cover with a lid, put in the refrigerator and leave to marinate overnight. If you decide to cook on the same day, then marinate at room temperature for 3 hours.

  4. We will deal with potatoes immediately before cooking. It needs to be washed, peeled and cut into pieces. If you use young potatoes, you don’t have to peel them. Season the prepared root vegetable pieces with salt and pepper.
  5. Grease a baking sheet with vegetable oil, place the ribs on it and place the onions and tomatoes from the marinade on them. Place potato pieces between the pieces of meat.

  6. Bake in the oven at 180 for about 1 hour 15 minutes. It may cook earlier, or it may take more time, it all depends on the meat, periodically check it for softness. If the cooking time is delayed, you can lightly pour the marinade over the meat to prevent it from drying out. By the way, you also need to check the potatoes; they take much longer to cook in the oven than, for example, boiled ones.
  7. As soon as the potatoes and meat are ready, remove the baking sheet from the oven, place it either on plates or on a platter and serve.

General principles for cooking pork ribs baked with potatoes in the oven

  1. The main thing is to find quality, fresh and good pork. Buy ribs from trusted sellers who raise pigs on their own farms, and then cooking success is guaranteed! Otherwise, tough pork will ruin the whole dish.
  2. Don't forget to take the time to marinate the meat so it will be tender, soft and juicy. This rule was borrowed from cooking barbecue. It is best to marinate overnight. And don’t forget to baste the ribs with the resulting marinade during the baking period.
  3. Don't skimp on the spices! This will add piquancy and sophistication to your dish. Due to individual preferences, choose them according to your taste preferences.

Potatoes stewed with pork ribs in the oven

A delicious and simple recipe for stewed potatoes with pork ribs. This dish can be prepared either on the stove or in the oven. Today we will consider the second option.

Required Products:

  • pork ribs - 1.2 kg.
  • potatoes - 1.5 kg.
  • onions - 1-2 pcs.
  • tomato paste - 1 tbsp. l.
  • vegetable and butter
  • water
  • salt, spices to taste

Sequencing:

  1. Wash the meat, cut it so that each piece has one bone. Pour a little vegetable oil into the frying pan and put a small piece of butter. Melt, warm and add pieces of meat. Add salt, pepper and quickly fry on all sides. Then add the diced onion and, stirring occasionally, until the onion is soft. There is no need to bring the meat to readiness. A quick pre-frying will make the dish more aromatic and tasty.

  2. Wash the potatoes, peel them, cut into medium-sized pieces. Since we will be stewing the dish, choose suitable dishes for this. It should be deep with a lid and can be used in the oven. Place all prepared foods in a bowl and add your favorite spices.

  3. Dilute the tomato paste with water and pour over the potatoes and meat, add salt and mix well. Determine the water level yourself, some people like it when the dish comes with broth, others don’t.

  4. Cover with a lid and place in an oven preheated to 180 degrees for 40-50 minutes.

How to bake ribs with potatoes in pots

Another equally tasty and original dish is cooked potatoes with meat in pots. It is clear that an oven is not a Russian oven, but this method of cooking is somewhat reminiscent of those times when they cooked in clay dishes in an oven.

Ingredients for 4 pots of 0.5 l:

  • potatoes - 1.2 kg.
  • pork ribs - 400 gr.
  • onions - 2 pcs.
  • vegetable oil for frying
  • salt and pepper to taste

Recipe description:

  1. Wash the meat and cut into pieces so that they can be placed in pots. Finely chop the onion. Heat the oil in a frying pan, add the meat and onions, add salt and pepper and quickly fry until appetizing.

  2. Wash the potatoes, peel them, cut into medium-sized slices. Place on a cotton napkin or paper towel to remove excess moisture. Then put it in a frying pan with heated vegetable oil and let it brown a little. Turn off the stove, add salt and stir.

  3. Place potatoes in pots, put meat and onions on top. Pour a little boiled water into the frying pan where the meat was fried, stir and pour 2 tablespoons into each pot.

  4. Cover with lids and place in a cold oven. Bake at 180−200 degrees for 40 minutes.
