What ingredients will you need?

For the dish you need to take:

  • chicken carcass – 1.5-1.7 kg;

  • coarse salt – 150-160 g;
  • peppercorns – 5 pcs.;
  • ground pepper and any dry spices (mixture for poultry).

Step-by-step cooking process

The cooking process includes several stages:

  1. First, you need to pour water into a large container and dilute salt in it. The required amount is calculated according to the following scheme: 100 g of dry component per 1 liter of liquid.
  2. Next, the peppercorns are sent into the brine and the pre-washed and dried chicken carcass is immersed. The bird should spend 10-12 hours under the lid. During this time, the chicken should be kept cool.
  3. Afterwards, the chicken will need to be dried for 60-80 minutes, leaving it directly on the table at room temperature. If there are midges in the house, the bird should be wrapped in 2-3 layers of clean gauze. You can also hang the carcass directly in the covering.
  4. Next you will need to place the chicken on the smokehouse grate.

  5. First, the bird needs to be cooked for a quarter of an hour at maximum heat on one side, then another 5 minutes on the other (after turning).
  6. Then the chicken is immersed in boiling water and simmers for another 70-90 minutes without active boiling.
  7. The finished bird must be removed and cooled.

The selected spices are applied to the still wet carcass. It is left in this form for at least 25 hours. This is necessary so that the upper layers of chicken meat are saturated with aromatic spices.

  • chicken - 1 carcass (you can also choose individual parts of it to taste);
  • bay leaf – 4-5 pcs.;
  • ground pepper – 1 tbsp. l.;
  • garlic – 3-5 cloves;
  • ground black pepper – 1 tbsp. l.;
  • spice mixture for chicken – 1.5-2 tbsp. l.;
  • coarse salt.

The amount of salt in this recipe is determined according to the following scheme: 100 g of dry product per 1 liter of water.

The total preparation time for the treat will be approximately 30-40 minutes.

  7. The chicken will marinate in a cool place. Be sure to turn it over a couple of times during the process.
  8. After 50 hours, the bird should be thoroughly washed and dried with paper towels.
  9. Next, you can proceed to heat treatment. This can be done in the oven in 2 ways. The first involves baking the carcass at 170° for approximately 45-50 minutes. The second is baking at 80° for 3-3.5 hours.
  10. At the very end of baking (regardless of the chosen method), you will need to turn on the top grill for 3-5 minutes to get a golden crispy crust on the dish.

It is best to taste the bird chilled. First, it should spend about a day in the refrigerator.

  • drinking water – 100-150 ml (approximately 20% of the weight of meat);
  • fresh garlic – 1 head;
  • sugar – 1 tsp;
  • spices (coriander, basil, pepper) – 1 tsp each.

Step-by-step cooking process

The cooking process includes several stages:

  1. First you need to prepare a chicken carcass for smoking. To do this, all the insides are removed from the bird, it is thoroughly washed with running water and dried. If necessary, you will also need to pluck the chicken and singe it over the fire.
  2. If you plan to smoke the carcass whole, you should wrap it with twine. But you can also cut the chicken in half along the spine and beat it on a board. Smoking halves of a carcass will be faster and easier.

  6. When the marinating process is complete, the chicken needs to be removed from the liquid, rinsed, and dried with paper napkins.
  7. To preserve the juiciness of the meat as much as possible and ultimately get a tender, soft treat, the bird carcass will need to be baked in the oven at 90° for 3-3.5 hours.
  8. Afterwards you will need to quickly cool the chicken and leave for 2-4 hours.
  9. Before you start smoking, you need to prepare the firewood. So, a mixture of fruit tree branches is good for this recipe. Thanks to them, the dish will turn out with a bright aroma.
  10. The wood chips are poured into the smoke generator. Afterwards, you can place the prepared bird in a smokehouse designed specifically for cold smoking.
  11. The carcass should be cooked for 2-3 days. It depends on its size. The readiness of the bird is checked every day.

Afterwards, the chicken needs to be hung out in fresh air. It will “ventilate” for approximately 4-6 hours. If it is not possible to hang the bird in this way, it will be enough to put it in the refrigerator for 30-50 hours.

  • salt – 3 tbsp. l.;
  • onion peel - 2 handfuls;
  • liquid smoke – 100 g;
  • filtered water – 1 liter.

Onion peels in this recipe can be replaced with tea leaves if desired.

Step-by-step cooking process

The cooking process includes several stages:

  1. The first thing you need to do is chicken meat. The carcass or individual parts are filled with water. Sugar, salt (1 tbsp), and all the onion skins are added to the liquid. If tea is used, it will need to be strongly brewed first.

  2. The poultry should be cooked until fully cooked. But it is important not to overcook the carcass in boiling water. The meat should not be overcooked and begin to fall apart into pieces.
  3. The bird is then left to cool in the broth. At this point, the remaining salt is also added to it. It is also advisable to remove all the released fat from the chicken. The meat must cool completely. During this process, the chicken needs to be completely coated with the marinade. If necessary, you can press the bird with a weight to do this.
  4. After 3-4 hours, the bird should be removed from the broth, hung or placed on a wire rack, and allowed to dry. The chicken should rest for at least 4-5 hours. It is best to leave it overnight until the morning.
