- Pour 300 grams of meat with two liters of cold water. Cook for an hour over low heat, constantly removing the foam with a slotted spoon to ensure the broth is clean.
- Pour 60 grams of millet with cold water and leave for 50 minutes. Then we wash off the starch.
- Wash the onion, peel and cut into small cubes. Wash the carrots, peel and grate on a coarse grater.
- Pour vegetable oil into the frying pan, you can add more if you like fatty, nutritious dishes. Place the chopped onion in a frying pan and sauté until it becomes transparent. Add 50 grams of butter to the frying pan.
- Then add the grated carrots and continue sautéing.

Pork bone soup with potatoes Kamjatkhan is the perfect filling dish. Full of rich, complex and authentic flavors, it's one of the best ways to warm up on a cold day. The main thing is not to be intimidated by the amount of ingredients and the time required for preparation (pork bones require 2 hours of soaking in water and about two hours of cooking).
Preparing ingredients for the dish:
- Pork from the neck or spine, or ribs - 1.5 kg;
- 5 slices of ginger;
- Blanched Chinese cabbage, small head;
- 1 large onion, sliced;
- 2 liters of water;
- 4 large potatoes, cut into quarters;
- A teaspoon of grated ginger;
- 2 dried shiitake mushrooms;
- Two tbsp. spoons of soy paste;
- A small pod of dried chili or red hot pepper.
- 6-8 chopped garlic cloves;
- 3 tablespoons of cook's wine (rice) or sherry;

- After soaking, put the bones and meat on high heat with slices of ginger, after the water boils, drain it and remove the ginger. Then pour 2 liters of water, add onions, mushrooms, grated ginger, soybean paste, pepper and cook over medium heat. After 1.5 hours, remove the mushrooms and cut into small pieces. In a bowl, combine garlic, fish sauce, chopped green onions, pepper and wine. Add the sauce, chopped mushrooms, cabbage and root vegetables to the pan and leave to simmer for another 30 minutes.
The soup is served in pots, sprinkled with black pepper and sesame seeds, along with boiled rice.

Step-by-step cooking process
- Heat the ghee or fat in a large saucepan over low heat.
- When the fat begins to sizzle, add diced onion with a little salt and fry, stirring occasionally, until it becomes soft (about 3 minutes).
- Then add minced pork or very small pieces of meat and chop everything with a spatula, add chopped mushrooms and a little more salt, and cook until the pork is no longer pink and the shiitakes are soft (about 5-7 minutes).
- After this, you need to put chopped garlic in the pan and fry until a strong aroma appears, about 30 seconds.
- Next, you need to pour in the broth and turn on the heat to maximum, heat the mixture to a strong boil.

- 0.25 tbsp. Chinese cabbage, finely chopped;
- from 0.5 to 1 tsp. salt.
Step-by-step cooking process
- It is necessary to soak the pork bones in cold water for about 1 hour, then drain the liquid and rinse them thoroughly (until completely clear water begins to drain from them).
- Next, you need to put the bones, garlic cloves, ginger root, peppercorns and salt in a large saucepan, add water (about 3 liters) and heat to a boil, then cook over low heat for about 90 minutes until the meat is soft and the bones will not boil down completely. All this time it is necessary to remove excess fat and foam rising to the surface.
- After this, remove the garlic cloves, peppercorns and ginger from the bone broth, pour in 4 tbsp. boiled or filtered water and add chopped garlic, gochujang, dwayen jang, red pepper powder, soju and soy sauce.
- Then you need to add chopped potatoes, perilla leaves, cabbage and onions to the soup, boil, turn down the heat and cook for another 30 minutes until the potatoes are cooked.
- Taste the finished soup and adjust the amount of salt, then pour into serving bowls, sprinkle with toasted sesame seeds and plenty of chopped green onions.
Rich pea soup with pork and slow-cooked potatoes
Another delicious recipe for autumn or winter - pea soup with meat will perfectly fill you up and warm you up in cold weather, although it takes quite a long time to prepare.
- A kilogram of pork ribs, as an option - you can choose smoked ribs;
- 500 g yellow peas (halved);
- 1 large carrot;
- 3 medium potatoes;
- 2 onion heads;
- 4 cloves of garlic;
- Half a teaspoon each of curry, utskho suneli, saffron;

- The peas should be washed and soaked for 3-4 hours before cooking (preferably overnight), and the smoked ribs should be chopped into portions.
- Grate the carrots on a fine grater, chop the onions and fry them in a frying pan with vegetable oil. Place the peas, pork, roasted vegetables and parsley in a large saucepan, place over low heat and simmer for 45-50 minutes (until the peas are tender). Squeeze the garlic through a press, add finely chopped cilantro, spices, salt and pepper and cook for another 7-10 minutes. The delicious aromatic soup is ready.
To prevent the peas from changing color and remaining yellow, culinary specialists advise that you constantly monitor the cooking process and skim off any foam that forms.
The dish is served with sour cream and black bread, garnished with meat scraped from the ribs and fresh cilantro.
