Outside the window, despite September according to the calendar, it is still summer. I want to eat right, but not cook dishes that are difficult for the body. Soup is a dish that should be included in every person’s diet. In addition to the fact that it satisfies hunger, its preparation does not take much time and does not require a large number of ingredients. Today we will prepare chicken soup with vermicelli or noodles.

    • 1 tomato;
    • 1 onion;
    • 1 red pepper;
    • 3 tbsp. tomato paste or 2 tomatoes;
    • 100-150g rice;
    • ½ head of garlic;
    • Spices for soup, to taste.

    Ingredients:

    • Chicken wings – 300 – 400 g
    • Onion – 1 piece
    • Potatoes - 3 pieces
    • Vermicelli - 2 handfuls
    • Onion - 1 pc. small head
    • Carrots - 1 pc.
    • Salt, spices

    Preparation:

    We wash the chicken wings and cut off the ends. Place in a saucepan with cold water, set to cook on the fire, do not forget to skim off any foam that appears while it boils so that the broth turns out clear.

    While the meat is cooking, peel the potatoes and cut them into small strips

    To prepare soup in a slow cooker you will need the following products:

    1. The chicken breast must be washed with hot water, then wiped with a paper towel, then remove the skin, cartilage and film from it with a sharp knife. Then you should cut the meat into small pieces.
    2. Take the vegetables, remove the skins from them, then be sure to rinse them with hot water and dry with a paper towel. Onions and potatoes need to be cut into small pieces with a knife, carrots need to be grated on a coarse grater.
    3. You need to add vegetable oil to the multicooker bowl, then turn on the device in the “Baking” or “Frying” mode, wait until the oil warms up (about 1 minute).

    4. After this, carefully place the carrots and onions into the bowl, which need to be fried, without lowering the lid of the device and constantly stirring with a wooden (silicone) spatula for 5 minutes.
    5. After the time has passed, turn off the multicooker. After this, add potatoes, chicken meat, clean water in a volume of 2.5 - 3 liters to the bowl, then close the lid and turn on the “Soup” or “Stew” mode. Then set the cooking time to “1 hour”.
    6. After 50 min. When cooking, you need to lift the lid of the device, add salt, pepper, dried herbs to the soup, then taste the liquid, then put the cooked noodles into the soup and mix it thoroughly. Then lower the lid and continue to cook the soup until the timer expires.

    After turning off the device, it takes 5 - 7 minutes. simmer the finished soup covered in a slow cooker.

    What can I add?

    You can add finely chopped fresh herbs (dill, green onions, parsley, cilantro, basil to taste) to the soup poured into deep bowls.

    The simplest rustic recipe for making noodle soup with chicken

    Ingredients:

    Recipe for homemade egg noodles for soup

    Another, no less important, component of chicken soup without potatoes is homemade noodles. Of course, you can buy noodles in the store, especially now there is such a choice for every taste and color, as they say. But believe me, this is not all that. It’s not even close to homemade noodles made with your own hands according to this recipe. We need only 3 ingredients:

    • Flour - 200 gr.
    • Eggs - 2-3 pcs.
    • Salt - 0.5 tsp.

    Combine them in a bowl. I recommend sifting the flour.

    And mix until smooth. First, mix in a bowl, and then, when it is no longer possible, pour it onto the table and use your hands. Add flour as needed. The dough should not stick to your hands.

    It may seem very tough, you are doing everything right, that’s the way it should be. When it rests and rests, the dough will become elastic, and then you need to roll it out for noodles.

    But before you let it rest, put it in a bag or just cover it with a bowl to prevent it from getting too windy. 15-20 minutes will be enough.

    Then cut off a piece of dough and roll it into a thin pancake, 1 mm thick. The table should be visible through it.

    Dust it with flour and let it sit until it dries.

    Gather it like an accordion, like mine, and cut it into strips 1 cm wide.

    Do the same with the rest of the dough.

    You don't have to use all the noodles. It can be dried and used as needed.

    Soup without potatoes (its recipe will be useful to all lovers of light and satisfying lunch options) can be prepared with tomatoes and according to another successful recipe. In this case, a seafood cocktail is included as a treat.

    Ingredients

    For the dish you need to take:

    • seafood cocktail – 250-270 g;
    • onion, sweet pepper and tomato - 1 pc.;
    • garlic – 3-4 cloves;
    • tomato juice – 330-350 ml;
    • saffron, Provençal herbs and dried basil - 1 tsp each;
    • lemon juice – 1 tbsp. l.;
    • raw eggs – 2 pcs.

    Sequencing

    The cooking process includes several stages:

    1. Frozen seafood is first placed in a deep bowl and poured with boiling water. They should be left in this form for about 6-7 minutes. Afterwards, drain in a colander and let dry.

    2. Next, you will need to transfer the seafood into a pan and add ½ liter of filtered water. They should be cooked over medium heat.
    3. At this time, heat a small amount of oil in a frying pan. Peeled, chopped onions and carrots are fried on it. Their pieces should turn golden.
    4. The resulting fry will need to be sent to a pan with seafood.
    5. Tomato and sweet pepper are cut into small cubes. Afterwards they will be fried in the same frying pan where the onions and carrots were cooked. It will be enough to cook the vegetables for no longer than 2-3 minutes.
    6. Afterwards, the tomato and pepper can be transferred to the pan. After the next boil, the soup is salted and all the spices are poured into it.
    7. All that remains is to pour in the citrus juice and let the treat simmer for 6-7 minutes.

    • olive oil - 70 ml;
    • boiled chicken fillet - 300 g;
    • champignons - 300 g;
    • whole milk - 2 l;
    • cream (10% fat) - 1 tbsp.;
    • garlic cloves - 2 pcs.;
    • onions - 2 pcs.;
    • broccoli - 250 g;
    • small vermicelli - 130 g;
    • hard cheese - 200 g;
    • chicken broth - 500 ml;
    • pepper - 1 tsp;
    • table salt - ½ tsp.

    Sequence of preparation steps:

    1. First you need to process the products. To do this, peel the onion, chop it into small cubes, and arrange the boiled poultry fillet in the same form.
    2. The mushrooms should be washed, blotted with napkins, then chopped into thin slices.
    3. The garlic cloves must be peeled and then finely grated.
    4. Next, you need to heat 20 ml of olive oil in a thick-bottomed pan, throw onion pieces, chopped champignons, and chopped garlic into the hot fat.
    5. The placed products should be fried until golden brown, constantly stirring the mass.
    6. After this, you need to reduce the heating intensity, add the rest of the oil to the container with the mushroom mixture, sprinkle the products with flour, continue the process for 2-3 minutes, without stopping stirring the composition.
    7. After this, pour chicken broth and milk into the pan with the food, bring the mixture to a boil, then reduce the heat, continue the process for another 10 minutes.
    8. At the next stage, you should add vermicelli to the soup and cook it for about 6-8 minutes. from the beginning of a new boil.
    9. All that remains is to add crumbled cheese, chicken meat, and broccoli cut into florets into the broth, season the mixture with pepper and salt, mix everything carefully, bring the mixture to a boil, then turn off the heat.

    When serving food to the table, you should decorate the decorated portions with chopped herbs.

    Cooking noodle soup in chicken broth is especially necessary in cases where the body needs to restore lost strength, including in the postoperative period, as well as during or after an illness.

    • small chicken - 1 pc.;
    • potatoes - 2 pcs.;
    • vermicelli - 100 g;
