And if you open the jar in the spring, you don’t have to trim it. It is advisable to choose varieties with pimples; under no circumstances take edible varieties.

Rinse the jars and then sterilize them along with the lids. And start packing, put literally equal amounts of cucumbers and tomatoes in each container, you can take more or less of something, be guided by your taste.

2. So, push the vegetables into the jar, and throw in peeled cloves of garlic, cloves, bay leaves, dill umbrellas and peppercorns at random at any stage.

3. And now, a magic trick, non-standard preparation of brine, or marinade. Immediately put the given amount of sugar and salt into the jar. And on top of that, pour some vinegar.

Boil water and fill the jars with boiling water, quickly put on the lids and screw on the key. Yes, salt and sugar will not dissolve immediately; to do this, after closing the jar, gurgle from side to side. Then put it with the lid down and put it in a fur coat. Let stand overnight until completely cooled. Voila, eat in about 3-4 months. Store in a dark place in the apartment or directly in the cellar. Have fun!

The method of preparing this recipe is not much different from the classic one. Cherry and currant leaves and an umbrella of dill are placed at the bottom of the container. Then it’s the turn of the cucumbers, and the tomatoes are carefully placed on top.

You need only 0.5 liters of water per 1-liter jar. Pour 1 tablespoon of salt into boiling water. Sugar is taken 2 times more. Vinegar is prepared at 9%. And it is added when the marinade is removed from the heat. The fruits are scalded with hot water once, kept in boiling water for 10 minutes. And if you are afraid that the assortment will spoil, you can pour in 50 ml of vodka instead of sterilization.

Along with zucchini

Adding cubes of young zucchini to the jars will soften the taste of the assortment. For 2 small zucchini take 1 cucumber, 3-4 tomatoes. Zucchini is cut either into circles or pieces. It is better to pierce the skin of the tomatoes with a fork. The taste will be enhanced by unusual peppercorns, cloves, bay leaves, and dill. For spiciness it should be preserved with garlic.

There should be zucchini and cucumbers at the bottom of the jar, and tomatoes on top. Scald with boiling water for 10 minutes. Then, after draining the water, it’s time for the hot marinade.

Acetic acid can be replaced in pickled recipes. Let's preserve it in a new way with apple juice. The marinade is prepared on the basis of apple juice diluted with water (1.25 liter glass). As usual, take salt (3 tablespoons), sugar (2 tablespoons). Allspice peas and bay leaves are added to the marinade. Among the assorted herbs, you can add dill. A few cloves of garlic wouldn't hurt either.

Assorted tomatoes and cucumbers for the winter - recipe for a 3 liter jar

To pasteurize a mixture of vegetables, the fruits are taken in small sizes. There are more of them in a glass container, especially if the jar is 1 liter or 2 liter. All spices and seasonings are prepared in advance.

Layout for a 3 liter jar:

  • cucumbers - approximately 1 kg;
  • tomatoes - 700 - 800 g;
  • garlic - 5-6 cloves;
  • dill umbrellas - 3-4 pcs;
  • parsley - 3-4 sprigs;
  • horseradish leaves - 1 piece;
  • black currant leaves - 3 pcs;

For the marinade:

  • salt - 2 tbsp. heaped spoons;
  • sugar - 1 tbsp. spoon;
  • vinegar - 1 teaspoon;
  • allspice - 4-5 peas;
  • black pepper - 6-8 peas;
  • cloves - 3-4 buds;

How to cook:

Choose medium-sized cucumbers, dense and elastic. Before canning, they must be soaked in cold water and left for up to 3 hours. I soak it overnight. During this time, the vegetable will absorb water, it will fill all the voids in the pulp and displace the air from it. The fruits are tasty and crunchy.

Remove the stems from the tomatoes. Sort and select fruits of the same size. If this is not possible, then different tomatoes will do. That's how it worked for me this time. The varieties Verlioka (medium-sized fruit) and Cherry varieties (small) are ripe.

There are more small fruits included. It is more convenient to place them in the upper, narrowed part of the jar. Rinse the fruits.

Rinse the green leaves of currants, horseradish, twigs and umbrellas under running water. To wash away not only dust, but also insect larvae.

Wash the jars with soda and sterilize over steam. I sterilize 3 liter jars in the microwave by pouring some water into them and placing them on their sides.

Boil the lids in a saucepan on the stove.

Place a few currant leaves, a piece of horseradish leaf, 2 sprigs of parsley, an umbrella and two dill on the bottom of the cooled jars.

We place the cucumbers after cutting off their tops and tails. I place them vertically.

Then add a layer of greenery again.

And on top of it are tomatoes, as they are. To prevent their skin from cracking, make a puncture in the stem of each fruit with a toothpick.

Boil water and fill the jars with boiling water to the top.

Cover with sterilized lids and leave for 5-7 minutes.

Drain the water from one jar into a saucepan. Add sugar and salt, black and allspice peas, and clove buds. You can throw in a bay leaf, but you will need to remove it before pouring the marinade into the jar.

While the marinade is on the stove, cut the garlic cloves into pieces into a jar with vegetables.

Bring the marinade to a boil, let stand for up to 1 minute and fill the jar with vegetables to the top. This recipe is with vinegar. At the last stage, pour the essence directly into the jar - 1 teaspoon.

Close with a screw lid or roll up with a machine. Turn the jar upside down and leave until completely cool. You can wrap it in something warm, making a “bath” for the preparations. Additional heat treatment will not hurt the lids. This canned product is stored in an apartment for the winter at normal room temperature.
