Soup is the basis of any lunch. Therefore, every housewife loves to cook simple first courses that can quickly feed the family. Chicken wing soup with vegetables is a recipe from a series of clear soups that are quite healthy for digestion, and most importantly low in calories.
The composition of this dish is vegetables, and, as you know, they are increasingly gaining popularity among people who want to lose weight, since they have almost no calories.
In addition, according to many nutritionists, vegetables have “negative calorie content.” When digesting them, the body expends more calories than it receives from food.
Therefore, vegetable soup with chicken can be classified as a dietary dish, even though it is not made from chicken breast, which is considered the leanest part of the carcass. However, to further reduce the calorie content of the dish, you can replace the wings with low-calorie chicken breast meat or use a rabbit carcass.
Chicken wing soup is easy to prepare, cooks quickly, the ingredients are affordable and inexpensive, it turns out tender and healthy, and both you and your children will certainly enjoy its taste.

How to make soup?
Chicken wings are washed. Some people separate the outer phalanx, but you can leave it. Place the wings in a saucepan and fill with water. Bring everything to a boil and cook for seven minutes. The water is drained and the wings are washed. Place the wings back into the pan and add 1.5 liters of water.
Vegetables are being prepared. The onion is peeled and cut into two halves. If you don’t want pieces of boiled onion floating in the soup, you can add the whole head after peeling it. Celery is chopped coarsely. Cut a couple of circles from the carrots. Wash greens. Everything is put into boiling broth. Reduce heat and simmer under the lid until done.
At this time, prepare the dressing. Melt butter or vegetable oil in a frying pan, grate the remaining carrots on a fine grater and fry on all sides.
When the broth is ready, remove the vegetables - they have already given off their taste and aroma. Potatoes are cut into cubes and added to the soup. Add carrot fry when ready. Place vermicelli. It's better to take small ones. When the broth begins to boil, add bay leaves. Remove the pan from the heat, covering with a lid. Before serving, the soup is decorated with any greens.

The cooking process is simple
Let's begin the process of preparing this dish. Take the chicken wings and wash them thoroughly under running water. Some housewives cut the wings into several parts, but you can boil the whole wing, especially if it is small. Place the prepared raw materials in a saucepan and set to cook on the fire. At the beginning of cooking, the heat is quite strong, but after boiling it should be reduced and the soup should be simmered at a gentle simmer. As soon as the water boils, white foam appears on the surface, it must be periodically removed with a slotted spoon.
Before cooking, some cooks fry the wings in vegetable oil until golden brown, and then boil them in water. These wings have already undergone partial heat treatment, so they cook for just a short time - 10 or 20 minutes. They retain their shape well, do not become soggy during cooking, and have a beautiful, golden hue. So, we cook the fried chicken wings in water until tender, and at this time we deal with the vegetables.
Separately, peel the onions and carrots, wash them and cut them into small cubes, which we then fry in butter or vegetable oil until golden brown. We will use frying at the end of cooking, when the dish is ready. So, we made the frying and set it aside, while the wings were boiled in a pan. Chicken wing soup is prepared in several stages: the cooked wings are removed from it and rice or noodles are added to the broth, which continue to cook until tender.
From the boiled wings taken out of the soup, separate the flesh from the bones, chop it and place it in the finished soup, add the prepared fried carrots and onions, then add chopped herbs, ground pepper, bay leaf and other spices.
Tips from experienced chefs
Chicken wing soup is a fairly simple dish. It is prepared quickly and does not require any special skills, but small tricks will make cooking even easier and more interesting:
- If the soup is being cooked for children, then it is better to cook it with the so-called “second” broth. To do this, after boiling, you need to drain all the broth, rinse the meat and add a new portion of hot water, and then cook in the usual way;
- Since chicken wings provide a rather rich broth, it is not recommended to serve the soup with sour cream or other sauces based on milk and animal products;
- To add brightness to the soup, you need to add a wide variety of vegetables of all colors to it: carrots, onions, herbs, tomatoes, peppers and others. Garlic arrows go well with tomatoes - they can also be sautéed in a frying pan or immediately added to the dish being prepared;
- You need to add very little vegetable oil to the frying pan for sautéing, so as not to add even more fat to the finished dish;
- Chicken goes well with curry, so this seasoning can be safely added to soup. Also, a mixture of dried oregano, basil and ground black pepper will make the soup sparkle with bright colors;
- Homemade white bread croutons are a great addition to any chicken soup. They can be sprinkled directly onto a plate or placed into individual cups instead of bread;
- Olive oil will make the soup taste brighter, which is very important since chicken meat does not have a pronounced taste;
- It is better to cut the potatoes finely enough so as not to increase the cooking time and spoil the dish, because when reheated they become hard;
- Chicken broth and boiled eggs are a great combination. You can complement the noodle soup, thereby also decorating it, with an egg cut into two halves;
- If the soup is made from smoked chicken wings, season it before turning it off to avoid adding too much seasoning.
Whatever recipe you choose for soup with chicken wings, it will definitely turn out healthy and rich, you just need to put in a little effort and apply these little secrets.
Sauce and spices will add piquancy to the dish.
When preparing chicken soup, the introduction of egg-lemon sauce, which we add to the finished, warm soup, will give a special piquancy. How to cook it? You need to take 2 eggs, combine them with squeezed lemon and beat this mass well, and then add this mixture to the chicken soup. To make the soup aromatic, you need to add all the necessary spices and close it tightly with a lid.
After introducing the sauce, the soup takes on a milky hue. Carrots appear on its surface with beautiful orange spots, and herbs and spices give the soup an attractive appearance. Simple chicken soup can be served with sour cream, then it will be richer and tastier. On top of the dish is sprinkled with finely chopped herbs, which can be fresh parsley, dill or cilantro, wild garlic or other herbs - it depends only on your taste.
You can season the soup with hot red pepper. This dish contains red vinegar, curry, and a mixture of black and red pepper. The dish is not for everyone - it is very spicy and is not suitable for everyone. Only a true gourmet with a strong stomach can eat this soup. The finished dish, chicken soup, turns out so tasty and rich that you want to eat it again and again.
Don't know what to cook for dinner? Chicken wing soup is good. The broth will be clear and rich. If you bought homemade chicken, divide it into parts - into soup, meatballs, cutlets, the middle for roast, etc. Cook the wings for the soup until almost fully cooked and only add vegetables at the end. If you bought wings in a supermarket, they are usually from factory broilers. Also delicious, but will be ready in about 20 minutes. This soup is quicker to prepare.
You can add the vegetables and grains you like to the soup. Most often, housewives prefer rice. Chicken broth with rice is great! Many people like small curly vermicelli. Some in 10 minutes. Before cooking, throw in oatmeal, which quickly boils. Some people add nutritious and dietary buckwheat. Others - pearl barley. True, you need to cook it for an hour, and then add the wings.
Which vegetables should I take? For example, onions, carrots, parsley root. They are not placed immediately with the wings, but are finely chopped and sautéed separately in a frying pan. Add sunflower, corn or butter. It will turn out very tasty! In addition to vegetables for frying, many housewives add potatoes.
Having prepared broth from chicken wings today, tomorrow you can use it to make cabbage soup, red or green borscht, and rassolnik. We'll look at a simple but spicy, delicious soup with vegetables, chicken wings and an original egg-lemon sauce.
