Thin pancakes with milk are one of my family's favorite dishes. Moreover, I like them with all kinds of fillings, and just with sour cream or jam. They are delicious on their own, without additives.
Thin milk pancakes with holes - recipe for 1 liter of milk
So let's start with my favorite recipe. Prepare your food. Remove the eggs from the refrigerator in advance to allow them to come to room temperature. Throw on a kitchen apron to avoid getting dirty and get started.
Ingredients:
- Flour - 270 gr
- Milk - 1 liter
- Soda - on the tip of a knife
- Sugar - 3-4 tablespoons (or to taste)
- Salt - 1 teaspoon
- Eggs - 2-3 pcs. (depending on size)
- Vegetable oil - 3 tablespoons
Preparation:
1. Break the eggs into a deep container and add sugar. Whisk until smooth. Then add vegetable oil and stir again. Next, add salt and soda. Whisk a little again.
2. Heat the milk until warm (never hot). Pour half into the egg mixture. Now gradually, in portions, add the flour sifted through a sieve. After adding each part, mix the dough with a whisk or mixer. It should turn out homogeneous, without lumps.
3. Then pour the rest of the milk into the dough and mix. In this form, leave it to stand for about 20-30 minutes so that all the ingredients adhere to each other and it becomes “sticky”.
4. Next, lightly grease the pan with vegetable oil (only for the first time) and let it heat up properly. For one pancake, you need to pour out an incomplete ladle of dough. Make circular movements with the pan so that it spreads completely over the surface.
5. Fry on one side for about 20-30 seconds. The surface should be completely set and the dough should not remain liquid. After this, turn over to the other side and fry for another 15-20 seconds. Prepare all the remaining pancakes in this manner.
The most difficult thing is to turn the first pancake over so that it does not tear. First, use a spatula to move around in a circle, separating the edges from the sides of the pan. Then insert the spatula to the middle and quickly turn it over. You can help yourself with your hands to level it, but just be careful not to burn your fingers.
My grandmother's recipes
Thin crepe pancakes made with milk, incredibly tender and tasty, can be combined with any filling. They are baked in a frying pan or electric pancake maker, and may not be greasy (add butter to the dough if desired). Very detailed, step by step recipe.
Pancake dough: break the eggs into a saucepan with a volume of at least 2 liters, add sugar and sifted flour to them, stir until all the flour is absorbed (then there will be no lumps). Add milk little by little, mixing the dough thoroughly. To knead the dough, it is most convenient to use an immersion blender, then it will definitely turn out without lumps. If desired, add vegetable (olive, corn or sunflower) oil (unflavored) to the dough. If you like sweets, you can increase the amount of sugar to 2 tablespoons and add vanilla. Important : in order for our thin pancakes to turn out “lacey”, you must let the dough stand for at least half an hour at room temperature. After that, heat the pan well and you can bake. In this case, we coat the frying pan with vegetable oil (for lubricating we use cotton wool wound on a wooden stick, or half an onion or potato placed on a fork), you can also grease the frying pan with a piece of lard.
The thinner the layer of fat, the better the pancakes; A frying pan or pancake maker with a non-stick coating needs to be well greased the first time, and then it can be greased with practically nothing, but if we do not add oil to the dough, then such pancakes will turn out not at all greasy. - Boiling water – 200 ml
Preparation:
1. Place salt and sugar in a deep dish. Break the eggs into it and start whisking until the mixture begins to turn white. Many bubbles will appear and it will increase slightly in volume.
2. Next, add wheat flour to this mixture in portions, stirring each time. Remember that it needs to be sifted through a sieve. You will get a fairly thick mass.
3. Then pour in the milk in three additions, stirring each time until the consistency is homogeneous so that all the flour lumps break up. Then pour boiling water into it in a thin stream, stirring at the same time. Next, pour in the vegetable oil and finally mix everything. The dough should have the consistency of twenty percent cream.
4. Heat the frying pan well and grease its surface with vegetable oil. Then pour in a partial ladle and spread the dough throughout the pan in a circular motion. Fry for 30-40 seconds.
5. When one side is sufficiently fried, use a spatula to carefully separate the edges of the pancake from the wall of the pan and turn it over. Fry the second side for about 5-7 seconds. Each time before the next frying, stir the dough.
Frying time may vary depending on your stove and heating temperature.
6. Place the finished pancakes on a flat plate on top of each other. If desired, brush with a small piece of butter each time.
Pancakes with milk and water according to the classic recipe with soda
Sometimes you decide to bake pancakes, but there is not enough milk left. What to do? You can add plain water to the dough. The products turn out to be no worse in taste and appearance. The proportions can be varied according to your wishes. For example, take milk and water 50x50. It's up to you.
Ingredients:
- Milk – 500 ml
- Water – 125 ml
- Flour - 320 gr
- Eggs - 2 pcs.
- Salt - 0.5 teaspoon
- Soda - 0.5 teaspoon
- Vegetable oil - 3 tablespoons
Preparation:
1. Break eggs into a deep container, add sugar and salt. Mix until smooth. Then gradually add flour and pour in milk (in several additions). Thus, by mixing you should get a homogeneous dough without lumps. At the end, add soda, pour in water and stir again. Let the dough sit for 20-30 minutes. After it has settled, add vegetable oil and mix well.
2. Next, heat the frying pan, grease it with vegetable oil and pour in the dough (about 2/3 of a ladle). Spread it evenly over all surfaces and fry for about 30 seconds. After this, carefully turn over to the second side and fry for another 10-15 seconds.
3. After frying the pancakes, you can serve them in the same form on the table, grease them with butter, or wrap them with any filling. They turn out very soft and elastic.

Everyone knows that soda helps to create looseness and airiness in baked goods. However, if you follow all the basic requirements for the baked dish, you can get fluffy pancakes without using this product. Let's try it, I think you'll like it!

- Large chicken egg - 3 pieces
- Sugar – 3 tbsp. (70 grams)
- Flour – 250 grams
- Milk – 500 ml
- Boiling water – 250 ml
- Salt – 1 pinch

Ingredients:
- Milk – 500 ml
- Sugar - 2 tablespoons
- Flour - 200 gr
- Vegetable oil - 2 tablespoons
- Salt - 0.5 teaspoon
Preparation:
