Pancake batter with sparkling mineral water
I make pancakes quite often. And sometimes I experiment. I’ve long heard about pancakes with sparkling mineral water. The presence of carbon dioxide in carbonated mineral water loosens the dough. And when baking, the pancakes turn out airy and porous. Honestly, I prepared them for the first time, and today I want to tell you about them and show you with the help of photographs.
I have seen many different recipes for preparing similar pancakes, some bake them with the addition of milk, and others take an additional couple of chicken eggs. But I decided to make the dough exactly the same as for regular pancakes on water. The only change is that I replaced plain water with sparkling water. Difficulty of preparation:

Ingredients:
- Sparkling mineral water – 1 l
- Chicken eggs – 2 pcs.
- Flour – 14 tbsp.
- Sugar – 3 tbsp.
- Salt – 5 g
- Sunflower oil - for baking
Progress:
Wash chicken eggs well. Carefully break the eggs into a bowl so that the shells do not get in.
Shake vigorously with a fork. Add 3 tablespoons of sugar and a teaspoon of salt. Stir.
Add flour and add a little mineral water. Stir. Then we repeat the action, adding mineral water and a little flour. In total, I used 1 liter of sparkling water and 14 heaped tablespoons of flour for my pancakes.
It was interesting to observe when you pour mineral water into the dough. Small bubbles appear and thick foam rises. You start stirring, and after a while it goes down. But the dough still turns out a little airy.
When the dough is kneaded. All the lumps are broken, and it has a homogeneous structure, let's start baking pancakes. To do this, heat the frying pan and pour in sunflower oil. To better distribute the oil throughout the pan, you can spread it with a silicone brush. Or use a “home-grown invention” for this purpose in the form of a cut of a raw potato, pricked on a fork. The potatoes will distribute the oil well, and the fork will help keep your hands from getting oily.
Using a ladle, pour the dough into the frying pan. We try to ensure that the dough spreads completely over the bottom. Fry the pancakes on both sides.
The pancakes come out with a very small hole.
The taste of pancakes is almost no different from ordinary ones on the water. But they seemed a little tastier and more tender to me. Although my daughters said out loud that they were exactly the same.
