I would like to recommend to all housewives a recipe on how to cook pancakes with kefir and milk. They turn out tender, thin and incredibly tasty. Great for a big family breakfast.

Pancakes with kefir and milk - a recipe for delicious and thin pancakes with holes

Without exaggeration, I will say that this recipe, in my opinion, is the most successful, simple and very tasty. The baked goods turn out to be the most tender, which makes me and my family especially happy. This is due to the combination of two products: sour milk and fresh milk.

Ingredients:

  • 500 grams of kefir (I have 2.5% fat content)
  • 1 glass of milk (250 grams)
  • 1.5 cups flour
  • 2 medium eggs
  • 2 tablespoons sugar
  • 0.5 teaspoon salt
  • 1 teaspoon of soda (without a slide)
  • 3 tablespoons vegetable oil

Let's prepare all the necessary ingredients.

Pour kefir into a bowl, add sugar, salt and soda. It is better to use kefir at room temperature. If it's cold, it's better to heat it up.

Beat in two eggs and mix with a whisk.

You can prepare the pancake dough using a mixer or a whisk, as you prefer.

Add the sifted flour in portions and mix everything well with a whisk.

I have homemade milk, you can take store-bought milk, heat it up and pour it into the pancake dough.

Whisk everything well so that there are no lumps. Add 3 tablespoons of refined vegetable oil to the dough.

Let the dough stand on the table for 10-15 minutes, and then go to the stove and fry the pancakes.

If lumps have formed in the dough, then leave it at room temperature for 10-15 minutes, then mix everything with a whisk, all the lumps will disperse.

Fry pancakes in a heated frying pan. For the first pancake, I grease the pan with vegetable oil. I have a frying pan 15 cm in diameter. I pour in half a ladle of dough. Distributing from the middle to the edges.

When the edges of the pancakes are browned, you can turn the pancake over and fry for a minute on each side. They all fit into a hole, very thin.

Here is a clear example of how thin and holey the pancakes are.

You can serve them with sour cream and honey. In our family, for example, everyone loves honey and sour cream.

"Tender" pancakes

This recipe is distinguished by the absence of eggs in the dough, which gives the taste of the pancakes a special tenderness.

Required Products:

  • 0.2 l. kefir;
  • 25 gr. white sugar;
  • 25 gr. vegetable oil;
  • 0.4 tsp soda;
  • a little salt;
  • 250 gr. flour (you can use special pancake flour).

Cooking steps:

  1. Whisk the kefir to form bubbles. For pancakes made with kefir and milk, the percentage of fat content of kefir is not important, but the consumption of flour will depend on the thickness of this product, so if the kefir is thick and dense, then the amount of flour is doubled.
  2. Add butter and all bulk products, except flour, to the kefir container. Everything needs to be mixed well.
  3. Next, you can add flour, but slowly and portionwise, mixing each portion of flour into the dough. As soon as the last portion has been poured in with a whisk, you need to mix the dough well, about 15 minutes. Next you can bake pancakes.

Due to the absence of eggs in the recipe, these lengths have the least calories and are suitable for those who do not eat animal products.

How to cook openwork thin pancakes with kefir and milk in a hole

For those who like them to be like a “sieve”, full of holes, I suggest cooking them with dry yeast. You will have to tinker a little with the dough, since you need to give the dough time to “come up,” but the result will not disappoint you.

Ingredients:

  • kefir - 400 ml.
  • milk - 500 ml.
  • flour - 300 gr.
  • egg - 4 pcs.
  • sugar -4 tbsp. spoons
  • yeast (dry) - 2 tsp.
  • spoons a pinch of salt vegetable oil

First, let's make a dough, pour kefir into a deep bowl, add sugar and yeast.

Mix everything. Then add half the sifted flour and stir well.

The flour must be sifted, this way it is saturated with oxygen, and the baked goods turn out better.

Don't neglect this point.

Cover with film and put in a warm place for 40 minutes. This is what the dough looks like.

Mix the eggs with a whisk with a pinch of salt and add to the dough.

Mix everything well with a whisk. Sift the remaining flour. Mix everything so that there are no lumps.

We heat the milk; there is no need to boil it, just enough for the milk to be warm. You can heat it up over a fire or in the microwave.

Then pour in 5-6 tablespoons of vegetable oil, mix again, and this is the dough we get.

Fry the pancakes in a well-heated frying pan, grease with vegetable oil before each baking. Look how thin and delicate the pancakes are, all in a hole.

Custard pancakes with kefir and milk - step-by-step recipe

A very tasty dough is obtained if you brew it. That's right, brew the finished dough with hot milk. Don't worry, nothing will be cooked. The entire cooking process is designed step by step, so cook, and you won’t be disappointed.

Ingredients:

  • Wheat flour -2 cups
  • Kefir (not fatty) - 2 cups
  • Boiling water - 1 tbsp.
  • Vegetable oil - 3 tbsp. l.
  • Eggs - 2 pcs.
  • Soda -0.5 tsp.
  • Sugar - 2 tbsp. l.
  • Salt

Preparing pancake dough. Beat two eggs into a bowl, add salt, sugar, and mix with a whisk. Now add kefir and flour. Add kefir (it’s better to take 1%), soda, mix and add flour.

Mix the dough well, it should turn out without lumps. Pour in boiling water and try to stir everything in quickly. Pour in a thin stream and mix with a whisk.

Add vegetable oil, leave the dough for 10 minutes and go to the stove to fry the pancakes. Fry in a well-heated frying pan.

The frying pan is 22 cm in diameter. It is better to fry in a small frying pan.

Grease the frying pan with vegetable oil.

Fry on one side, and then turn over and fry on the second side.

It is more convenient to pry the edges, in a circle, with a wooden skewer.

We fry all the pancakes. You can brush each one with melted butter, but this is not necessary.

When you urgently need to cook pancakes, but there are no eggs in the kitchen, a couple of secrets will help. The dish will turn out just as tender and yellow as with the addition of eggs.

Grocery list:

  • Premium flour - 0.3 kg;
  • Milk - 1 l;
  • Salt - 3 g;
  • Sugar - 75 gr.;
  • Soda - 3 gr.;
  • Vegetable oil - 30 ml;
  • Butter - 65 gr.

Step-by-step instruction:

  1. In one container, combine sugar, salt, soda, flour and half the total amount of milk. The whole mass comes out very thick. Make sure that the mixture is homogeneous in composition.
  2. Heat and melt the butter in the microwave and pour it into the dough along with the vegetable oil, mix again.
  3. Boil 0.5 liters of milk and gradually add to the main mass.
  4. Pour about half a ladle of dough into the prepared frying pan and distribute among the dishes. The pancake should be very thin.
  5. After a minute, turn it over to the other side.
  6. The finished dish does not need to be coated with oil.

A simple recipe for pancakes with boiling water and milk on kefir

In this recipe, I suggest not adding whole milk, but mixing it half and half with boiling water; the baked goods are the most tender. By mixing three types of liquid, the dough turns out especially tasty.

Ingredients:

  • 500 grams of kefir (I have 2.5% fat content)
  • 125 grams of boiled warm water
  • 125 grams of milk
  • 1.5 cups flour
  • 2 medium eggs
  • 2 tablespoons sugar
  • 0.5 teaspoon salt
  • 1 teaspoon of soda (without a slide)
  • 3 tablespoons vegetable oil

The working process:

  • In a bowl, mix kefir (room temperature), salt, soda and sugar.
  • Add flour (sifted) in portions and mix with a whisk or blender.
  • Add milk and water. A total of one glass of liquid is obtained.
  • Stir and leave for 10 minutes at room temperature on the counter.
  • Pour in the vegetable oil and mix well with a whisk (if there were any lumps, they will dissolve).
  • Grease a frying pan with vegetable oil and fry the pancakes on both sides.

Every time before frying, stir the dough with a ladle.

We fry all the pancakes. If the frying pan is 25 cm in diameter, you can scoop up a ladle of dough; if it’s 15 cm (mine is like this), I scoop up half.
