Various cutlets are baked in the gravy: vegetable, fish, meat, poultry, with mushrooms and even with fillings.
You can use almost any cutlet mass, but preferably with the addition of an egg or other binding ingredient.
Otherwise, the product may fall apart when stewing in the oven.
What gravies are made from:
• tomatoes, tomato paste;

How to cook minced meat balls with gravy
- Let's start with the beats. Cut off the crusts from the loaf.
- Break the crumb into pieces, place in a small bowl, add about 1/3 glass of water and set aside for 10 minutes to allow the bread to soak.
- When it is saturated with water, knead it additionally with your hands and squeeze it lightly, draining the excess liquid. There will be little of it - about 1 spoon. We add the squeezed crumb to the minced meat, add salt and spices.
- Stir until smooth.
- Divide the minced meat into about 6 parts, and shape each into a ball. We made them round.
- Pour oil into a frying pan, heat it up and fry the meatballs until crusty over high heat: first on one side, then on the other. Reduce the heat, cover with a lid and cook for another 3 minutes on each side.

In principle, the shape of vegetables is not important to us; they will still be chopped. The size is important, it should not be large (so that the vegetables cook faster).
- Place sour cream and tomato paste in a cup, add flour and salt.
- Mix until you get a thick paste.
- Pour a glass of cold water and stir again.
- Place the vegetables in the same frying pan in which the meatballs were fried. If there is not enough fat in it, add more oil.
- Fry, stirring, for about 5 minutes.
- Pour in the liquid gravy base. Reduce heat to moderate and simmer until vegetables are soft.
- Transfer the vegetables and some of the liquid into a blender glass. Using an immersion blender, puree until smooth.
- Return to the pan and heat for a couple of minutes. This can also be done in the oven.
If you wish, you can also put the meatballs in the gravy and simmer a little along with it, or you can put the meatballs on a plate and pour thick and tasty gravy on top. As you can see, the technology for its preparation is quite simple, although it takes some time.
There is another version of chopped meatballs - not from minced meat, but from meat cut into small pieces. In this case, it is better to cook from poultry: these fibers are much easier to cut into cubes due to the absence of films and fatty layers. An egg will also help to hold the pieces together into a homogeneous mass. Fry in a frying pan, spooning out like pancakes.

Chicken cutlets in the oven with creamy gravy
A recipe for amazing chicken cutlets in the oven with gravy, which turn out very tender and juicy. We prepare minced meat ourselves from fillet and under no circumstances use a purchased product.
Ingredients
• 4 slices of loaf;
