  • minced chicken – 380-420 g;
  • ground pepper - to taste;
  • rice – 0.5 tbsp;

  • raw egg – 1 pc.;
  • fresh greens - 1 bunch;
  • carrots – 1 pc.;
  • milk – 50 g;
  • onions – 2 heads;
  • butter - to taste;
  • tomato paste – 1 tbsp. l. or tomatoes (2 pcs.);
  • flour – 1 tbsp. l.
  1. First, boil the rice until half cooked and leave to cool completely.
  2. Grind the peeled carrots on a grater.
  3. Pour boiling water over the tomatoes and carefully remove all the peels, then pass through a meat grinder - you should get tomato puree.
  4. Wash the chicken well, dry it with a paper towel, and pass it together with the peeled onions through a meat grinder.
  5. Add the cooled rice to the minced meat and mix everything well. Then add a raw egg, salt, milk, pepper - mix all the ingredients.
  6. Form a not very large ball from the minced meat and roll it in flour on all sides.
  7. Fry each hedgehog for a couple of minutes in a frying pan with hot oil (vegetable oil).
  8. To bake in the oven, place all the balls in a baking dish that has been pre-greased with butter.
  9. For the gravy, separately mix sour cream with tomato paste, add garlic, passed through a press and any spices - all components are thoroughly mixed. To make the sauce thicker, add flour (1 tbsp). If you use meat broth to prepare the gravy, it will have a richer and brighter taste.
  10. Pour gravy into the form with meat hedgehogs so that they are almost completely covered with liquid.
  11. Cover the container with foil and place in an oven preheated to 180˚C.
  12. After about 10 minutes, remove the foil and sprinkle the products with a small amount of chopped hard cheese, which will result in an appetizing golden brown crust. Minced hedgehogs in the oven will be very tender and juicy.

Minced hedgehogs with rice in a slow cooker

  • minced meat – 580-620 g;
  • round rice – 0.5 tbsp;
  • spices for meat - to taste
  • raw egg – 1 pc.;
  • black pepper – 1 pinch;
  • carrot – 1 pc.;
  • salt – 1-2 pinches;
  • onion – 1 head;
  • sunflower oil – 2-2.5 tbsp. l.;
  • fresh tomatoes – 2-4 pcs.
  1. Place the rice in a deep bowl and rinse it well with plenty of water.
  2. Peel the onion and then finely chop it.
  3. Wash the carrots, peel and chop on a grater.
  4. Wash the tomatoes, then cut them into small cubes.
  5. Pour a little sunflower oil into the multicooker bowl and fry the onions and carrots - set the “baking” mode, set the timer for 20 minutes. Leave the lid open while roasting vegetables.
  6. While the vegetables are frying, mix the rice with the minced meat, add the egg, pepper and salt - mix everything well.
  7. Form the mixture into small hedgehogs.
  8. After 10 minutes of frying the vegetables, add the tomatoes to the multicooker bowl and place the meat balls on top. Close the lid and wait for the timer to stop.
  9. As soon as the signal sounds, open the multicooker lid and add the last ingredient - spices.
  10. Pour hot water - the hedgehogs should be almost completely covered with liquid.
  11. On the multicooker, set the “Stew” mode and set the timer for an hour.

  • minced meat – 480-510 g;
  • black pepper – 1 pinch;
  • rice – 0.5 tbsp;
  • fine salt – 2 pinches;
  • onion – 2 heads;
  • fresh greens - 1 bunch;
  • raw egg – 1 pc.;
  • water – about 800 g;
  • khmeli-suneli - to taste;
  • flour – 1 tbsp. l.;
  • tomato – 3 pcs.;
  • carrot – 1 pc.
  1. First, boil the rice until half cooked and let cool.
  2. To prepare minced meat, rinse the meat, chop the peeled onion and pass through a meat grinder. Then add the egg, cooled rice, salt, a little pepper - mix all the ingredients well.
  3. Form small balls from the resulting mixture and place in a large saucepan with a double bottom so that the dish does not burn during cooking.
  4. In a frying pan in hot oil, fry onions, carrots, add diced tomatoes. After a few minutes, add the flour, stir and fry for about 30 seconds.
  5. Then pour boiling water into the frying pan, constantly stirring the gravy so that it does not burn and the flour is completely dissolved. Wait until the mixture boils, turn off the stove.
  6. Add salt, a little sugar, pepper, and chopped herbs to the gravy.

How to make hedgehogs in tomato sauce in a frying pan

  • minced meat – about 220-260 g;
  • ground pepper – 1 pinch;
  • white cabbage – 0.25 pcs.;
  • fine salt - to taste;
  • round rice – 90-110 g;
  • flour – 2-2.5 tbsp. l.;
  • onion – 1 head;
  • tomato sauce – about 220-240 g.
  1. Hedgehogs made from ground beef are tender and juicy. First, finely chop the cabbage and boil in lightly salted water until fully cooked. Leave to cool for a while.
  2. Mix the minced meat with cabbage and finely chopped onion, pepper and salt.
  3. Boil the rice until half cooked and cool.
  4. Mix minced meat with rice. Then form small balls.
  5. Place the meatballs in a tight row in the pan.
  6. For the sauce, mix flour and tomato paste, add a little mayonnaise (this is an optional ingredient), and add salt.

  1. Rinse the rice, boil until half cooked, cool.
  2. Peel the carrots and onions and chop finely. Fry the vegetables in butter until golden brown.

  • minced meat – 480-520 g;
  • salt – 1 pinch;
  • fresh cabbage – 720-740 g;
  • ground pepper – 1 pinch;
  • semolina – 1 tbsp. l.;
  • onion – 2 heads;
  • carrots – 2 pcs.;
  • sugar – 1 pinch;
  • tomato juice – about 700 g.
  1. Finely chop the cabbage, add salt, and use your hands for a few minutes until the juice begins to release. Then add minced meat, semolina, salt and pepper - mix everything well.
  2. Turn on the oven, preheat to 200˚C.
  3. Form small balls from the minced meat, place them in a baking dish with high sides, and place in the oven.
  4. For the sauce, fry the onions and carrots in hot vegetable oil, add tomato juice, salt, pepper, add sugar - simmer over low heat for about 10 minutes.

Hedgehogs with rice are made from any minced meat that is available, but the most tender are made from chicken.

  • Onion – 1 medium sized head

  • Fresh dill - a bunch to taste
  • Garlic – 4 cloves
  • Sesame - for sprinkling
  • Vegetable oil - grease the sheet
  • Starch (optional) – 1 tbsp
  • Salt - to taste
  • Spices (paprika, turmeric, coriander, any favorite) - to taste

  • Minced meat - 600-700 grams (pork + beef)
  • Rice - 1/2 Cup
  • Egg – 1 piece
  • Carrots – 1 piece
  • Bell pepper - 1/2 piece
  • Onion - 1 piece (1/2 - for minced meat, 1/2 - for sauce)
  • Wheat flour - 2 tbsp. spoons

We measure out the rice. It is better to take rice in proportion to meat 1 to 3, because if you take less, you won’t feel the rice, and if you take more, you won’t feel the meat. But everything changes to suit personal preferences.

Mix the prepared minced meat and cooked rice, add the onion, cut into small cubes. Stir until smooth. Set the oven to heat up to 180 degrees.

We take the minced meat into our hand and roll it into a ball. Place all the bells on a sheet pre-greased with vegetable oil.

When all the hedgehogs and rice are laid out on a sheet, sprinkle them with sesame seeds. If desired, sesame seeds can be replaced with chopped nuts or sunflower seeds. Place the sheet with hedgehogs in the oven for 20 minutes, reducing the heat.

While the hedgehogs are cooking, dilute the sour cream with water to the consistency of cream, add garlic, cut into small pieces, finely chopped fresh dill, if desired, dilute the sauce with sautéed onions, carrots or anything else you like. Stir the sauce.

If the sauce is too thin in consistency, use starch to thicken it.

  • chop half the onion and add the mixture along with all the rice to the raw minced meat;
  • break 1 egg into the minced meat, add salt and pepper 1 pinch each;
