When the aroma of apple baking with cinnamon comes from the oven, even after a hearty lunch, everyone runs to the kitchen and languishes in anticipation of apple muffins or buns. At least that's what happens in my family. And these smells make the house especially warm and cozy. I suggest you move away from traditional pies and charlotte and make muffins from apples. Moreover, thanks to their small shape and delicate taste, children really like them. Today we have very simple and incredibly tasty recipes for apple muffins; their dough is thicker than for muffins, but this does not prevent them from remaining a sweet pastry for pp lovers.
If you wish, you can add to them:
- chopped dried apricots;
- soaked raisins;
- candied fruit;
- replace part of the flour with cocoa powder;
- grated chocolate or chocolate drops;
- grated lemon or orange zest;
- crushed nuts.
Airy tenderness
Generally speaking, muffins are the same cupcakes that we are used to preparing with the addition of raisins or nuts. Apple cinnamon muffins are practically no different from their muffin counterparts. The dough should be airy, almost weightless. And apple slices in combination with cinnamon powder will give baked goods a unique aroma and exquisite taste.
On a note! It is generally accepted that muffins are small cupcakes. But if you are cooking in your home kitchen, you can use one large mold. This will not change the taste of the baked goods.
Compound:
- 2 pcs. apples;
- wheat flour – 0.1 kg;
- 50 g butter;
- chicken egg – 2 pcs.;
- cow's milk – 50 ml;
- 4 tbsp. l. refined vegetable oils;
- 1 tsp. baking powder;
- a bag of vanilla sugar;
- cinnamon powder to taste;
- 120-150 g granulated sugar.
Preparation:
- Let's start by preparing the necessary products. You can use any heat-resistant pan to bake one cupcake or several small ones.
- Peel the apples and rinse thoroughly.
- First, cut them in half, remove the membranes and seeds.
- Grind the apple pulp into cubes.
- Pour 70 g of granulated sugar into a separate bowl, break one egg and add crystalline vanilla sugar to taste.
- Whisk these ingredients thoroughly.
- Add vegetable oil and mix everything again.
- Pour whole milk at room temperature into the resulting mass.
- Now add cinnamon powder, baking powder and flour, which we sift thoroughly.
- Knead the dough until smooth.
- Add chopped apples to the dough and mix.
- Grease a silicone mold with butter and pour out the dough.
- Place the dough in the oven for 25 minutes.
- Bake at a temperature mark of 180°.
- Meanwhile, melt the butter in a steam bath.
- Combine it with the remaining egg and granulated sugar.
- Take the cake out of the oven and pour the prepared filling over it.
- Place the baked goods in the oven for another 15-20 minutes.
Simple Apple Muffins
This recipe makes 10 servings and will only take half an hour to prepare. You should prepare a deep bowl, a mixer (you can also use a hand whisk), a sieve for sifting flour, silicone or other muffin molds.
Required ingredients:
- large apples of any variety – 2 pcs;
- sugar – 120 g (its amount can be reduced if the apples are sweet);
- baking powder – 10 g;
- flour – 200 g;
- milk – 50 ml;
- butter – 100 g (can be replaced with high quality margarine);
- eggs – 3 pcs.
Also for muffins with apple you will need a pinch of salt, a small bag of vanilla sugar and powdered sugar for decoration.
Muffins with apples.
The apples are cut into thin slices and blanched in hot (almost boiling) water for 2 minutes. In a bowl, beat eggs, milk and melted butter with a mixer or whisk, mix sifted flour, sugar, vanilla sugar, flour, baking powder, and salt separately. After this, the dry and liquid masses are mixed, achieving homogeneity. The mixture should have medium thickness.
Pour the mixture into molds, filling them to 2/3 or 3/4 of their height. The prepared apple slices are rolled several pieces into a roll (so many of these “roses” are made so that there is enough for each cupcake) and inserted into the center of the dough. The molds are sent to the oven, preheated to 180°C for 20-25 minutes. Check apple muffins for doneness with a wooden toothpick. If desired, sprinkle the finished products with powdered sugar immediately after removal from the oven.
Not an ounce of flour!
For variety, you can bake cottage cheese muffins with apples. There is no need to add flour to this delicacy; this bulk ingredient is replaced with semolina. The baked goods are incredibly tasty and melt in your mouth.
Compound:
- 0.6 kg of curd mass;
- chicken egg – 2-3 pcs.;
- 150 g granulated sugar;
- 3 pcs. apples;
- 5 tbsp. l. semolina;
- 1 tsp. baking powder.
Preparation:
- Break the eggs into a deep bowl and add granulated sugar.
- Mix these ingredients thoroughly with a whisk and add baking powder.
- Grind the curd mass in a sieve or mash with a fork to remove lumps.
- Add curd mass and semolina to the dough.
- Mix everything until a mass of homogeneous consistency is formed.
- Peel the apples and cut into small cubes.
- Add apple slices to the curd dough.
- Prepare silicone molds and grease them with vegetable oil.
- Fill the form with the prepared curd dough.
- We send it to an oven heated to a temperature threshold of 180°.
- Bake for about 35-40 minutes.
- Then cool and carefully remove the muffins from the molds.
Kefir-based muffins
Often biscuit dough is used to make muffins. You can make kefir muffins with apples. Such baked goods will turn out fluffy and porous.
On a note! There is no need to extinguish baking soda with acetic acid; the fermented milk product will take over this function.
Compound:
- 150 g wheat flour;
- ½ tsp. vanilla;
- 2 pcs. apples;
- chicken egg – 1 pc.;
- refined vegetable oil – 2 tbsp. l.;
- 1 tbsp. kefir;
- 100 g granulated sugar;
- 1 tsp. baking soda.
Preparation:
- We wash the apples and remove the skin from them.
- Carefully peel the core and chop the apple pulp into small cubes.
- To prevent the apples from darkening and for additional taste, you can sprinkle them with freshly squeezed lemon juice.
- Sift wheat flour into a dry bowl.
- Add baking soda, vanilla, granulated sugar.
- Mix the dry ingredients.
- Pour room temperature kefir into a separate bowl.
- Add egg and vegetable oil.
- Mix thoroughly with a whisk, and then combine both masses.
- Stir until smooth, avoiding the formation of lumps.
- Add chopped apples and mix again.
- Fill the molds approximately 2/3 full with dough.
- Please note that during the heat treatment the dough will rise slightly.
- Place the muffins in the oven and bake until golden.
The most apple muffins
List of required ingredients:
- flour 10-12 tbsp;
- eggs 2 pcs.;
- 3-4 medium apples;
- granulated sugar 1/2 tbsp.;
- vegetable oil 70 ml;
- cinnamon if desired;
- soda 2 tsp.
- Kitchen appliances and accessories: bowl, mixer, molds, paper tartlets, baking tray, sieve.
- Time spent: less than an hour.
- Quantity: 15 small pieces.
- Use a juicer to squeeze a third of a glass of juice out of some apples. Or take the same amount of ready-made juice with pulp.
- Mix the juice with butter and sugar. This is convenient to do with a whisk or blender with a special attachment.
- In a separate bowl, beat the eggs with a pinch of salt into a thick foam.
- Transfer the beaten eggs into a container with the liquid mixture, add soda dissolved with lemon or vinegar.
- Take a spoon or spatula and mix smoothly.
- Mix sifted flour with cinnamon.
- Add flour in portions and knead the dough until smooth.
- Peel two more apples and cut into small cubes or grate with the coarse side of a grater.
- Place the apples in the dough and mix.
- Heat the oven to 190°.
- Grease small molds or line them with paper tartlets.
- Fill the molds one-third full with apple batter.
- Place the baking sheet with the future muffins in the oven and cook them for 25-30 minutes.
- If desired, the finished muffins can be sprinkled with powdered sugar or decorated using -Muffin Cream-.
You can make Cherry Muffins or healthy Carrot Muffins in the same way.

Baking for those who are fasting
Compliance with church canons is a way of life for many. During this period, you need to limit yourself from eating animal food. But this is not a reason to give up your favorite treats. For tea you can bake lean muffins with apples.
Compound:
- 2 tbsp. wheat flour;
- 2 pcs. apples;
- 70 ml refined vegetable oil;
- 100 g granulated sugar;
- 1 tsp. baking powder.
Preparation:
- Peel the apples, cut out the membranes and remove the seeds.
- Grind the apple on a fine grater or in a blender to a puree consistency.
- Place the apple mixture into a deep bowl.
- Add granulated sugar and mix.
- Next, pour in the vegetable oil.
- Mix again until a mass of homogeneous consistency is formed.
- Sift the flour separately and combine it with baking powder.
- Lastly, add flour to the dough and mix, thoroughly breaking up all the lumps.
- Grease silicone molds with oil.
- Lay out the dough and put them in the oven.
- Bake the muffins until golden.
On a note! Such pastries can be served, decorated with powdered sugar, syrup or jam.
