Three basic dough recipes for Ossetian pies

Ossetian pie with cheese and potatoes

A classic recipe for Ossetian pie, which we recommend starting with!

You will need:

For the dough:
500 g flour, 400 ml milk, 50 g butter, 1.5 tsp.
sugar, 1 tsp. salt, 5 g dry yeast. For the filling:
200 g potatoes, 300 g suluguni (mozzarella, Ossetian or Adyghe cheese), 40 g butter, salt, pepper.
Preparation:

1. Mix yeast with sugar and pour hot milk, and then leave for 10-15 minutes.

2. Pour the milk mixture into the sifted flour and salt, and add melted butter there. Knead the dough for about 10-15 minutes and leave under the film for 1.5 hours. Every 30 minutes the dough must be gently kneaded.

3. Boil the potatoes, mash them, add 10 g of butter and grate the cheese on a coarse grater. Mix the filling until smooth and add spices to taste. Divide the filling into three parts.

4. Divide the dough into three parts and leave the pieces for another 5 minutes. Stretch a piece of dough, place a ball of filling on top, pinch the ends and stretch or roll out. The diameter will be approximately 25-28 cm. Make a hole in the center for steam to escape.

5. Place the pie on parchment and bake the pie for 10 minutes at 220 degrees and another 5 at 230. Grease the top with butter and repeat the same with the remaining two.

Traditional potato and cheese filling

There are many variations of this filling - perhaps it is quite fair to say that each housewife prepares it in her own way, adhering to her own proportions and making her own secret adjustments. The basic recipe is here, and then try to conjure, change types of cheese, add spices, create new ingredients.

Ingredients:

  • 500 g Ossetian cheese;
  • 3 small potatoes;
  • 1/3 cup milk;
  • salt, pepper to taste.

Preparation:

  1. Cut the salty Ossetian cheese into small pieces and soak in water for a couple of hours.
  2. After the specified time, drain the water, knead the cheese with your hands or crush it with a fork.
  3. Boil the potatoes until tender, drain the water, cool and puree.
  4. Combine cheese and potatoes, add milk, stir well. If necessary, add salt and pepper. That's all, simple but very tasty.

Ossetian pie without yeast with minced meat

This is another recipe for making dough, and you can use any filling.

You will need:

For the dough:
400 ml kefir, 1 pinch of soda, 1 pinch of salt, 500 g of flour.
For the filling:
500 g minced meat, 2 onions, spices, butter.
Preparation:

1. Lightly heat kefir in a saucepan, add soda and stir. Add salt, sifted flour and knead into a soft elastic dough. 2. Mix the minced meat with chopped onions and spices to taste. 3. Roll out half the dough into a mold, lay out the filling, cover with a second layer of dough, pinch the edges and lightly prick the pie on top with a fork. 4. Bake it for 40 minutes at 180 degrees, and then grease it with butter.

Ossetian pumpkin pie

A delicious Ossetian pie recipe for lovers of spicy pumpkin.

You will need:

For the dough:
200 ml water, 400 g flour, 1 tsp.
dry yeast, 1 tsp. sugar, 0.5 tsp. salt, 1 tbsp. vegetable oil. For the filling:
350 g pumpkin, 150 g suluguni, 150 g onion, pinch of sugar, 2 tbsp.
vegetable oil, thyme, spices, butter. Preparation:

1. Mix the sifted flour with the rest of the dry ingredients. Pour in slightly warm water and knead the soft dough until elastic. Lubricate it with vegetable oil and put it in a warm place under film for an hour. 2. Grate the pumpkin and cheese on a coarse grater, and lightly fry the finely chopped onion in vegetable oil. Mix the filling and add spices. 3. Divide the dough and filling into two parts - into two pies. Roll half into a flat cake about 7 mm thick, place the pumpkin with cheese and onions and gather the edges into a bag. 4. Carefully roll out the cake to the desired thickness - approximately the same 7 mm. Make a hole in the middle and bake for 10-15 minutes at maximum temperature. When serving, brush with butter.

Yeast dough

Ingredients:

  • 2 tbsp. l. sour cream 15% fat
  • 600 g wheat flour
  • 1/2 tsp. salt
  • vegetable oil for lubricating hands
  • 200 ml kefir 3.2% fat
  • 1 egg
  • 7 g dry yeast
  • 100 ml fat content 3.2%
  • 1 tsp. sugar

How to prepare yeast dough:

  1. Heat the milk to 35°C, dissolve 1 sugar, 2 tablespoons of flour and yeast in it. Pour into a deep bowl and leave for 15 minutes in a warm place.
  2. Add kefir, egg, salt and sour cream to the bowl with the dough. Mix everything thoroughly.
  3. Gradually sift the remaining flour into a bowl and knead into a soft dough. When kneading, grease your hands with vegetable oil; at first the dough will stick, but at the end of kneading it will become manageable. Cover the bowl with the dough with a clean towel and set aside in a warm place for 1 hour.
  4. Punch down the risen dough and knead for 2 minutes. Divide it into three equal parts. Dust the table with flour and stretch each piece of dough into a 1 cm thick cake.
  5. To form the pies, place 1/3 of the filling in the center of each cake and begin pinch the edges of the cake, gathering them in the center.
  6. When the dough ball with the filling inside is completely assembled, gently press the central part with the tucks, making a small indentation, and begin to level the cake, turning it into a flat cake 3 cm thick. In the center of the cake on top, make a small hole for steam to escape.

Ossetian pie with cottage cheese and herbs

The pies turn out light and very beautiful when cut.

You will need:

For the dough:
250 g flour, 2 tsp.
dry yeast, 130 ml milk, 1 tsp. sugar, 1 tsp. salt, 2 tsp. vegetable oil. For the filling:
100 g suluguni, 250 g cottage cheese, 30 g green onions, 30 g dill, 50 g sour cream, 1 egg, butter.
Preparation:

1. Dissolve yeast and sugar in warm milk and leave for 10 minutes. Then add salt and flour, knead the dough, add vegetable oil and knead again. Leave the dough under the film in a warm place for 45-60 minutes. 2. Mix cottage cheese, egg, grated cheese, sour cream and finely chopped herbs with green onions. Add spices to taste. 3. Divide the dough and filling into parts, depending on the size of the pies you want. 4. Roll out a layer of dough, place some of the filling on top and pinch the edges. Roll out the cake, make a small cut in the center and bake for 25 minutes at 200 degrees. Then grease with butter.

Dough based on sour milk

Ingredients:

  • 600 g wheat flour
  • 250 ml kefir (ryazhenka, low-fat sour cream, yogurt)
  • 1/2 tsp. salt
  • 1 tsp. baking soda or baking powder according to package instructions
  • 2 tbsp. l. vegetable oil

How to prepare dough based on sour milk:

  1. Sift flour with salt and soda into a deep bowl, pour in warm fermented milk base and vegetable oil. Knead the dough.
  2. Cover the dough with a clean kitchen towel and let rest for 40 minutes.
  3. Divide the dough into three parts.
  4. Form pies.

Note: The baking time and temperature for pies may differ not only from the chosen dough recipe, but also depending on what filling you decide to use.
