  • Usually we are used to cooking only green borscht from sorrel. My grandmother was a good housewife and always came up with something interesting to surprise her grandchildren. Today I want to share my grandmother’s recipe for delicious sweet sorrel pies.

    Fried sweet pies with sorrel

    1. We prepare all the necessary ingredients.

    2. Take 550-650 grams of sorrel, wash it thoroughly, cut off the hard stems. Using a knife, cut the leaves into small pieces.

    3. Place the chopped sorrel in a container and scald with boiling water.

    4. After 30 seconds, pour the contents onto a sieve and strain the sorrel. Then squeeze it well with your hands to get rid of excess water.

    5. Preparing dough for pies. We will need a deep container. Pour 280-300 ml of kefir into it, add four tablespoons of refined vegetable oil. Using a whisk, mix everything well.

    6. Add one tablespoon of salt and sugar and a teaspoon of soda to the resulting mixture. Mix all the ingredients again.

    7. Sift 300-350 grams of flour through a sieve and begin to knead the dough.

    8. Cover the finished dough with cling film or a kitchen towel. Place in a warm place.

    9. After 20 minutes we return to the test. Pinch off small pieces. Knead the resulting balls with your hand or roll them into a circle with a rolling pin.

    10. Now add a teaspoon of sugar and sorrel filling to each rolled out circle.

    11. Carefully pinch the pie.

    12. Take a frying pan and pour 100-150 grams of refined sunflower oil into it.

    13. Carefully place the pies into the heated oil and fry them on both sides for three minutes.

    14. The pies have become golden brown, remove them from the frying pan and place them in a deep container. Pies with sorrel are ready.

    Tips and tricks for making sorrel pies

    • The dough for pies should be soft, elastic and easy to handle.
    • To keep the pies soft and airy, we do not recommend beating eggs into the dough .
    • I advise you to introduce flour into the liquid mixture gradually, kneading the dough well.
    • Before frying the pies, you need to heat the sunflower oil well in a frying pan.

    What is the secret of the juicy and tasty filling? And the secret is very simple. To make the filling for sorrel pies juicy, you need to add a little sugar to the chopped sorrel. Please note that the weight of flour indicated in the recipe is approximate.

    Recipe for making pies with sorrel from yeast dough

    1. We prepare all the ingredients. Let's prepare the dough.

    2. Take a container, pour dry yeast, 2 tablespoons of sugar into it and sift three tablespoons of flour.

    3. Add 100-120 ml of warm water to the dry ingredients and mix well. Then cover the dough with a towel and place it in a warm place.

    4. Pour a tablespoon of salt into a deep container and add three raw eggs. Beat the eggs until smooth.

    5. Pour 0.6 liters of kefir into the resulting egg mixture and mix well.

    6. The dough has already risen, add it to the mass and mix again.

    7. Pour in 6 cups of sifted flour. We begin to knead the yeast dough.

    8. Knead the dough well by hand and add 3-3.5 tablespoons of sunflower oil.

    9. Once again thoroughly knead the dough with butter. Cover with a kitchen towel and place in a warm place for 35-45 minutes.

    10. Now you need to lower it and beat it thoroughly so that the pies are fluffy.

    11. Place in a warm place for half an hour.

    12. Preparing sorrel filling for pies. We sort out the sorrel, wash it well and cut it into small strips, crush it a little.

    13. We are preparing the place where we will make pies. Sprinkle the table with flour and lay out the dough.

    14. Knead the dough with flour and form it into small balls.

    15. Roll out the resulting balls with a rolling pin or knead with your hand into small cakes.

    16. Pour one teaspoon of sugar, add a pinch of sorrel and pinch the edges. We do this with all the dough.

    17. Pour 100-120 grams of sunflower oil into a frying pan, heat it well and carefully lay out the pies.

    18. Fry for approximately three minutes on each side.

    The simplest option for preparing baked goods with sorrel is jellied pie. Kefir can be replaced with another fermented milk product - sour cream. But then the baked goods will turn out heavier and not as tender.

    1. If you want a hearty dish, add a boiled egg to the greens
    2. Beat salt with eggs and kefir
    3. Pour vegetable oil (2-3 tablespoons) into a homogeneous mass, and then flour (2 cups) in portions.
    4. Leave the finished dough for 15 minutes in a warm place
    5. Pour half the mass into the silicone mold and distribute the chopped greens (3 handfuls)
    6. It needs to be pressed into the dough so that the filling is distributed throughout the entire volume.

    The jellied pie gets its name from the batter that is simply poured into the mold. This is the easiest way to prepare delicious baked goods. The only secret is the correct distribution of the filling inside such a dessert. A heavy filling will itself “sink” in the dough, while a light filling will need to be “sunk” on its own.

    Recipe for sorrel and egg pie

    1. Break one egg into a deep container, add 125-130 grams of natural yogurt, half a teaspoon of ground coriander, one teaspoon of salt and mix all the ingredients well.

    2. Add 45-50 grams of rice flour to the resulting mixture and mix thoroughly again.

    3. Then add another 45-55 grams of rye flour. Mix again.

    4. Finely chop the washed and prepared sorrel.

    5. Cut the onion into small cubes.

    6. Preparing sorrel filling for pies. Saute the sorrel in a frying pan, place it in a deep plate and mix with chopped onions.

    7. Add two raw eggs, one teaspoon of salt, mix thoroughly.

    8. Then take a silicone mold and put ½ of the dough into it, distributing it evenly throughout the entire mold.
