Gingerbread cookies with kefir “Aromatic”

Fragrant homemade gingerbread cookies. A great addition to morning tea, or an afternoon snack. They remain soft for a long time. Try them and they won't disappoint you.

Ingredients:

  • Kefir – 0.5 l
  • Chicken egg (yolks for dough, whites for glaze) - 3 pcs.
  • Sugar (2 for dough, 1 for glaze) - 3 cups.
  • Vegetable oil - 3 tbsp. l.
  • Wheat flour / Flour (depend on your flour, how much you will need, this is an approximate amount) - 700 g
  • Spices (gingerbread spices to your taste, I used a mixture of cinnamon, cardamom, nutmeg, ginger and cloves in equal proportions) - 2 tsp.
  • Baking powder (TM Dr. Oetker) - 2 tsp.
  • Confectionery sprinkles (TM Dr. Oetker)

Cooking time: 120 minutes

Recipe:

Mix kefir with sugar, egg yolks, vegetable oil. (I prepared gingerbread for 2 servings, so there are more products in the photo than indicated.)

Then add some flour so that the dough has the consistency of thick sour cream. Leave it for an hour at room temperature.

For further preparation of gingerbread we will use baking powder TM Dr. Oetker

Add baking powder and gingerbread spices to the dough, mix well and add the rest of the flour to knead the dough, it should not be hard, soft and not stick to your hands.

Roll out the dough into a layer 3 cm thick and cut out gingerbread cookies using a notch.

Bake gingerbread cookies in the oven on a greased baking sheet at 180 degrees for 20-30 minutes.

Let the browned gingerbreads cool.

Let's prepare the glaze. Chilled egg whites should be beaten until stiff peaks form, then sugar should be added in small portions and beaten until it is completely dissolved. The finished glaze should be smooth and shiny.

Using a pastry brush, coat the gingerbread with glaze.

Leave the gingerbread cookies on the board for 3-4 hours to allow the glaze to dry.

Sprinkle the gingerbread cookies immediately, before the glaze dries.

It is difficult to find a more popular and beloved pastry than gingerbread. The history of this wonderful dish goes back centuries. So, we offer you soft gingerbread cookies made with kefir, quickly and deliciously.

For Soft Gingerbread with Kefir you need the following products:

  • 500 ml kefir
  • 400 grams of sugar
  • 4 eggs
  • teaspoon of soda
  • 2-3 tbsp. tablespoons vegetable oil
  • flour (how much will our dough take)
  • salt - on the tip of a knife

Products for glaze:

  • 2 egg whites
  • 200 grams of sugar

Soft gingerbread cookies with kefir (quick, tasty): recipe

Add two hundred grams of granulated sugar to kefir, mix thoroughly, beat in two chicken eggs, extinguish baking soda, add to kefir, pour sunflower oil. Mix everything thoroughly, knead the gingerbread dough, gradually adding wheat flour, until it becomes thick sour cream.

Then, on a flat surface sprinkled with wheat flour, roll out a layer as thick as a finger. We cut out gingerbread cookies using special molds. If there are no molds, take a glass.

Preheat the oven to 180 degrees. Grease a baking tray with oil, place gingerbread cookies on it, and bake for half an hour.

Prepare the glaze: separate the two whites from the yolks. Then beat the whites with two hundred grams of granulated sugar until a stiff foam forms. Ten minutes before the end of baking, pour the glaze over the hot gingerbread cookies. After the glaze hardens, our gingerbread cookies are ready.

Products for Soft gingerbread with kefir:

  • half a liter of kefir
  • 2 cups (or to taste) sugar
  • 4 chicken eggs
  • 7 tbsp. tablespoons vegetable oil
  • teaspoon of soda
  • 1 kg flour
  • 2-3 tbsp. spoons of cocoa powder
  • 1.5 tbsp. powdered sugar (or granulated sugar) for glaze

Method for preparing soft gingerbread with kefir:

Separate the whites from the yolks. Shake kefir (take at room temperature) slightly with a spoon, add soda, when the reaction starts, mix. Beat the yolks with sugar in a blender. Pour kefir into the yolks, add vegetable oil, mix.

Combine flour with cocoa powder, add portions to the liquid, knead into a loose dough. Let our dough rest for 7-10 minutes. Preheat the oven to 180 degrees. Cover the baking sheet with parchment.

Form gingerbread cookies from the dough and bake for about 20 minutes.

We prepare glaze from proteins and powdered sugar (or sugar) - just beat well. We take out our gingerbread cookies and cover them with glaze.

How to cook soft gingerbread cookies with kefir quickly and tasty (recipe No. 3)

Products for the test:

  • 500 grams of sugar
  • teaspoon of soda
  • 3 eggs
  • a pinch of salt
  • 500 ml kefir
  • teaspoon vinegar (9%)
  • 6 cups flour
  • 4 tablespoons vegetable oil

Products for glaze:

  • 200 grams of sugar
  • one egg

Cooking method:

Take a bowl, add chicken eggs, pour granulated sugar into them. Using a mixer or whisk, beat chicken eggs with granulated sugar until foam forms. Pour kefir into a separate bowl and beat in the same way. Quench 1 teaspoon of vinegar and add to kefir. Take salt and two tablespoons of vegetable oil with the tip of a knife. We add all this to the same mass. Whisk. Add kefir mass to the egg mass. Then mix everything thoroughly and beat again. Add wheat flour to the resulting mixture (gradually!), knead the elastic dough. Leave for ten minutes.

Then, using a rolling pin, roll out the dough about a centimeter thick. Using a regular glass or cutters, cut out round gingerbread cookies. Place the gingerbread cookies on a greased baking sheet (or use baking paper), also greased with oil. Place the baking sheet with gingerbread cookies in the oven, the temperature of which is 180 degrees. Bake for half an hour.

While the gingerbread cookies are baking in the oven, prepare the glaze. Take an egg, separate the white and pour granulated sugar into it. Whisk. Ten minutes before the gingerbreads are ready, remove the baking sheet and brush the gingerbreads with glaze. After ten minutes, remove the gingerbread from the oven and leave to cool for a while.

Add a spoonful of lemon juice to the soda. Mix everything. Add ground spices: ginger, cinnamon and cardamom. Gradually add flour and stir. The dough should be soft. Separate part of the dough and sprinkle generously with wheat flour so that it does not stick to your hands and the surface of the table. Knead and roll out the dough to a thickness of 7 mm. Cut out the gingerbread cookies using a mold. Place the pieces on a baking sheet covered with baking paper. Place in the oven. Bake gingerbread cookies at 180-190 degrees for about 18-20 minutes. Combine powdered sugar with lemon juice and mix. For 3 tablespoons of powder - a spoonful of juice. Cover some of the gingerbread with glaze. The second part is honey and lemon juice. Chocolate gingerbreads with kefir

Chocolate gingerbreads made with kefir are easy to prepare and turn out tasty and soft. You can add spices: ginger, cinnamon, cloves and nutmeg. This amount of dough makes about 22 gingerbread cookies. Excellent pastry for family tea, try it!

Ingredients

To prepare chocolate gingerbreads with kefir we will need: For the dough: 250 ml kefir with a fat content of 2.5% (or fatter); 450-500 g wheat flour; 200 g sugar; 100 ml odorless vegetable oil; 1 bag of vanilla sugar; 1 tsp. l. soda without top, quench with vinegar; 1 egg; 3 tbsp. l. cocoa (I have dark); a pinch of salt. For the top: powdered sugar.

Cooking steps

Beat a chicken egg into a bowl, add sugar and a pinch of salt.


Beat with a mixer until the mixture turns white (for 1 minute).


Add cocoa and continue beating with a mixer until smooth.


Add kefir, soda quenched with vinegar, vanilla sugar, vegetable oil and continue beating until smooth.


Add sifted flour little by little and mix thoroughly with a spoon. Add more flour and knead the dough. When the dough reaches the consistency of plasticine, it is ready.


The dough should be soft. It may take less or more flour.


Divide the dough into equal pieces (I got 55 gram pieces of dough), roll them into balls or roll out the dough into a layer 1-1.5 cm thick and cut out gingerbread cookies with a glass. Dip the balls on one side into powdered sugar.


Place the balls on a baking sheet greased with vegetable oil (or lined with parchment) so that the side with the powder is on top. Lightly press the balls with your palm.

Bake chocolate gingerbread cookies in a preheated oven at 180-200 degrees for 20-25 minutes (until lightly browned), use your oven as a guide. Here are the soft, tasty gingerbread cookies and they are ready.

To prepare soft honey gingerbreads, we will need:

  • Honey – 250 g
  • Eggs – 1 pc. and 3 yolks
  • Soda – 10 g
  • Powdered sugar – 150 g
  • Water – 200 ml
  • Juice of half a lemon and lemon zest
  • Flour – 700 g
  • Vanillin, anise, cinnamon, cloves, nutmeg - to taste

Preparation:

Pour hot water over the honey, stir and let cool. In another bowl you need to stir the egg, sugar, yolks, lemon juice and zest, vanillin, soda and beat it all until foam appears. Add dissolved honey and flour there. Knead the dough and let it rest for 5-6 hours.

Then knead the dough again, roll it out and cut out figures from it. Bake and brush the still hot gingerbreads with egg. Cooled gingerbread cookies can be decorated with powdered sugar whipped with egg white.
