Yeast dough is considered the classic base for pizza; admit it, you don’t always have the time and desire to tinker with it. However, for such cases there is an excellent option: kefir pizza dough without yeast, which is no worse than a traditional yeast base. And preparing it is faster and easier.

It mixes very quickly, literally in 10-15 minutes. Kneading requires a minimum of products. Not only fresh kefir is perfect for kneading, but also yesterday’s kefir, which you no longer want to drink. And you can always find a couple of eggs and vegetable oil in your supplies. In general, not dough, but a real find!

Any filling for pizza, based on kefir dough, is suitable - from meat and vegetable to dessert with fruit. The neutral taste of kefir dough goes well with any product. I had a pizza with meat, mushrooms, boiled smoked sausage, vegetables, chicken breast and cheese. The pizza base turns out golden brown, but not at all hard. Even a thinly rolled flatbread for the base does not become soggy from the juicy vegetable filling. From the specified amount ingredients, you get quite a lot of the finished product. You can use it all at once, and if this is not necessary, then the unused part can be stored in the freezer. After defrosting, kefir dough does not lose its taste.

The main feature of such a base is that it seems to “absorb” the filling and it ends up being half immersed in it. For preparation you will need:

  • 400 ml kefir,
  • 2 eggs,
  • 500 gr. flour,
  • 1 tsp. Sahara,
  • 0.5 tsp. salt,
  • 0.5. tsp soda

REFERENCE. From the specified amount of products one large pizza is obtained, the size of a standard baking sheet.

  1. Beat the eggs well with a mixer, add sugar and salt to them and beat again.
  2. In a separate bowl, combine kefir and soda. There is no need to quench soda with vinegar; fermented milk drink performs this function perfectly.
  3. Next, pour the eggs into the kefir and mix.
  4. Next, you need to gradually add flour in small portions, mixing thoroughly.
  5. The finished mass should be poured onto a baking sheet covered with parchment paper (if this is not done, the pizza will stick to the dish), in a layer no thicker than 1.5 cm.
  6. Place the filling and place in an oven preheated to 200 degrees for 20–25 minutes.

Yeast-free pizza dough, recipe:

  1. Beat the egg with salt and sugar.
  2. Add vegetable oil and sour milk, mix.
  3. Gradually add flour and knead the dough, first with a fork, and then, when the consistency becomes thick enough, with your hand. Try to add enough flour so that the dough does not turn out too tough, but still lags behind your hands normally.
  4. It would be a good idea to let the dough sit for 10-15 minutes, but if you already have everything ready for the filling, you can immediately stretch or roll out the dough on a greased baking sheet with a rolling pin.
  5. If the filling is supposed to be quite juicy, then to prevent the dough from softening under the filling, you must first grease it with a thin layer of olive or sunflower oil.
  6. You need to bake this dough for 20-25 minutes at 180 degrees, the main thing is not to overbake it so that it does not dry out. Although, if you like a brittle crunch, you can dry the pizza longer. It’s just that the color of the dough is quite pale, so it’s easy to fall into the illusion that it’s not ready yet.

This time I decided to make the filling with raw champignons and sausage, but the freshly bought mushrooms turned out to be very thick and juicy - they let a lot of juice on the baking sheet, I had to collect everything with a paper towel. And this happens, it doesn’t matter, the main thing is to catch it in time.

This base can be prepared in advance and put in the refrigerator or freezer, and at the right time you can take it out and quickly bake the treat. This volume of ingredients will make a large pizza the size of a large baking sheet or two small ones.

  • 150 ml kefir,
  • 1 egg
  • 500 gr. flour,
  • 1 tsp. Sahara,
  • 0.5 tsp. salt,
  • 0.5. tsp soda,
  • 50 ml olive or sunflower oil.

Using a whisk or mixer, mix the egg with kefir, then add the remaining dry ingredients and mix. Then pour in the oil in a thin stream, while stirring vigorously. Then add sifted flour little by little and knead until a smooth, homogeneous dough is obtained.

Using your hands or a rolling pin, carefully spread the mass into a layer no more than one and a half centimeters thick and place in the oven (about 200 degrees) for 10–15 minutes. Then take it out, brush it with sauce, add the filling and put it in the oven for another 15 minutes.

IMPORTANT! If you put the filling on raw dough, it will not bake.

How to prepare kefir dough:

Tip: kefir pizza dough will be more uniform and flexible if the kefir is warm.

Measure out the required amount of kefir and warm it to room temperature. You can heat it up in the microwave. Take a deep container and pour kefir into it.

Pour salt and sugar into kefir, mix, then add eggs.

Then add vegetable oil, /melted margarine or butter will also work/. Use whatever is in the refrigerator when you prepare the dish.

Stir into the kefir-egg mixture the butter, double-sifted flour, mixed with baking powder. The exact amount of flour depends on the fat content and thickness of the kefir, so add the flour in small portions.


First, mix it in with a whisk or spoon, then, when it becomes difficult to handle with utensils, transfer the mass to the work surface of the table, stir by hand, not forgetting to add flour. It is important not to “clog” with flour, otherwise the base will be hard after baking. As soon as the mass stops sticking to your hands, everything is ready.

The dough should be very soft. When rolling out the crusts for the pizza base, you will need flour to dust the table. We put it in a bag or bowl, cover it so that it doesn’t dry out while we prepare the filling. Then divide the batch into parts and roll out the cakes.

  1. For liquid dough, “Assorted” filler is suitable. First, tomato sauce with herbs is laid out, and on top in random order: smoked sausage, champignons, tomatoes, olives. All this is generously sprinkled with grated cheese (Mozzarella or Russian). Boiled meat, ham or sausages can be used as a meat component.
  2. Hawaiian pizza goes well with a thick base and will appeal to lovers of exotic combinations. For the sauce, you need to mix mayonnaise and sour cream in a 50:50 ratio with crushed or finely chopped garlic clove. Next: boiled chicken, chopped canned pineapples and olives. Bake in a frying pan

First, grease the bottom and sides of the dish with a thin layer of vegetable oil that has no aroma. Now heat the frying pan at moderate temperature and place the resulting creamy dough on its bottom.

Spread the filling on the surface of the raw dough. The more it is, the tastier it turns out in the end. Cover the filling with a layer of grated cheese. Fry the pizza, cover tightly with a lid. Cooking time is 10-15 minutes. The bottom of the finished product will become golden brown. The pizza itself in a frying pan without eggs will become more flexible after the specified time. The cheese on the surface will melt as it should.

  • Add a tablespoon of starch and mix.

Advice. As with any baked goods, sift the flour through a sieve to enrich it with oxygen. The consistency of the finished dough should resemble thick sour cream - slowly drain from a spoon.

  • Let the dough rest for 15-20 minutes .

Advice. This is necessary so that the gluten of the flour has time to swell. In this case, the dough will turn out fluffy.

  • Preparing the pizza filling.

Advice. Since the dough is subjected to minimal heat treatment, the filling should be chosen that does not require long baking.

  • Grease a cold frying pan with oil and lay out the dough.

Advice. It is better to use a frying pan that has a non-stick coating. The dough layer should be no more than 4-5 mm.

  • Thinly slice the chosen filling, then place it on the dough.

  • Grate the cheese on a coarse grater and sprinkle on the pizza.

  • Place the pan on low heat, cover with a lid and cook for 15-20 minutes.

Advice. The dish is ready when the layer of cheese is completely melted.

  • Let the pizza cool for 5-6 minutes and serve.
