Preparation

Preparing the filling for the pie with fish and rice

  1. Boil hard-boiled eggs, cool them in cold water, peel them and chop them into small cubes.

  2. We open the canned fish and drain the oil or brine into a separate container; we won’t need it. Place the fish from the cans onto a plate. Mash the fish pieces into a paste with a fork.

  3. Finely chop the green onions and place them in a plate with cooked rice.

  4. We also send the ground fish there. Mix everything well, add salt and pepper to taste. The pie filling is ready.

Preparing dough for fish pie

  1. Break the eggs into a deep bowl and beat lightly with a whisk or mixer. Add sour cream, mustard, and vegetable oil.

  2. Add baking powder and salt to the sifted flour and mix well. Gradually add the dry ingredient mixture to the egg mixture and beat until well combined. The consistency should be similar to pancake batter. If necessary, stir in flour.

Cooking fish pie with rice

  1. Turn on the oven to 180 degrees and leave to warm up.
  2. Line a lightly greased pan with parchment paper and pour two-thirds of the batter into the pan. Level the dough into shape.

  3. Carefully spread the filling onto the dough, without pressing or compacting.

  4. Pour the remaining dough on top and carefully level it again.

  5. Place the pan in the preheated oven to bake.

But I, a passionate fish lover, wondered if I should try making a pie with fresh fish? And then I remembered my aunt, from whom I recently tried fish pie in a slow cooker. She is an expert in all kinds of pies with filling and therefore gladly suggested one of her recipes to me.

Step 1: Prepare the filling.

Finely chop the onion and fry in vegetable oil, add minced meat, salt, pepper, mix and fry until tender.

Let's leave to cool.

Step 2: Let's do the dough.

Pour sour cream into a bowl, add eggs and mix well.

Add salt, sugar, baking powder, mix again.

Add flour in parts and knead the batter.

Step 3: Grate hard cheese and hard-boiled eggs.

Add cheese and eggs to the minced fish.

Step 4: Pour half the dough into a baking dish, distribute the filling, and cover with the remaining dough.

Decorate with sesame seeds if desired.

Step 5: Bake for 40-50 minutes at 180-200 degrees.

How to cook “Pie with salmon and rice”

If you have frozen dough, defrost it first. Meanwhile, fry the chopped onion in oil until translucent. Then add boiled rice, herbs, spices to taste, and lemon juice. Fry everything together for 3 minutes, maybe 5. Let's start assembling the pie: place parchment on a baking sheet. If the dough is in one piece, divide it into 2 parts. Roll out one part and place it on parchment. The first layer will be rice with onions and herbs. Leave some space around the edges: this is for gluing.

Cut the salmon into equal pieces and place evenly on top of the rice. If you wish, you can salt and pepper it.

Grate the boiled eggs on a coarse grater or simply chop finely. Sprinkle them over the salmon. Break the raw egg and stir, brush the edges of the dough with it. Roll out the other part of the dough, place it on top, gluing it tightly along the edges where it is coated with egg. You can make sides if you don’t trust this kind of gluing.

Brush the top with the remaining egg, make a couple of holes on the surface, put the pie in the oven for half an hour (or 35 minutes) at 200 degrees. Bake until a nice golden color appears.

You can serve the finished pie with salmon and rice with sour cream. It turns out very satisfying and juicy. Bon appetit!

Wash the greens and chop finely.

Mix rice and fish, add finely chopped herbs, salt and pepper and pour over the prepared sauce.

Mix the rice and fish thoroughly.
