I make a simple pie recipe using my garden sweet and sour apples. Although, you can also cook from store-bought ones. My apples are very crumbly, but it’s better to take it harder. It turns out delicious from the Semerenko and Grushovka varieties. How much sugar to add depends on the taste of the fruit. I add 170 grams. If the apples are sour, then the amount of sweetness can be increased to 200 grams.
Ingredients:
- 240 grams of flour (1.5 cups)
- 250 ml kefir (1 glass)
- 350-380 g apples
- 2 chicken eggs
- 170-200 g sugar
- 30 g sour cream (1 tbsp)
- 1.5 g vanillin
- 0.5 tsp soda
- a pinch of salt
- 2 tbsp. spoons of vegetable oil and + oil for greasing the mold
Preparation:
1. Remove all products from the refrigerator in advance and let them sit for 30 minutes.
2. Place the eggs in a bowl, add sugar and vanilla. You can use vanilla sugar or vanilla extract instead.
3. Beat the mixture with a mixer for 1-1.5 minutes. The speed should be average. The resulting mass will slightly increase in volume and become lighter in color.
4. Pour in kefir and sour cream. Mix everything again with a mixer until smooth for 30 seconds.
5. Sift flour and soda through a sieve and gradually, in three parts, add to the resulting mass. Use a mixer for this. Don't forget to add salt.
6. Leave the finished dough for 15-20 minutes so that the flour disperses. Then pour in the oil and mix the mixture one last time with a mixer.
7. While the dough is resting, chop the apples. We need very thin slices. Since the fruits I have are quite crumbly, I do not remove the skin from them. For hard apples with rough skin, it is better to peel them.
8. Grease a baking dish with butter and pour 1/3 of the dough onto the bottom. Then spread a layer of apples on its surface, thus creating a kind of “pillow”. All other pieces can simply be poured out. Then smooth them out.
9. Pour the remaining dough into the mold. Lightly shake the contents by hitting the pan on the table. This is necessary so that the dough penetrates between the apples.
10. Place in an oven preheated to 180 degrees for 30 minutes. Then, without opening the door, reduce the temperature to 160 degrees and bake for another 10 minutes until done.
In some ovens, charlotte is ready in just 30 minutes. But in my oven the middle remains damp. Therefore, I add another 10 minutes to the main time at a lower temperature so that the top does not brown too much.
11. Take out the finished cake and let it stand in the pan for 10 minutes. During this time, it will easily move away from the walls and can be taken out.
We eat the pie while it is still hot. It turns out very tasty! There is very little dough, there are practically only apples in it. At the same time, everything bakes perfectly. Charlotte does not fall off and remains fluffy.
