  • 100 grams of lemon jelly or gelatin (two leaves pre-soaked)

Preparation:

Biscuit

  1. Separate the whites from the yolks and beat until stiff and stable peaks form, gradually adding sugar. Then pour in the yolks one at a time, continuing to beat at medium speed with the mixer.
  2. Sift the dry ingredients through a sieve and combine with the egg mixture. Mix gently with a spatula from bottom to top. Pour the dough into a baking tray lined with parchment paper and bake in a preheated oven at 170 degrees for 30 minutes. After baking, let the cake cool completely.

Filling

  1. Grate the apples on a medium mesh grater, add sugar and simmer the apples over medium heat, stirring constantly until the consistency of a thick mousse. Turn off the heat and combine hot with squeezed gelatin or lemon jelly. Mix well.
  2. Cool the mixture and place on the biscuit.

Whipped cream

  1. Whip cold cream with sugar until stiff peaks form.

Royal apple pie or charlotte

  1. Place whipped cream on top of apple filling.
  2. Top with apple slices.
  3. Refrigerate for 30 minutes and serve.
