This dessert became well known both among street vendors and was present on the tables of wealthy citizens and even lavish royal celebrations. Today, homemade shortbread cookies are a constant favorite at tea parties. The baking recipe includes a basic set of products, which is supplemented with auxiliary ingredients to obtain the aroma and tenderness of the product.

So, to get the most delicious shortbread and curd cookies, you need to have:
- fresh butter - about 200 g;
- fine white sugar - 150 g;
- small chicken egg – 1 pc.;
- medium-fat dry cottage cheese - approximately 250 g;
- wheat flour - approximately 450-500 g;
- lemon zest - dessert spoon;
- baking powder or baking soda - 1 pinch.
Shortbread cookies with margarine

Product composition
- 360 g flour;
- 125 g margarine;

How to cook
- First you need to break an egg into a deep bowl, add sugar to it and beat well with a fork or whisk. The granulated sugar should dissolve, but there is no need to whip the products into a fluffy foam.
- In a separate bowl, you need to knead the margarine, add the egg-sugar mixture to it, and mix. The consistency should be similar to cottage cheese.
- Afterwards, add pre-sifted flour and soda to the mixture in portions and mix the base well. The dough needs to be kneaded gradually, adding flour if necessary. The result is a soft base that does not stick to your hands.
- The prepared dough must be divided into 2 parts, add vanilla sugar to one part and cocoa to the other.
- Each part should be mixed well. One sandy portion will come out with the smell of vanilla, and the other will have a chocolate color.
- Then you should roll out the layers up to 4 mm thick, and, using pastry molds, squeeze out the figures. If there are no molds, then you can use a glass. To get baked goods of two colors, you will need to place the rolled out layers along the edge one next to the other, roll the joint with a rolling pin and squeeze out the figures.
- The blanks need to be transferred to a baking sheet previously covered with parchment soaked in vegetable oil.
- The oven must first be heated to 180 ℃, and then you can send the cookies to bake. Cooking time is approximately 10-12 minutes.
Knead the curd dough
Before baking shortbread and curd cookies in the oven, you should knead a homogeneous dough. To do this, remove the butter from the refrigerator in advance and soften it thoroughly. Cooking fat is placed in a deep bowl, and then 100 g of white sugar, a small egg and dry cottage cheese of medium fat content are added to it.
Lemon zest is also added to the ingredients for a special taste. Finally, wheat flour and baking powder are sifted into a separate plate. After this, the resulting mixture is gradually poured into the curd mass and mixed thoroughly. The result is a homogeneous and soft dough that does not stick to your hands.

You can form shortbread curd cookies in different ways. We decided to make some kind of “kisses”. To do this, roll out the finished dough into a layer 5 mm thick, after sprinkling it with flour. Then the product is cut into circles with a diameter of 5 cm. To do this, it is recommended to use a special round or embossed pastry knife (you can use a regular glass).
After the products are cut out, they should be dipped one at a time in granulated sugar, then folded in four and pressed slightly with your finger (sugar side inward).

For those who love pears or apples, we suggest making a curd dessert with the addition of these fruits. At the end you will definitely get a tender and tasty delicacy that neither adults nor children will be able to refuse.
So, to prepare a simple dessert we will need:
- dense fatty cottage cheese – about 300 g;
- egg yolk – 1 pc.;
- soft pear and sweet apple - 1 pc.;
- granulated sugar - about 80 g;
- butter – approximately 50 g;
- wheat flour - approximately 3 large spoons;
- slaked soda – ½ dessert spoon;
- vanillin – add to taste.

- The dough must be placed in a bag and placed in the refrigerator for about 4 hours, or until the morning.
- Before starting work, the oven will need to be preheated to 180 ℃.
- Next, roll out the dough on the table, sprinkled with flour, to a thickness of 0.8 cm. Using a mold, you need to squeeze out the cookies. Dough scraps are also used in making cookies.
- Place the cookie dough on a baking sheet lined with parchment paper.
- Baking should be done for 15-20 minutes.

Preparing the base
The dough for such cookies is easy and simple to knead. First you need to put the fatty and dense cottage cheese in a large bowl, and then add the egg yolk, soft butter and white sugar to it. - 480 g flour;

Step-by-step preparation
- The butter must first be removed from the refrigerator so that it becomes soft, add the egg, sugar and grind into a homogeneous mass.
- Add salt to the mixture, quench the soda with vinegar and mix everything well.
- The flour must first be sifted so that there are no lumps later. All the flour is not used at once; you need to leave ½ cup. Next, the sifted flour should be added to the sugar and margarine, and the base should be mixed well (you can use a mixer). The finished dough should be elastic and not stick to your hands.
- The prepared dough should be divided into 2 unequal parts, one should be larger than the other (the larger part will be the base, and the smaller one will be used as decoration).
- To the smaller part you need to add the remaining flour and knead again until a homogeneous consistency is obtained.
- Then place parchment on the pan, place most of the dough on it and stretch it across the entire pan. A layer 15 mm thick should cover the mold completely.
- Afterwards, the base must be generously coated with jam (jam) so that after baking the filling can be felt and gives the dessert a pleasant aftertaste.
- At the next stage, you need to roll the second part of the base into a circle and grate it on a coarse grater (the grated dough is the same crumb). You need to sprinkle the crumbs on top of the jam.
- The oven must be heated to 200 ℃ and the cookies can be prepared, baking time is 25 minutes.
- When the base is ready, it needs to be cut into pieces, which will be cookies with jam and crumbs. Baked goods can be cut into any size and shape.
How to shape and bake correctly?
After preparing the dough, you should begin to form the products. To do this, pinch off a piece equal to two dessert spoons from the common base. Make a small ball out of it and flatten it slightly.

In addition to the main ingredients, various flavors, spices, fruits (dried, dried), chocolate can be added to the base, it all depends on taste and imagination.

- 200 ml mayonnaise;
- 200 g sugar in the dough + 50 g for sprinkling;

- 5 g baking soda;
- 25 g vinegar;
- 200 g butter;
- 400 g flour;

Step-by-step preparation
- Before preparing cookies, you first need to remove all the necessary ingredients from the refrigerator so that they warm up to room temperature.
- Then, in a deep bowl, combine the softened butter with mayonnaise, sugar, egg, cinnamon (vanillin), soda, slaked vinegar and beat the products well into a homogeneous mass without lumps, using a mixer.
- When the composition acquires the consistency of medium-thick sour cream, then you will need to gradually introduce the sifted flour, kneading the dough with your free hand. At first the base will fall apart into small pieces, but after that it should come out elastic and not stick to your hands.
- The dough must be rolled into a ball, wrapped in film and rested for 40 minutes. in the refrigerator.
- The oven should be preheated to 190 ℃, and the pan should be covered with parchment.
- Next, you will need to sprinkle the table with flour, lay out the infused base and roll out a layer about 7 mm thick so that the cookies come out crispy or up to 9 mm to get a delicate dessert.
- Using molds, you need to cut out the cookies, and then, using a kitchen metal spatula, transfer the blanks to a baking sheet and sprinkle with sugar. There should be a distance of 1-1.5 cm between each cookie.

- white flour - about 1.5 cups for the dough and 3 large spoons for the filling;
- white sugar - about 3 large spoons for the dough and the same amount for the filling;
- melted butter - 2 large spoons;
- medium-sized eggs - 3 pieces (1 - for the filling, 1 - for the dough, 1 - for greasing semi-finished products);
- thick sour cream - 7 large spoons;
- baking powder - dessert spoon;
- fine salt - a pinch;
- dry fat cottage cheese - 300 grams.

Cooking ingredients:
- Butter or margarine – 220 g
- Fat curd – 500-600 grams
- Flour - three, three and a half glasses
- A pinch of salt
- Baking powder packet (15 g)
- A packet of vanilla sugar (20-25 gr.)
- Granulated sugar - about a glass
- Sweet powder – 0.5 cups
- Cinnamon - teaspoon.
Cooking method
Mix flour, baking powder, grated butter together. Knead it all, preferably with your hands.
Add the curd product, knead a stiff, non-sticky dough. In this case, it is best to knead it for at least 10 minutes. Remember, the more moisture in the cottage cheese, the more flour you will need to use.
Let the lump of dough sit and freeze a little in the refrigerator; it’s best if it stays there for 24 hours.
Divide the finished mass into several parts, roll it out, cut into triangles. At the same time, know that the larger your triangle, the correspondingly larger your bagels will be.
Sprinkle each piece with sugar mixed with cinnamon; you can use any filling, the same cottage cheese or boiled condensed milk, jam. We roll up the bagels and send them to bake. As soon as the culinary masterpiece has arrived and browned, you can take out the treat.
