After spending a few minutes kneading the dough and a little time waiting from the oven, you will get a wonderful and healthy homemade dessert. Be sure to try it, I insist.

List of required ingredients:

  • Flour – 270-280 gr.
  • Raw egg – 1 pc.
  • A pinch of salt
  • Cottage cheese – 300 gr.
  • Butter – 150 gr.
  • Baking powder – 1 tsp.

Sprinkling:

  • Granulated sugar
  • Cinnamon, ginger, nutmeg and vanillin - to taste

Step-by-step cooking process:

Step 1. First of all, you should know that the ingredients for the recipe must be very cold. Namely, use butter, egg and cottage cheese straight from the refrigerator.

A soft, paste-like milk product is best suited for this recipe. Transfer it to a bowl. Add a pinch of salt and pour in the raw egg.

For any baked goods, even sweet ones, use a little salt. It works as a natural flavor enhancer.

Use a blender to turn everything into a homogeneous soft paste. If you don’t have such a kitchen chopper, you can first rub the cottage cheese through a sieve and then mix it with the egg.

Step 2. Sift the flour together with baking powder. Place it in a blender bowl. We also transfer the cold butter cut into cubes here. We chop it all to a fine crumb state. You can, of course, grate the butter and mix the ingredients with your hands.

Step 3. Now combine the loose crumbs with the curd mass. Quickly knead the dough. First we do this with a spatula, and then we move on to manual kneading.

Do not knead the dough for too long, otherwise the butter will begin to melt.

Step 4 . Wrap it in 2-3 layers of cling film and put it in the refrigerator for an hour.

Step 5. Meanwhile, prepare the filling. Pour about 5 tbsp into a bowl. l. granulated sugar. Add any aromatic ground spices to it. In this case, it's a little cinnamon, ginger and a pinch of nutmeg.

And mix everything well.

Step 6. For convenience, divide the chilled dough into two approximately equal halves. For now we cover one again with film, and continue with the second. Roll it out using a rolling pin into a layer approximately 3 millimeters thick.

In this case, the table and the mass on top will need to be dusted with flour.

Step 7. Cut out round pieces from this flatbread, approximately 8-9 cm in diameter. You can use a large glass or a lid from a jar (with mayonnaise, for example). There should be no flour on the dough - neither on the front side nor on the back.

Step 8. Now with each circle we proceed as follows. Roll it on one side in sprinkled sugar. We fold it with this side inward, in half. Then add another part in sugar and fold it again.

Don't glue the sides together too much. Otherwise, when baking, they will not open and the layering will not work. Then they will be harder inside too.

But if you don’t fasten them enough, they will open too much, which is also not part of our plans. The golden mean is important here.

The result is a triangle. We dip one side of it into the “filling” again, and leave the other untouched.

Step 9. Place our “ears” on a baking sheet with parchment, at a distance from each other, sugar side up.

Step 10. Send them to bake in a preheated oven to 190 degrees. We wait about 10-20 minutes until blush.

This is a classic recipe for cottage cheese cookies with a minimum set of ingredients. This delicious dessert will be soft and tender even the next day. The main thing is to choose a fatty, preferably homemade, dairy product.

You can prepare such a delicious dish very simply, without spending a lot of time and money. The dough is kneaded quickly, there is no need to knead it and stand for a long time. See detailed recipe below.

What we need:

  • Cottage cheese 5-9% fat – 250 gr.
  • Granulated sugar – 4 tbsp. l.
  • Egg yolk – 3 pcs.
  • Butter – 100 gr.
  • Baking powder – 1 tsp. l.
  • Flour – 230 gr.
  • Vanillin to taste

For lubrication:

  • Yolk – 1 pc.

For decoration:

  • Powdered sugar – 1 tbsp. l.

How to cook:

Transfer the cottage cheese into a bowl. Immediately add granulated sugar to it.

Grind the mixture with a fork until smooth. You can, of course, use a blender. But this is not at all necessary.

If you like your baked goods sweeter, you can increase the amount of sugar. From the declared volume, the cookies turn out moderately sweet.

Add egg yolks and softened butter to the resulting mass.

If desired, you can add vanillin. Mix everything until smooth.

Mix flour with baking powder. Sift this mixture through a sieve. Pour into the liquid part and knead the soft dough with your hands.

When everything comes together, dust the work surface with flour. We post the resulting com here. We form a short bar and divide it into 2 parts with a knife.

Roll each one in turn into a thin layer. While you are working with the first part, put the second in a bag so that it does not get windy.

Using any round mold, cut the layer into circles. In this case, their diameter is 7 centimeters. We remove the trimmings.

Fold each circle in half, pressing it in the center.

We bring the lower (or side) edges back and also press them against each other.

If you use a silicone mat for baking, you don’t have to lubricate it with anything. If you use parchment paper for this, it is better to oil it with vegetable oil.

We place the products here at a distance from each other. Brush the surface with raw egg yolk.

Heat the oven to 180 degrees. Place the baking sheet in the oven for 20-25 minutes. It is very important not to dry out the cookies. Otherwise, they will not turn out tender. As soon as they acquire a golden brown appearance, as in the photo below, we take them out of the oven.

In the case of preparing these curd cookies, curd mass will not work (otherwise you would have to select different proportions of the remaining ingredients to obtain the required dough consistency). Take 300 g of regular cottage cheese of any fat content (I use homemade one) and lightly mash it with a fork. My homemade cottage cheese turned out to be quite dense, so I had to “break it” a little.

Add two eggs and two tablespoons of sugar to the cottage cheese bowl. With so much sugar in the dough, the curd cookies turn out barely sweet, the sweetness is almost imperceptible. Lovers of sweet baked goods can add one (or even two) spoon of sugar more. Also add half a teaspoon of salt.

To speed up the process of kneading the curd dough for curd cookies, I decided to use an immersion blender. In a couple of minutes, I beat the cottage cheese with eggs and sugar, turning everything into a homogeneous mass.

Then add 100 g of slightly melted butter to the mixture. If you really want, you can replace the butter with margarine. It is the oil in the composition of this curd dough that gives the finished curd cookies such an interesting structure, flaky and porous. Well, to speed up the preparation of the dough, I continued kneading using an immersion blender.

The last ingredient for making cottage cheese cookie dough is flour. You will need exactly 250 g of it. We also add half a teaspoon of soda. First, use a fork and then use your hands to knead into a soft, homogeneous dough. To knead on the work surface, you will need another small handful of flour, thanks to which the dough will not stick and leave marks.

Roll the finished curd dough into a ball and place in the freezer for 15 minutes. Thanks to this manipulation, it will be easier to work with the curd dough.

Divide the slightly frozen curd dough into 2 parts. Cut 2 pieces of parchment equal to the size of the baking sheet. Place the first sheet of parchment on the table and lightly dust it with flour.

Place the first portion of dough on top of it, which we also lightly sprinkle with flour (just a little).

Using a rolling pin, roll out the dough into a layer, trying to give it the same thickness over the entire area and at the same time not go beyond the parchment.

We take sugar into a spoon or just a handful and spread it in an even layer on the surface of the dough. Two tablespoons of sugar will be enough to sprinkle each of the two parts of the dough. Then use a rolling pin to lightly press the sugar into the dough. Just run a rolling pin back and forth across the dough sheet and you'll be done.

Using a knife, cut the dough into squares (rectangles, diamonds). Carefully transfer the parchment sheet with the preparations onto a baking sheet. To make this task easier for yourself, simply turn the baking sheet upside down.

Place the baking sheet with the preparations in an oven preheated to 180 degrees. I used the baking mode, where the top and bottom are baked at the same time. Baking time – 15 minutes.

While the first batch of cookies is in the oven, we have 15 minutes to prepare the second batch. Everything is exactly the same: parchment - flour - dough - flour - roll out - sugar - roll over - cut.

Now the first 15 minutes have passed, the cookies are ready. It browned perfectly. Remove the baking sheet from the oven and carefully remove the parchment sheet along with the cookies. While the cottage cheese cookies with sugar are still hot, they are soft. As they cool, the cookies will become crispier and may settle a couple of millimeters.

Place the second baking sheet with cookies into the oven and bake again for 15 minutes.

Store the finished cottage cheese cookies with sugar for no longer than a week in a bag or tightly closed container. Although, giving such a recommendation, I clearly understand that by the end of the second day, if there is anything left from the curd cookies with sugar, it will only be crumbs :) Bon appetit!

Delicate curd dough and juicy melted sugar filling. Externally, the cookies resemble crow's feet, which is why they got their name. You can make this delicacy even with your kids. After all, kneading the dough and shaping the products is as easy as shelling pears.

In just a few minutes, a bowl of delicious cookies will appear on your table. Once you try them, you will fall in love forever.

List of ingredients:

  • Flour – 300 gr.
  • Butter – 200 gr.
  • Cottage cheese – 500 gr.
  • Salt - a pinch
  • Vanilla sugar – 1 sachet
  • Granulated sugar – 100 gr.

Cooking process:

The butter must be chilled. Sift flour into a bowl. We arm ourselves with a grater. Rub the butter into the same bowl, periodically rolling it in flour. This will make it easier to chop it.

Quickly, but carefully, with our hands we turn this union into a homogeneous crumb. If you do this for a long time, the butter will begin to melt from the warmth of your hands. And we don't need this.

Add a pinch of salt and add cottage cheese.

You can use any, but it is best to use bold. It will make baked goods juicier and, accordingly, tastier.

Rub everything again with your hands. In this case, the dough turns out, on the one hand, crumbly. But, if you compact everything into a lump, it holds its shape perfectly and does not fall apart.

Dust the work surface with flour. Place the resulting mass here and begin kneading with your hands. Depending on the fat content of the cottage cheese, different amounts of flour may be used for adding. Therefore, look at the facts. The main thing is not to overwhelm the mixture with it, so that the cookies don’t become tough later.

When everything comes together into a single ball, put it in a bag and put it in the refrigerator for 20 minutes.

For ease of rolling, take half of the dough first. For now we put the rest back into the bag and the refrigerator to wait in the wings.

Roll out the dough to about 2-3 mm thick. If necessary, you can sprinkle the table and rolling pin with flour. Using a mold or a round glass, cut out the blanks.

We remove the scraps - we will use them with the next batch.

In a separate bowl, mix vanillin in granulated sugar.

Line a baking sheet with parchment. If the paper is not siliconized, grease it with a small amount of vegetable oil.

We begin to shape future cookies. Take one circle of dough. Dip it on one side into a mixture of sugar and vanillin. We roll this side inward, then one side again into sugar and roll it again.

It turns out to be a triangle. Roll one side in sugar and place this side up on a baking sheet with parchment.

Roll into a small sausage. Using a knife, divide into 3 parts of approximately equal size.

Roll out each piece of dough with a rolling pin into a flat cake, about 3-4 mm thick.

Mix granulated sugar with vanilla in a separate bowl.

Sprinkle the first rolled out cake with sugar (1 tbsp mixture).

Cover it with the second rolled out layer and sprinkle it with the same amount of sand.

Preparation:


Add sour cream and salt to the cottage cheese.

Add sugar, vanilla sugar, soda, slaked with vinegar here.

Mix everything thoroughly and add the sifted flour.

Knead a dense but soft, slightly sticky dough. That's all, then you can form the cookies.

Cookies can be formed into any shape. I formed small balls from the resulting curd dough. Place our future cookies on a baking sheet covered with parchment and bake in an oven preheated to 180 degrees for about 30-40 minutes (until golden brown). Cookies made from cottage cheese and sour cream are tender, airy and very tasty!
