0.5 kg flour; 200 gr. milk; 1 tsp. dry yeast; 70 gr. drain oils; 1 egg; half a tsp. salt and sugar;

For filling:

6 boiled eggs; 400 gr. green onions; 2/3 cup rast. oils; salt to taste.

Cooking method:

1. Prepare the dough by mixing yeast with sugar and warm milk in a bowl. When the yeast disperses, add 300 g. flour and, having mixed everything well, cover with a towel and place the dough in a warm place until it doubles in size.

2. When the dough rises, add salt mashed with the egg, 2 cups of flour and melted butter. After kneading the dough until it does not stick to your hands, cover it with a towel and place it in a warm place again to proof. At the same time, it should again increase by about 2 times.

3. To prepare the filling, finely chop the boiled eggs and green onions, then, after adding salt, mix them with vegetable oil and mix everything well again.

4. Having kneaded the dough again, roll it out into a rope and cut it into small pieces, which we roll into round or oval-shaped cakes. Place a spoonful of filling in the center of each flatbread and pinch the seam closed.

5. Fry our small pies in a large amount of oil, dipping them into boiling oil. Then remove with a slotted spoon, let the fat drain off, place on a dish and serve hot.

Step-by-step process for making pies with onions and eggs

First, I will introduce you to the traditional type of dough kneading. It is usually made with milk and yeast. Well, the filling is outrageously simple.

And don’t forget to sift the flour through a sieve.

Ingredients:

  • Dry yeast - 10 g;
  • Salt - 1 teaspoon;
  • Sugar - 1 tbsp. spoon;
  • Milk - 1 tbsp;
  • Butter - 180 gr.;
  • Flour - 4 tbsp;
  • Yolk - 1 pc. (for lubrication);
  • Boiled egg - 6 pcs.;
  • Green onions - 1 bunch;
  • Vegetable oil - 3 tbsp. spoons;
  • Salt, pepper - to taste.

Cooking method:

1. Remove the milk from the refrigerator in advance and warm it to room temperature. Take a deep bowl, pour milk and add yeast and sugar. Mix everything well. Wait until the yeast is completely dissolved.

2. Melt the butter in a water bath, cool slightly and add to the milk mixture. Mix everything again.

3. Now gradually add the sifted flour and knead into a soft dough. Cover the finished mixture with a towel and leave it alone for 20 minutes.

4. At this time, start preparing the filling. Boil the eggs hard in advance, cool and peel them. Wash and dry the onion. Cut everything into small cubes.

5. Combine the chopped products, salt and pepper. Add a little vegetable oil and mix everything.

6. Divide the rested dough into equal pieces and roll them into balls.

7. Mash each piece with your hands to form a flat cake. Place the filling in the middle and pinch the edges.

8. Preheat the oven to 200 degrees. Take a baking sheet and line it with parchment paper. Place your products with the pinched side down, and brush the top side with beaten yolk.

  2. For the filling, simmer chopped green onions in butter for 1-2 minutes, then mix with chopped eggs and mayonnaise.
  3. Divide the dough into pieces, roll out into flat cakes, add filling, form into pies, turn seam side down and press lightly to make them flat.
  4. Fry on both sides in a frying pan in hot oil.

Recipe 3: Egg pies made from straight yeast dough

This dish is a godsend for housewives who don’t like to fuss with pies and prepare complex dough. To prepare this most delicate dough, you don’t need any dough; it’s very easy to prepare. It also does not require milk or eggs, so with a minimum set of ingredients you can prepare very tasty and satisfying pies.

1 kg flour; 500 grams of water; 30 gr. fresh yeast; 50 gr. Sahara; 70 gr. rast. oils; 1 tsp. salt;

For filling:

10 eggs; 100 gr. smoked meat; 7o gr. cream salt to taste.

1. Dissolve yeast in warm water, then stir sugar, salt and sunflower oil in it, add flour, gradually mixing it into the mixture to form a lump-free batter.

2. Cover the dough with a clean towel and leave it in a warm place for an hour.

3. To prepare the filling, peel the hard-boiled eggs and cut them finely or chop them using a coarse grater.

4. Finely chop the smoked meat, mix it with prepared eggs and cream to make the filling juicy, then add salt to taste.

5. Carefully place the dough on a board sprinkled with flour, which should turn out soft and very pliable. No need to knead it.

6. Having made a roll out of the dough, cut it into pieces, quite large, and dip each one in flour. Then we make flatbreads out of them. Since the dough is very soft, this can be done without even rolling it out, but simply stretching it with your hands. Then place a spoonful of filling in the center of each cake and, pinching the edges, form a pie.

7. Fry our yeast pies in a small amount of vegetable oil, either covered or without. Serve the finished pies with broth or as a separate dish.

Recipe for pies with green onions and choux pastry eggs

  • Cooking time: 50 minutes.

  8. When the brewed flour has cooled a little, we can knead the dough. Add the diluted yeast to the cooled mixture and mix everything until smooth.
  9. Next, sift the flour into the dough. Add it in parts so that the dough is not very dense. In total you will need about a kilogram of flour.
  10. Knead the dough until smooth.
    It should be a little sticky and soft. To make it easier for you to work with the dough, grease your hands and work surface with vegetable oil.
  11. Divide the dough into 16-18 parts.
  12. From each part we make a flat cake. You can do this by hand, as the dough is very soft and pliable.

  13. Place a little filling in the center of each layer, and then pinch the opposite edges of the dough, giving it a pie shape. Press the finished pie slightly onto the surface so that it is flatter.
  14. We form pies from the remaining dough in the same way.
  15. Heat vegetable oil in a frying pan and then place the pies there.

4. Knead the risen dough and, dividing it into small pieces, roll them into flat cakes. Place the egg-rice filling in the center of each and tightly seal the edges to form pies.

  • 5 boiled eggs (I used medium size)
  • 20-30 grams of butter
  • salt and ground black pepper to taste

From this amount of ingredients you get a bowl of filling, just enough for all the pies.

Green onions can be used fresh or frozen. I never freeze. Do you know why? Because it is available all year round, today, it is sold in the market, in stores, in supermarkets.

I washed the onion and chopped it. Everything is very simple.

I boiled the eggs hard. Homemade or store-bought, it doesn’t matter. I like homemade ones, but they are expensive now, I bought them at the store.

Advice! To diversify the taste of the filling, add boiled rice to it.
