  • flour – 350 g;
  • salt – 5 g;
  • sugar – 10 g;
  • baking powder – 30 g;
  • potatoes – 6 pcs.;
  • onion – 1 pc.;
  • vegetable oil.

Preparation:

  1. Add baking powder, salt and sugar to milk. Mix thoroughly.
  2. Add eggs and mix.
  3. Add flour to the liquid base in small portions. Knead the baking dough, cover and leave to rise.
  4. Boil the potatoes, mash until pureed and mix with the fried onion. Add spices.
  5. Knead the dough again, divide into parts and form flour products.

At the final stage, place the workpiece in a heated frying pan with oil and fry.

Preparation

  1. Let's start with the filling first because, surprisingly, it takes a little longer to prepare than the dough. Peel the potatoes, cut into medium slices, and chop the celery too. Boil vegetables in salted water until fully cooked.
  2. Meanwhile, finely chop the onion. Fry in vegetable oil over moderate heat until softened and golden brown.
  3. Now the dough. Start making it when the potatoes are already “on the way”
    . So, in a deep bowl, mix the flour with a pinch of salt. In a separate small bowl, combine yeast, sugar and 100 ml of warm water. Stir this mixture with a fork and leave for 10 minutes. The yeast is activated with sugar and water, and foam will appear on the surface of the liquid.

  4. Prepare boiling water. After 10 minutes, add 1.5 tablespoons of vegetable oil to the yeast liquid and stir again with a fork. Now this mixture needs to be poured into a bowl of flour. And then pour in 100 ml of boiling water. First mix the dough with a wooden spatula, then start kneading with your hands. The dough is very pleasant to the touch, warm and warms your hands due to the hot water. Knead it for 5-6 minutes until you get a homogeneous consistency. Roll the dough into a ball. That’s the whole secret, the dough is ready and you don’t need to do anything else with it. No need to wait for it to rise, it's already fluffy and waiting for you to use it!

  5. Meanwhile, the potatoes and celery are cooked, drain the water and puree the vegetables. You can also add a little milk or sour cream if you have it in the refrigerator. Add fried onions, black pepper if required, add a little salt and stir. The filling is ready.

  6. Divide the dough into 2 equal parts. Roll each part into a sausage about 12 cm long and about 4 cm thick. Divide each sausage into 7-8 equal parts with a knife. Roll into balls. Roll each ball into a pancake.
  7. Place a tablespoon of filling in the middle of the pancake.

  8. Press the opposite edges of the dough together as if you were making a dumpling.

  9. Then turn the future pie over to the other side and flatten it a little. Place the pies on a floured surface until all are molded.
  10. Heat a shallow frying pan with vegetable oil. Prepare a deep bowl with several paper towels or napkins at the bottom to absorb excess oil. Place several pies at a time in a preheated frying pan and fry over moderate heat for 2-3 minutes on each side.

  11. Remove the finished pies and place them in a bowl on a napkin. I wish you a pleasant tea party with delicious pies from your childhood!
