Fried pies are very good as a light snack. Today I will tell you a recipe for making cabbage pies in a frying pan.
Option 1: Classic recipe for fried pies with cabbage in a frying pan
Recipe for classic fried pies with cabbage made from yeast dough and water. It is advisable for him to stand for 2.5 hours, if time is short, then at least 1.5. During this time, the yeast will begin to work, the mass will rise, and the pies will turn out fluffy and airy.
Ingredients
- 700 g flour;
- 350 g water;
- 600 g cabbage;
- 200 ml oil;
- 100 g carrots;
- 10 g yeast;
- 25 g sugar;
- salt;
- 100 g of onion.
Step-by-step recipe for classic fried pies
Measure out the recipe amount of water, heat it, and make a dough out of it. Mix sugar and yeast, add 250 grams of flour. It should be a chatterbox. Leave for half an hour.
Add a teaspoon of fine salt to the mash, stir, add 70 ml of vegetable oil, leave the rest for frying and filling. Add more flour and knead. Keep the dough warm for a couple of hours. It will rise well.
While the dough rests, you need to not only fry the cabbage, but also cool it. Pour 30 g of oil into a large frying pan and let it heat up. Throw in the onions and carrots, and then the shredded cabbage. Fry, season with spices. Cool to room temperature; do not use warm filling in the pies.
We take out our dough, divide it into 80 gram pieces, but do not rush to roll it out. If they lie down for a little while, literally five minutes, this will be much easier to do. If desired, make larger pies, then divide the dough into 100-120 grams.
Place the cabbage filling on the rolled out flatbreads and make pies.
Heat the oil, place the pies seam side down, and flatten them a little. Fry on both sides.
When cutting the dough, sprinkle the table with flour, but it is better not to do this. The grains will fall into the oil, burn, the fat will quickly darken, and smoke will appear. It is better to use vegetable oil for cutting. You can lightly grease the countertop or simply wet your hands.

Chop the onion, fry a little in oil, add shredded white cabbage to the vegetable. Fry together until almost soft, add any spices to the filling at your discretion. Let cool.
Add a third of a teaspoon of butter, sugar to the eggs, beat, add kefir. Stir and add a full spoon of soda. It must go out. As soon as the reaction passes, add vegetable oil, mix, add flour. It should take about three and a half glasses if the kefir is of medium consistency. If necessary, increase the quantity.
It is advisable to let the kneaded dough rest for about fifteen minutes. Then we divide it into pieces and roll it out with a rolling pin. If the mass begins to stick, then dust the dough with flour. Lay out the cabbage and connect the edges of the flatbreads. We make all the pies.
Step 4: Heat the oil, add and fry the cabbage pies until golden brown over medium heat.
You can use sauerkraut for the filling. It also needs to be fried in a frying pan and cooled.
Recipe for pies with cabbage made from kefir dough without yeast
And now we present to you pies made from kefir dough without yeast and without eggs. These are pies from the “guests will be here soon” series. They turn out not just fluffy, but downright plump, airy, tender and super tasty. In addition, such a dough, unlike yeast dough, does not need to be allowed to rise for an hour.
Put on your aprons and let's go!
For the test we will need:
- kefir at room temperature - 350 ml;
- salt - 1 tsp. without slide;
- sugar - 1 tsp. with a slide;
- soda - 1 tsp. without slide;
- vegetable oil - 4 tbsp. l.;
- flour - 500 g, but maybe a little more.
How to make pies with cabbage from kefir dough
1. Salt the kefir, add sugar and stir. To ensure that the kefir is at the desired temperature, heat it in the microwave for 10 seconds.
2. Pour baking soda into the flour.
3. Pour the liquid mixture into the flour.
4. Oil there too.
5. Knead until the dough stops sticking to your hands.
6. Place the dough in a bag to rest while we work on the filling.
7. When the filling is ready, divide the dough and roll it into balls of equal size.
8. Using a rolling pin, roll out flat cakes from the koloboks, put in the filling, and seal it.
The dough is soft, elastic, and molds very well.
9. Fry in enough oil. The fire is moderate.
10. Place on paper towels to drain excess oil.
As a filling we use finely chopped and stewed white cabbage. This will take about 20 minutes. Salt and pepper to taste. And at the very end we add one tablespoon of flour to thicken our filling.
This type of baking is quick, but nevertheless very tasty both hot and cold. But it’s better to serve, of course, piping hot!
Option 5: Fried pies with cabbage in a puff pastry pan
If you don’t want to make friends with the dough, then you can simply buy it in the store. Plus the simplest filling of fried cabbage and you get wonderful homemade pies. But it is important to mold them correctly so that nothing comes unglued.
Ingredients
- 500 g dough;
- fried cabbage (about 500-700 g);
- oil for frying.
How to cook
We unfold the dough layer, be sure to roll it with a rolling pin and cut it into 20 squares or rectangles. If you need large pies, you can increase the size.
We spread the filling, but only in half. Cover with the empty side so that the edges match. Take a fork and use your teeth to press the seams on all sides so that the dough sticks together and the juices of the filling do not leak out.
Place the pies in heated oil and fry. You can cook them in a dry frying pan, but then you need to cover it for a few minutes.
If the dough is dry, then before gluing the edges it is very advisable to moisten the edges with water or brush with egg. Otherwise, the seams will separate when frying.
Option 6: Fried pies with cabbage in a frying pan “like fluff”
Another recipe for pie dough with kefir, which turns out just “like fluff.” Additionally, you will need a little sour cream with a fat content of about 20%. The filling is made from cabbage with the addition of minced meat, but you can just make a vegetable version.
Ingredients
- 250 g kefir;
- 3 spoons of sour cream;
- 200 g minced meat;
- 20 ml butter into the dough;
- frying oil;
- 440 g flour;
- 500 g cabbage;
- spices;
- yolk;
- 7 g soda.
How to cook
It's better to start with the filling so that it has time to cool. Cut a medium-sized onion and sauté a little in oil. We immediately take a large frying pan. After a minute, add the cabbage. Fry for a few more minutes. As soon as the volume decreases, add the minced meat. Prepare the filling for 5-7 minutes, add spices and, if desired, season with tomato paste. Leave to cool while we make the dough.
Mix kefir with soda in a large bowl. Place the yolk, sour cream, salt in a small bowl, add a couple of pinches of sugar and stir until dissolved.
Combine all this with kefir, pour in a little oil, stir and add flour. Knead the soft dough and cover it with a napkin. Let it sit for a while until it reaches the desired state, 15-20 minutes is enough.
We make regular classic pies filled with cabbage and minced meat. We make the size at our discretion.
Heat some oil in a wide frying pan. We lay out the pies taking into account their increase. Fry until done.
When replacing soda with baking powder, the amount increases by at least 1.5 times, and it will need to be mixed with flour.
A delicious filling for pies made from sauerkraut or sauerkraut.
In the winter season, it is not so easy to find sufficiently juicy cabbage. We offer an alternative - use sauerkraut to make pies. Rest assured, this filling option is not very different from the classic one, and has its own interesting twist.
Ingredients:
- Sauerkraut (squeezed from brine) - 200-250 g;
- Onion - 1 pc.;
- Refined vegetable oil - 3 tbsp. l.
Cooking method:
- Heat the frying pan well and pour in vegetable oil. While it is heating, peel and wash the onions. Cut it into small cubes and send it to the frying pan.
- When the onion is fried, add the sauerkraut squeezed out of the brine. Simmer over low heat with the lid closed until excess liquid has completely evaporated. Stir occasionally to prevent burning. We determine readiness by what kind of filling you want in the end: some people like it soft, while others, on the contrary, like it crispy.
- Transfer the finished sauerkraut filling into a separate bowl, let it cool and continue preparing pies with such a tasty and unusual filling.
Option 7: Fried pies with cabbage in a frying pan
Recipe for pies made from yeast dough with milk. The filling for them is made from white cabbage; absolutely any kind of spices can be added to it.
Ingredients
- 350 ml milk;
- flour;
- 0.11 kg butter;
- lean oil for frying;
- 0.5 heads of cabbage;
- 2 tsp. yeast;
- a pair of onions;
- one carrot;
- spoon of sour cream;
- 15 g sugar;
- three eggs;
- spices.
How to cook
Start with butter. Melt it and let it cool. Combine milk and eggs, add salt and sugar, add yeast strictly according to the recipe and add a spoonful of sour cream. Shake everything thoroughly, only then add flour to the dough. Add as much as needed until you get a soft and smooth mass. We transfer it to a bowl with high sides, let it rise, then lower it and wait a second time.
The dough will sit for at least two hours. This time will be enough to prepare and cool the filling. Chop all the vegetables into strips and simply fry them together. We use a large frying pan or cauldron. Add any seasonings and spices.
From the dough that has risen for the second time and the cooled cabbage, we make small pies.
Pour about a centimeter of oil into a frying pan, heat it up and place the pies in it. They shouldn't touch. Fry until done.
If there is not enough milk, you can partially dilute it with water; this will not greatly affect the taste of the pies. You can also simply add a little dry milk or cream to the water and dilute sour cream, and everything will work out just fine.
With sauerkraut
Not only pies with fresh cabbage turn out delicious. It is quite acceptable to use pickled vegetables (370 g) as a filling for them. Also taken: onion, carrot, half a kilo of ready-made yeast dough, salt.
- The onion is finely chopped, the carrot is grated on a grater with medium mesh. Together, the vegetables are sautéed in a mixture of butter and vegetable oil.
- If the cabbage turns out to be too sour, you can rinse it with water.
- Next, the vegetable is added to the frying, together the ingredients are salted and stewed for another 3-4 minutes under a closed lid.
- All that remains is to roll out the dough, fill the pies with cabbage and fry in any fat.
These baked goods are a great addition to soup or broth.
