Ingredients:

  • Flour - 2 cups (360 g)
  • Kefir - 1 glass (250 ml)
  • Salt - 0.5 tsp.
  • Sugar - 1 tsp.
  • Soda - 0.5 tsp.
  • Vegetable oil - 3-4 tbsp.

The indicated quantity is enough to prepare 8-10 pies

Preparation:

1. Pour salt, sugar and soda into a bowl, mix and pour in kefir. Stir the kefir with a whisk for a couple of minutes or two until the soda quenching reaction begins (bubbles begin to form).

2. After this, we begin to add sifted flour to the bowl in portions without ceasing to stir. When the flour comes together and becomes thicker (this will take about half of the prepared flour), add 3 tablespoons of sunflower oil to it.

3. Mix everything again. Pour the remaining flour onto the table, place the dough from the bowl on it and continue kneading it on the table.

The main thing at this stage is not to exceed the amount of dough specified in the recipe. It should be soft and a little sticky

4. When all the dough is mixed in, wash your hands, grease them with vegetable oil and add a spoonful of oil to the dough. Knead it again so that the butter mixes in and makes the dough smooth and divide into 7-10 pieces.

Without yeast on milk

The dairy product can be of any fat content. You will need half a liter of it. You also need to prepare: 2 large tablespoons of vegetable oil, half a small one. spoons of granulated sugar, baking soda and rock salt, 850-870 g of flour.

  1. Milk that is not cold is salted and sweetened. Immediately pour soda into it and pour oil.
  2. Add a couple of spoons of flour to other products.
  3. The dough is mixed until it stops sticking to your fingers.

You can roll out the yeast-free base for pies right away, without giving it time to rest.

How to prepare dough for pies in the oven

And another recipe for kefir dough for baking pies in the oven. The main difference from the previous ones is the use of butter.

As you know, butter is a saturated animal fat and it is what gives the right rich aroma to baked goods. You cannot replace it with vegetable oil when cooking in the oven - it will turn out completely different

Ingredients:

  • Flour - 3.5 cups (cup-250ml)
  • Kefir – 1 glass (250ml)
  • Butter - 80 g
  • Salt - 1 tsp. no slide
  • Sugar - 1 tsp.
  • Soda - 1/2 tsp.

Preparation:

1. Add salt, sugar and soda to the sifted flour. Stir and then pour in kefir. When the flour acquires the consistency of dough, add softened butter and mix it until an elastic, smooth mass is obtained.

The butter should be 82% and it should soften after standing at room temperature. It is not recommended to melt it over a fire or in the microwave, otherwise you won’t get an elastic dough.

2. Actually, this is where the preparation of the dough ends, but I want to mention one more nuance regarding baking in the oven: before sending the pies to bake, they need to be brushed with beaten egg to create a golden crust.

Without yeast on kefir

From the listed number of ingredients you can prepare 9-10 large pies. For them you need: 230 g of wheat flour, a large chicken egg, 90 ml of kefir of any fat content, a large pinch of soda and the same amount of salt.

  1. Kefir is heated or simply removed from the cold in advance. Soda is poured into it. There is no need to extinguish it further. The reaction will occur due to the lactic acid contained in the liquid.
  2. Next, the egg is poured into the same container. The mass is salted and kneaded using a wide whisk.
  3. Add flour to other products in small portions. It is advisable to sift it a couple of times first.
  4. The amount of flour should be adjusted by eye. The finished mass should be soft and tender.
  5. The dough will gain gluten for 15-17 minutes at room temperature.

Only after “rest” can you sculpt the resulting mass into pies.

Baking in 5 minutes with milk without soda

If you want to prepare the dough without soda, then it is not necessary to use kefir in the recipe, since in this case the reaction of releasing carbon dioxide bubbles from the soda will not occur. But to make the dough airy, you will need to use baking powder.

Ingredients:

  • Flour - 2 cups (glass-250ml)
  • Milk - 2/3 cup - 80 ml
  • Baking powder - 2 tsp.
  • Vegetable oil - 3 tbsp.
  • Salt - 0.5 tsp.
  • Sugar - 1 tsp.

Preparation:

1. Combine all ingredients in one deep bowl and mix thoroughly.

2. When the flour turns into dough, continue kneading it with your hands until you get a smooth, slightly sticky mass.

And that’s it, you can make pies. It really takes no more than 5 minutes to prepare the dough.

Recipe for cooking with water (boiling water) with sunflower oil

Dough cooked in boiling water is called choux and has its own special pleasant taste. Its peculiarity is that such dough can be rolled out into very thin layers. Ideal for baking lovers watching calories.

Ingredients:

  • 1/2 cup vegetable oil
  • 1/2 cup hot water
  • 2.5 cups flour
  • 1 tsp baking powder
  • A pinch of salt

This recipe uses a 250 ml glass

Preparation:

1. Pour sunflower oil and boiling water into a deep bowl. The water should be very hot from a just boiled kettle. Add salt and mix.

2. Without waiting for it to cool, add the sifted flour and baking powder. We begin to knead the dough with a fork (so as not to burn ourselves).

3. When the flour is mixed in, place the dough on the table and continue kneading it with your hands.

4. Don’t be surprised that the dough turns out yellowish, that’s how it should be. When the dough is ready, put it in a plastic bag for 20 minutes to let it “rest.” After this you can roll it out.

Recipe for fried pies without yeast on kefir in a frying pan

  1. So, the countdown has begun. In the first 5 minutes we will make yeast-free dough for pies. It cooks extremely quickly and can be completed in less than 5 minutes (just mix all the ingredients and add flour). Let's cook it. To do this, pour kefir (or yogurt) into a container, beat in an egg, add salt and sugar.
  2. Lastly, add baking soda and mix all the ingredients to form a soft dough.
  3. If necessary, add as much flour as the dough takes.
  4. You need to work with yeast-free dough immediately after kneading. Let's do so. Now the next 5 minutes - during this time we must make the pies. I have an express version of making pies. Divide the dough into 2 parts and roll each of them into a flat cake up to 1 cm thick. It’s better not to roll it thinner than 1 cm, and there’s no need to roll it thicker either. 1 cm is ideal. Spread the filling evenly on the first flatbread at the same distance from each other.
  5. We cover our workpiece with a second flatbread and use a glass to cut out small circles-pies with filling inside. The edges of these pies will self-stick as you cut them out, so the entire prep process only takes a few minutes.
  6. And now the final five minutes. Place the yeast-free pies in a frying pan, adding enough vegetable oil for frying. Do not skimp on the butter and heat it well. We lower the workpieces into it. As soon as one side is browned, turn it over to the second. Did you get red from the second one? You can remove the first batch from the heat and send the second one to fry. In order to speed up the process, you can fry in two frying pans, and then you can do it not in a quarter of an hour, but even faster.
  7. Have you already made tea? The pies on yeast-free dough in a frying pan are already ready. Baked goods with a sweet filling can be sprinkled with powdered sugar, and those with a salty filling can be sprinkled with garlic dressing or sprinkled with fresh herbs.

And finally, another interesting recipe, which I can’t help but mention, since it’s one of my favorites. Sour cream is guaranteed to make the dough airy and tender.

Ingredients:

  • Flour - 2.5 cups
  • Sour cream - 1 glass
  • Egg - 1 pc.
  • Water - 0.5 cups
  • Vegetable oil - 2 tbsp.
  • Soda - (without a slide, do not extinguish) - 1 tsp.
  • Salt - 0.5 tsp.
  • Sugar - 1 tsp.

This recipe uses a 200 ml glass

Preparation:

1. In a deep bowl, mix sugar, salt, egg, sour cream and water at room temperature.

2. Mix flour with soda (mix well), sift and add to the bowl. Knead the dough first in a bowl and then on a floured table. If necessary, you can add flour to prevent the dough from being sticky, but no more than half a glass.

The dough should be soft and pliable. That is, there is no need to achieve elasticity and smoothness.

That's all, you can start frying the pies.

Tip: if you are making pies on a table sprinkled with flour, then before sending them to the frying pan, knock the flour off the pies by lightly tapping your palm so that it does not burn in ugly black spots

Yeast-free dough with milk

This dough is good for making fried pies. They turn out tender, fluffy and very fragrant.

Ingredients

  • 200 ml milk;
  • 1 egg;
  • 1 teaspoon salt;
  • 200 g butter;
  • 500 g of premium flour.

Preparation

Heat the milk to 40°C. Beat the egg with a whisk and mix it with milk, add salt. Remove the butter from the refrigerator and, while it is hard, grate it on a fine grater. Combine the butter shavings with the egg-milk mixture.

Sift the flour and add it to the dough in three stages. After adding each third of the flour, mix everything thoroughly. This will prevent lumps from forming.

Knead the dough, wrap it tightly in cling film and put it in the refrigerator for 30 minutes.

Step-by-step preparation

  1. Beat three eggs into a deep bowl. Add to them 50 g of sugar, a pinch of salt, 10-12 g of baking powder, mix everything well. Instead of baking powder, you can add half a teaspoon of soda slaked with vinegar.

  2. Melt 200 g of butter or margarine for baking in a water bath or in the microwave, let cool slightly and pour over the eggs. Mix everything well. It is better to use high-quality margarine or butter; the taste of the finished baked goods will directly depend on this.

  3. Add 180 g of kefir or milk at room temperature. The fat content of milk or kefir can be any. The main thing is that it is fresh and you like the taste.

  4. Sift 600 g of flour into a separate bowl and gradually add to the liquid mass. We recommend sifting the flour 2-3 times so that it is well saturated with oxygen. Of course, for this dough the flour must be of the highest quality so that the finished mass does not float and has a good color.

  5. Mix the dough first with a spoon or whisk. If you have a food processor, you can use it to knead. Then sprinkle the work surface with flour and knead the dough with your hands for five minutes. The mass will become soft, pliable, elastic, and will not stick to your hands.

  6. After this, cover with a towel or cling film and let rest for half an hour. After this time we can form the pies. The filling can be used both savory and sweet. It can be sweet or green cottage cheese, meat, potatoes, cabbage, rice with egg, jam. To make pies with a sweet filling, add vanilla sugar to the dough. This will make the baked goods even more flavorful.

The pies can be fried or baked. For frying, use unrefined vegetable oil to eliminate unwanted aroma. To bake, sprinkle the pan with flour or grease it with unrefined butter to prevent the pies from sticking.

Serve the finished flour products with your favorite drink. For storage, use a container with a lid. And if you heat stale pies in the microwave, they turn out soft, as if they came straight from the oven.

Yeast-free kefir dough

Kefir dough is prepared very quickly and can be used immediately after kneading. It doesn't need to sit in the refrigerator or on the counter. Knead it and go straight to work!

Ingredients

  • 1 egg;
  • 400 ml kefir;
  • 500 g of premium flour;
  • 3 tablespoons vegetable oil;
  • 1 teaspoon salt;
  • 1 teaspoon of soda;
  • a few drops of vinegar (to extinguish the soda).

The higher the fat content of kefir, the more satisfying and dense the baked goods will be.

Preparation

Whisk the egg and kefir in a deep bowl. Add 3 tablespoons of flour, stir. Pour in vegetable oil and salt. Quench the soda with vinegar in a tablespoon and pour the sizzling mixture into the dough. Add the remaining flour.

Stir the dough with a spoon until it no longer sticks to the sides of the bowl. When the dough thickens, knead it well with your hands.

Recipe 1. Yeast-free kefir pies.

Ingredients for 12-14 pies:

  • 250 ml kefir;
  • 2.5 cups of flour with a volume of 250 ml (400 grams);
  • 1.5 tablespoons of vegetable oil;
  • 0.5 teaspoon salt;
  • 0.5 teaspoon of soda;
  • 1.5 teaspoons of sugar.

Preparation:

1. Mix kefir, salt, soda and sugar.

2. Add flour to the kefir mixture and stir the dough with a spoon.

3. Then add vegetable oil and knead with your hands until smooth.

4. Roll the dough into a ball and leave for 5-10 minutes.

5. Divide the dough into 10-14 equal parts. Roll each part or mash it with your fingers into a flat cake.

6. Place the filling in the center and pinch the edges.

7. Preheat the oven to 220 degrees. Grease a baking sheet with a thin layer of vegetable oil and sprinkle with flour.

8. Bake the pies in an oven preheated to 220 degrees for 25-30 minutes.

Yeast-free dough with sour cream

Thick sour cream dough is very soft and flexible, making it is a pleasure. But keep in mind that sour cream dough is very high in calories. Do not offer this treat to those on a diet.

Ingredients

  • 4 tablespoons of sour cream;
  • 2 eggs;
  • 100 ml water;
  • 400 g of premium flour;
  • ½ teaspoon salt.

As with kefir, the fattier the sour cream, the richer the dough.

Preparation

Mix sour cream, eggs and water in one bowl. Beat until smooth. Sift the flour into another bowl and add salt to it. Gradually, in several stages, add flour to the egg-sour cream mixture. Mix the egg, sour cream and salt in a deep bowl. Pour all the water into the egg mixture. Whisk the mixture until it becomes smooth. In several additions, add the flour into the resulting sour cream-egg emulsion.

Mix the dough with a spatula or large spoon until it reaches the desired thickness. Then place it on the table (sprinkle flour on the countertop first so that the dough does not stick) and start kneading with your hands.

Next, the dough needs to rest for at least ten minutes so that the gluten from the flour strengthens it well. The sour cream dough is ready. You can start making pies without yeast, fried in a frying pan.

Heat vegetable oil in a frying pan. There should be enough of it so that when frying our pies are half immersed. Place them in boiling oil and fry them like regular yeast products. Remove when the pies are ready.

Yeast-free vegan dough with water

Dessert and savory baked goods without eggs or dairy products are popular among vegans and vegetarians. However, everyone else may also like it, as it is suitable for preparing any dishes: pies, buns, pizzas and even dumplings.

Ingredients

  • 500 g of premium flour;
  • 200 ml warm water;
  • 3 tablespoons vegetable oil;
  • ½ teaspoon salt.

Preparation

Sift the flour into a bowl to form a mound. Make a well at the top and pour water and oil into it. Add some salt. Mix the mixture thoroughly with a spoon. When the dough becomes elastic and stops sticking, place it on the table with flour and knead with your hands. Wrap the dough in cling film and let it rest for an hour at room temperature. Then knead it well again.

To ensure that the finished vegan dough does not crumble and is fluffy, knead it for at least 5 minutes before cooking.
