Preparing the filling for meat pies

For pies, you can use any meat - beef, pork, lamb, rabbit or poultry. However, keep in mind that low-fat meats, such as beef, should be mixed with pork, otherwise the pies will turn out too dry. For juiciness, milk, butter, sour cream or whipped cream are added to the minced meat. The filling is made from raw, boiled or stewed meat, depending on the recipe; many housewives fry raw minced meat with onions and spices in a frying pan. Since raw meat in the dough does not have time to cook in the oven in 20 minutes, this filling is recommended to be used only when frying small pies in a large amount of oil. Liver pies are very tasty, and smoked meats and olives give the baked goods a piquant taste.

Other products are also added to the filling: vegetables, mushrooms, cheese, eggs, nuts, cereals, dried fruits, herbs and spices. Cereals make the filling more tender, while vegetables give it juiciness; the main thing is to make sure that there is still more meat in the pies, otherwise it will be difficult to call them meat.   • First boil the meat in salted water and spices. When it cools down, it is ground in a meat grinder.
  • Finely chopped onions are sauteed and sent to the meat.
  • The resulting minced meat is placed in a frying pan and fried a little.
  • For the dough, mix the remaining ingredients and knead it, it should not stick to your hands.

    They turn out no less tasty in a frying pan than in the oven, and they are much easier and faster to prepare.

    Ingredients:

    • a glass of whey;
    • 20 grams of yeast;
    • one onion;
    • 400 grams of beef;
    • 80 g rice;
    • 400 grams of flour;

    • 30 g sugar.

    How to cook meat pies in a frying pan:

  • First boil the meat in salted water.
  • Eggplant, onions, mushrooms are cut into small cubes and fried.
  • Mix fried vegetables and finely chopped meat, add spices and salt.
  • For the dough, mix all the products from the above list and knead the dough, wrap it in plastic and put it in the refrigerator for one hour.

  • How to cook meat pies:

    As mentioned above, pies are prepared using yeast dough. Everyone knows that yeast dough is almost always a long process, with preparation of dough, repeated proofing and fear of drafts. But, fortunately, not in our case! The fact is that to prepare meat pies we use early ripening dough, which will be ready for baking immediately after kneading.

    So, in a deep bowl, combine the sifted wheat flour, yeast, sugar and salt. Stir with a spatula to evenly distribute the ingredients. Collect the dry food mixture into a mound and make a well in the center. Pour in heated milk, vegetable oil, and beat in a chicken egg.

    Knead the above products into a soft and elastic dough. The dough should not stick to the work surface or your hands; add more flour if necessary.

    Immediately after preparation, it is ready for further work.

    To prepare the filling for meat pies, combine minced meat, finely chopped onion, add salt and spices. Stir, pour 3-4 tablespoons of cold water into the minced meat. With this simple technique we will achieve a juicier filling, and, in addition, it will remain loose and will not form a solid “lump” inside the pie.

    Divide the dough into equal pieces, give them a round shape and roll them into flat cakes about 0.5-0.8 cm thick. Place the filling in the middle of each flat cake. Seal the edges of the pie to form a triangle, the center of which remains open. Having molded some of the pies, cover them with a dry, clean napkin. While you are working on the rest, the first batch will “rise” and be ready to fry.

    Now pour vegetable oil into the frying pan, heat it and place the pies with the open “window” down. Fry until golden brown, then turn over to the other side and fry until cooked.

    Remove the meat pies from the pan onto a paper towel to remove excess oil. Transfer to a plate, let cool and taste!

    Ingredients:

    • Warm water - 350 ml
    • Dry yeast - 6 g
    • Sugar - 2 tsp.
    • Soy sauce - 1 tbsp.

  • In a deep plate, combine the dough, salt (10 g), granulated sugar, butter, flour, knead the dough and leave it in a warm place for one hour.

    Step 1 – dough. Pour 250 ml of water into the pan and bring to a boil. Turn off the heat and quickly add 350 grams of flour to make a choux pastry. Transfer the flour mixture to a deep plate; when it cools, pour in the remaining cool water, adding flour little by little and knead into a tight dough.

    Step 2 – filling. The meat is passed through a meat grinder, the same is done with zucchini and onions. Place in a bowl, add salt, pepper and add diced tomatoes, as well as finely chopped herbs.

    Step 3 – sculpting the pies. The dough is rolled out so that it becomes a tube. Cut into small pieces and roll each one out. Place minced meat in the middle and form patties. You can fry it.

    Pies with meat and nuts

    Ingredients:

    • ½ kg flour;
    • ¼ liter of water;
    • 20 g yeast;
    • 30 g sugar;
    • 400 g minced meat;
    • one onion;
    • 50 g chopped nuts (walnuts);
    • a little parsley.

    Cooking process:

  • Heat the water and add the yeast. After ten minutes, add granulated sugar, flour, salt (10 g), 30 grams of melted butter, knead the dough and leave it for 30 minutes.
  • In a separate plate, mix minced meat, nuts, chopped herbs, fried onions, salt and ground pepper.
  • The dough is cut into small pieces, each one is rolled out thinly, the filling is placed in the middle, pies are formed and fried.
  • Puff pastries with meat

    Since puff pastry is made in several versions, the pies come out different. If we use puff pastry without yeast, the baked goods will be very light and crispy, but pies made from puff pastry will be soft and heavier. The dish is easy to prepare - first we defrost 500 g of store-bought puff pastry, cut it into squares, lay out the filling, brush the edges of the squares with egg and glue the pies together. We get neat rectangles, which we bake for 20 minutes at a temperature of 180−220 °C.     For a tasty filling, fry the onion in a small amount of vegetable oil, add 350 g of beef and 350 g of minced pork and fry, stirring, until the meat juice has evaporated. The minced meat should be crumbly, well-fried and without lumps.
