  • 300 ml kefir;
  • 70 ml sour cream;

  • 1 tsp. quicklime soda;
  • 50 g sugar;
  • a pinch of fine salt.

For filling:

  • 0.5 tbsp. rice;;
  • 4 medium sized eggs;
  • 1 medium onion;
  • 5-6 green onions;
  • vegetable oil;
  • black pepper.

Step-by-step cooking process

  1. Place flour in a deep bowl, pour baking soda, salt and granulated sugar into it, mix everything;
  2. Next, you need to make a small hole in the middle of the dry ingredients and pour kefir into it, add sour cream and vegetable oil, mix everything with a spoon, then knead the dough by hand. It should be soft and elastic.
  3. The prepared dough must be covered with a towel or film and placed in a warm place for half an hour.
  4. During this time you need to make the filling. To do this, eggs should be hard-boiled, cooled, peeled and cut into cubes.

  5. Rice needs to be washed and boiled until tender, then put in a colander and rinsed.
  6. Next, you need to peel the onion and cut it into small pieces, fry in vegetable oil until tender.
  7. Then you need to wash the green onions and cut them into small rings.
  8. All filling components should be placed in a large container, pepper and mixed.
  9. After this, you need to sprinkle the table with flour, put the dough on it and divide it into 2 almost equal parts;
  10. Most of it needs to be rolled out into a rectangular or square layer, placed on a baking sheet, pre-greased, and spread out the filling, leaving free edges on all sides (3-4 cm).
  11. Next, you need to roll out the second part of the dough in the same way, using a rolling pin, transfer it to the surface of the filling and fasten it along the edges with the bottom layer of dough.
  12. The pie should be baked at 220˚C, preheating the oven in advance, for 35-40 minutes.

What can I add?

  • 120 g long grain rice;
  • 1 tbsp. l. unsalted butter;
  • 0.5 tbsp. l. olive oil;
  • 1 medium-sized onion, finely chopped;
  • 1 small clove of garlic, minced;
  • 500-750 ml vegetable or chicken broth;
  • a handful of fresh parsley, chopped;
  • black pepper.

Step-by-step cooking process

  1. Heat the butter and olive oil over low heat in a frying pan and fry the onion until translucent, about 2 minutes, then add the garlic and fry for another 30 seconds.
  2. After this, you need to put the rice in there, stir to coat it with oil, and continue stirring for 1 minute until it becomes slightly transparent.
  3. Next, add the broth, 2 scoops at a time, and cook until all the liquid has evaporated before adding the next 2 scoops. There is no need to constantly stir the contents of the pan, only after each addition of liquid.
  4. It is necessary to add broth until the rice is cooked to al dente stage, about 20-25 minutes, then turn off the heat, add pepper and mix with chopped parsley, leave to cool.
  5. Season the salmon with lemon juice, a pinch of salt and pepper and fry in a separate frying pan for about 5 minutes. on each side for 1 tsp. olive oil, then transfer to a plate and, using 2 forks, tear the fillet into pieces.
  6. Boiled eggs should be mashed with a fork in a large container, add dill, sour cream, a pinch of fine salt and a little pepper and mix thoroughly.
  7. Next, you need to roll out the dough on a lightly floured surface, trying to give it a square shape with sides about 36 cm long.

  8. Then you need to cut the dough into 2 parts, and one part should be larger than the other and leave for 5 minutes.
  9. A larger piece of dough should be placed on a lightly floured baking sheet and placed in the refrigerator.
  10. After this, you need to grease the second baking sheet with oil, put a smaller part of the dough on it and start laying out the filling in the following sequence: rice, salmon, eggs, salmon, rice, leaving 2.5 cm of free space around the edges.

  • 500 milliliters of kefir.
  • A teaspoon of soda.
  • A raw egg.
  • A pinch of salt and white flour (as much as the dough requires).

To get the filling you will additionally need:

  • 3 boiled eggs.
  • A few green onions.
  • A glass of boiled rice.
  • A little butter.
  • Boiled carrots.

First you need to prepare the dough, which will later turn into delicious pies. To create it, combine kefir and baking soda in one container. The resulting liquid is mixed with egg, salt and oxygenated flour.

From the finished dough, pinch off not too large pieces with your hands and flatten them. The resulting flatbreads are stuffed with a filling consisting of rice, chopped onions, chopped eggs, grated carrots and melted butter.   • 0.3 tbsp. rice (white long grain or brown);
  • 2 tbsp. (220 g) spinach leaves;
  • 0.5 tsp. sea ​​salt;
  • 0.25 tsp lemon pepper;
  • 1 tbsp. l. chopped garlic;
  • 0.6 tbsp. water;
  • 4 tbsp. l. freshly squeezed lemon juice;
  • 2 tbsp. l. fresh parsley, chopped;
  • 2 sheets of puff pastry;
  • 180-200 g salmon fillet, skinless and boneless;
  • 1 beaten raw egg plus 1 hard-boiled egg.

Step-by-step cooking process

  1. Heat the oil in a medium-sized frying pan and fry the onion until soft and translucent, add the rice and spinach and cook for another minute until the greens wilt.
  2. Then you need to put the garlic there and continue to fry until the aroma is intense (about 30 seconds), season with sea salt and lemon pepper.
  3. Next, you need to pour in water, boil, stirring occasionally to combine all the ingredients, turn the heat down to low, cover and simmer over low heat for another 12-15 minutes, or until the rice is cooked.
  4. After this, remove the pan from the heat and mix its contents with chopped boiled egg, lemon juice and parsley, set aside and let cool.
  5. The oven must be preheated to 210°C and a baking tray lined with baking paper.
  6. The dough sheets need to be cut in half to make 2 rectangles each.
  7. Starting at the narrower edge, spread out the rice, egg and spinach mixture, leaving a 2cm gap around the edges.
  8. Next, place the salmon fillets on top of the rice mixture and brush the empty edges of the dough with water, cover with the second sheets and seal the edges tightly with a fork.
  9. The pieces must be transferred to a prepared baking sheet, brushed with beaten egg and baked for 20-25 minutes, or until golden brown.

Process description

The first thing you need to do is rice. It is washed, filled with salt water and brought to readiness. While it is cooking, you can make the dough. To do this, mix pureed cottage cheese, two eggs, sugar, 100 grams of soft butter, salt, baking powder and oxygenated flour in one bowl.

Small pieces are plucked from the finished dough and flattened. Each flatbread is filled with a filling consisting of rice, chopped onions, three boiled crushed eggs and the remaining ghee. The edges of the products are carefully pinched so that they do not fall apart. The formed pies are brushed with beaten egg and placed in the oven.   1. It is necessary to first activate the yeast by mixing it with 1 tsp. flour and sugar and diluted with warm water until creamy. This mixture should be left for 15 minutes. During this time, the fermentation process will begin, and small bubbles will appear on the surface of the mass.
  2. Place salt and sugar in a large container, add eggs and warm water.
  3. Next, melt the butter until creamy and set aside.
  4. The flour must be sifted through a sieve to enrich it with oxygen.
  5. Next, you need to add flour to the liquid mass in small portions, then put the butter there and knead a homogeneous dough, put it in a deep container, sprinkle with flour and leave to rise in a warm place, stirring occasionally.
  6. During this time you need to prepare the filling. To do this, boil the rice in salted water, cook hard-boiled eggs and cut into cubes.

  7. Then you should mix the rice with the eggs, add salt and oil, mix everything until you obtain a homogeneous minced meat.
  8. When the dough has risen, you need to divide it into 2 parts and roll them into rectangular layers.
  9. One rectangle should be placed on a baking sheet covered with baking paper, spread the filling on it and cover with a second layer, sealing the edges tightly.

The pie dough for this recipe prepares very quickly, so you will need to knead it carefully, but without pauses. In a deep bowl, mix all the ingredients except flour, yeast and water. Try to bring the mass to homogeneity as quickly as possible. Then hot water is poured into this cream, 2 cups of flour are carefully poured in and yeast is poured on top. You need to add the ingredients in exactly this order, otherwise the dough will not rise. Start the second stage of mixing after adding water, flour and yeast in layers.

When the dough is elastic enough, cover it with a towel or napkin and leave it in a warm place.

At the stage of preparing rice for the filling, you do not need to salt it or add any spices; it is best to cook it in plain water. Finely chopped eggs and, if desired, green onions are added to the boiled rice. These three points will be enough to prepare the filling for the pies. All you need to do is simply mix the indicated products, add salt and your favorite spices.

After a couple of hours, when the dough has increased, you will need to knead it a little with your hands and leave it for the second stage of “rest” in a warm place. When the dough has risen a second time, you should start making pies.

For convenience, all the dough can be immediately divided into small lumps, which are rolled out not too thin into a flat cake.

You can prepare an open or closed version of pies with rice and egg. For a closed form, a spoonful of filling is immediately added to the rolled out dough, after which the edges must be pinched with your fingers.

And for open pies such as pies, two cuts are made on both sides of the filling in the flatbread.

The opposite sides are closed with an overlap (one slot is under the other, forming a “bag” in which the filling is visible.

Open sections must be carefully molded by hand to ensure the perfect shape.

The pies do not immediately go into the oven, they must lie on a baking sheet for a while (at least 15-20 minutes), after which they are brushed with egg and baked at 180 degrees for 25 minutes. The oven must be preheated in advance.

Step-by-step cooking process

  1. Combine the flour, sugar, salt and baking powder in the work bowl of a food processor fitted with a metal blade and mix well several times, add the butter and continue mixing until the mixture resembles fine crumbs.
  2. Next, you need to pour in the eggs and beat everything together until the dough begins to stick together.
  3. Then you need to slowly pour in ice water, 1 tbsp at a time. l., mixing after each serving until the dough holds together.
  4. After this, you should transfer it to a surface lightly sprinkled with flour and divide it in half, form a ball from each half and flatten it into a disk.
  5. Wrap each piece in plastic wrap and refrigerate while preparing the filling.

  6. To make the filling, you need to add raw eggs into a deep bowl and beat with a mixer until foamy, then add heavy cream and cornstarch and continue beating.
  7. Next, you should put the ricotta there and beat until completely mixed, then add the cooked rice and combine everything with a rubber spatula, put it in the refrigerator until ready to use.
  8. Then you need to place a rack in the lower third of the oven and preheat it to 220°C, spray 2 deep pans with non-stick spray.
  9. After this, you need to place one ball of dough on a surface lightly sprinkled with flour and roll it into a circle with a diameter of about 25 cm, transfer it to the mold and straighten it, pressing it to the bottom and walls. The same should be repeated with the second half of the dough.
  10. Next, the blanks must be placed in the freezer for 10-15 minutes so that they harden. This will result in a softer crust for the pies.
  11. After this time, you need to remove the chilled bases from the freezer and fill them with filling almost to the brim, leaving about 7 mm of free space at the top.
  12. Bake at 220°C for 15 minutes, then lower the temperature to 160°C and cook for another 30-35 minutes, or until the filling has puffed up, turned golden and set (it should be firm and not sway as the form moves gently from side to side).
  13. The finished pies must be removed from the oven and allowed to cool on a rack. Serve at room temperature or chilled.

How to make a filling pie

Let's start with the filling first. Boil the rice until done.

Finely chop the green onions, add salt, press lightly with your hands so that they decrease in volume and become softer. You can do it another way - simmer chopped onions with a little oil in a frying pan. By the way, this is what I like to do if the plan is to bake or fried pies with onions.

Cut the eggs into cubes and combine all the prepared ingredients, mix. The filling is ready.

Now we make the dough. Melt the butter in any convenient way, but so that it is not too hot.

Beat the eggs, add salt and soda to the kefir. And combine all the liquid ingredients, mixing them well.

Add flour and use a whisk or regular fork to turn everything into a homogeneous mass. The consistency is liquid sour cream.

Grease the mold with vegetable oil, pour out half of the dough and pour in the filling - it will sink a little.

Pour the remaining dough evenly over everything, level it out and put it in the oven. Bake for 30–35 minutes at 200 degrees.

We take out the mold, let the cake “rest” for 5 minutes and you can serve. A hearty and flavorful breakfast, dinner or even lunch is ready! Delicious with a glass of milk, tomato juice or just a cup of tea.

  • 2 tsp. lemon extract (or zest and juice of 1 fruit);
  • 2 tsp. pure vanilla extract;
  • 800-900 g cottage cheese or curd cheese, dry.

Step-by-step cooking process

  1. Combine flour, sugar, salt and baking powder in the bowl of a food processor fitted with a metal blade and mix well.
  2. Then you need to put the butter there and beat until the consistency of small crumbs, then add the eggs and mix until smooth.
  3. Next, it is required gradually, 1 tbsp. l., pour water into the mixture and beat until you get a homogeneous and smooth dough.
  4. You need to transfer it to a cutting board, form a ball, wrap it in cling film and place it in the refrigerator for at least 30 minutes.
  5. To prepare the filling, place rice and water or whole milk in a saucepan and boil, turn the heat down to low and cook, uncovered, stirring occasionally, for 15-20 minutes. or until the water is absorbed and the cereal becomes sticky. Then you need to turn off the stove and leave the rice to cool.
  6. Next, add the eggs and sugar to a large bowl and, using a hand mixer, beat until well combined, then add the lemon extract (or zest and juice) and vanilla flavoring, and continue beating on low for another 10 seconds.

  7. Next, you need to add cottage cheese to the mixture and beat for a few more seconds until all components are combined.
  8. Then you should put the cooked rice into the mixture and mix everything with a rubber spatula, making sure that there are no lumps of rice, and leave for 15-20 minutes. in the refrigerator.
  9. Place the oven rack in the lower third of the oven and preheat it to 190°C.

  • The finished rice and egg pie, baked in the oven or slow cooker, can be stored in the refrigerator for up to 5 days. In most cases, it can be frozen for longer storage.

With the addition of meat in the oven

Required Products:

  • 10 g instant yeast;
  • 300 ml milk;
  • 10 g salt;
  • 50 g sugar;
  • 7 eggs;
  • 100 g butter;
  • 700 g flour;
  • 500 g boiled beef;
  • 80 g meat broth;
  • 30 g rice;
  • 1 onion;
  • 2 garlic cloves;
  • ground black pepper;
  • oil for frying.

Cooking steps.

  1. The milk is heated a little and yeast, sugar, part of the salt, and half of the flour are diluted in it.
  2. The liquid dough is covered with a cloth and left in a warm place until risen, about an hour.
  3. Melted butter, two eggs, and the remaining flour are successively added to the dough. Knead the dough for 15 minutes.
  4. The finished mass is again sent to a warm place and waited for it to rise.
  5. Boiled eggs (5 pcs.) Finely chopped.
  6. Rice is cooked until soft.
  7. Chopped onions are fried in oil until transparent. Add chopped meat, rice, salt, pepper and fry for another 7 minutes. At the end, pour in the broth and add crushed garlic.
  8. Add eggs to the fried mass, mix and cool.
  9. The finished dough is divided into small lumps, rolled out and left to rest for 10 minutes.
  10. Place the filling in the center and seal the edges.
  11. The pies are baked for 25 minutes at 180°C.

Baked pies with rice and green onions from curd dough

Thanks to the curd dough, the pies are very tender.


  • 250 g cottage cheese of any fat content;
  • 20 g sugar;
  • 320 g flour;
  • 10 g baking powder;
  • 120 g butter;
  • 100 g rice;
  • 6 eggs;
  • 40 g green onions;
  • salt.

Cooking technology.

  1. Boil half the eggs and rice.
  2. Beat the remaining 3 eggs with cottage cheese, sugar, salt, 100 g of butter.
  3. The flour is combined with baking powder, sifted, then added to the curd composition.
  4. Knead the stiff dough.
  5. The filling for the pies is made from chopped eggs mixed with rice and chopped onions. Also add the remaining oil and a little salt.
  6. The products are formed and cooked in an oven preheated to 200°C for 20 minutes.
