You can, of course, use chicken eggs, but the dough will be denser in consistency, and the pies will no longer be airy, like fluff.

You will need:

  • 3 pcs. – raw egg yolks
  • 10 gr. – granulated instant yeast
  • 500-550 gr. – sifted wheat flour
  • 350 ml. – warmed milk
  • 1 PC. – small carrot
  • 0.5 kg. – white cabbage
  • 20 ml. – chilled medium fat cream
  • 50 gr. – granulated sugar
  • 30 ml. – refined vegetable oil
  • 50 gr. – soft butter
  • 2 pcs. – onions
  • Ground black pepper, salt, dry or fresh dill - to taste

How to cook:

1. Place the granulated yeast in the largest bowl, then add a small amount of sugar, pour in the heated milk, stir vigorously, then cover the bowl tightly with a lid and leave in any warm place.

2. Next, you need to prepare another container, pour the remaining granulated sugar into it, add two yolks, and beat these components vigorously.

3. Melt the butter, pour it into a bowl with the yolk mixture, mix well, and add the risen yeast to this bowl.

4. Now you need to gradually pour the sifted flour into the same bowl, and after each addition you need to thoroughly mix all the components.

5. After all the flour has been added, you need to knead the dough, wrap it in cling film and put it in the warmest place for fifty minutes.

6. As soon as the dough has risen, knead it again, cover with a clean kitchen towel, then you can start preparing the cabbage filling.

7. Peel the carrots and onions, then remove the top hard leaves of the cabbage, rinse all the vegetables, then pour vegetable oil into the frying pan.

8. Chop the white cabbage and onion as thinly as possible, then place the chopped vegetables in a frying pan and fry until soft for about thirty minutes.

9. As for carrots, you need to grate them coarsely, place them in a frying pan, and fry them with vegetables for about a quarter of an hour over low heat.

10. Add dried (or fresh) dill and salt, continue frying the vegetables for another seven minutes, once the cabbage filling is ready, cool completely.

11. Next, knead the fluffy dough thoroughly, roll it out very thin, and form it into small cakes.

12. Place the cabbage filling in them, then form the pies into the desired shape and place them on a baking sheet lined with oiled baking paper.

13. Pour the cream into a separate container, add the last yolk, beat, brush the pies with the prepared yolk mixture, put them in the oven, bake at 190 degrees for about twenty minutes.

Using a quick recipe, you can make amazing pies from ready-made puff pastry with stewed cabbage, which are recommended to be served warm with aromatic black tea.

You will need:

  • 20 gr. – white sesame seeds
  • 1 package (0.5 kg) of ready-made yeast-free puff pastry
  • 2 pcs. – large chicken eggs
  • 2-3 pcs. – lettuce onions
  • 50 ml. – refined vegetable oil
  • 0.5 kg. – white cabbage
  • Table salt, chopped fresh cilantro, ground black pepper - to taste

How to cook:

1. Remove the dough from the refrigerator in advance and defrost completely.

2. Wash all the vegetables thoroughly, then chop the cabbage and peeled onions very finely.

3. Next, you need to put the cabbage in a separate container, mash it intensively with your hands, then pour boiling water over it and dry it on a sieve, then put the largest frying pan on moderate heat, pour in the oil.

4. Add chopped vegetables to the same frying pan and fry for about a quarter of an hour, stirring occasionally, then add cilantro, stir again, continue the frying process for eight minutes under the lid.

5. Now in a separate bowl you need to beat the chicken eggs, then add most of the egg mixture to the frying pan, mix with the vegetables, heat the ingredients under the lid for five minutes, and cool the prepared filling.

6. Roll out the puff pastry, cut it into squares, put the cabbage filling in each piece, then form triangular pies and place them on a baking sheet lightly greased with oil.

7. Next, brush the puff pastries with the remaining egg mixture, sprinkle them with white sesame seeds, put them in the oven, heated to 195 degrees, bake for fifteen minutes.

The undeniable advantage of baking from puff pastry is the crispy and delicate taste of the finished product. In addition, they do not expand too much during cooking and retain their shape well. The more layers, the more airy and fluffy the result. To fill pies made from this dough, you can use a variety of products: meat and vegetables, fruits and berries, cottage cheese and cheese, or simply make dummy puffs, sprinkled with sesame seeds or sugar. Ingredients:

  • puff pastry dough – 0.5 kg;
  • white cabbage – 0.4 kg;
  • onion – 120 g;
  • carrots – 120 g;
  • tomato paste – 15 g;
  • egg – 1 pc.;
  • vegetable oil – 35 ml;
  • ground black pepper;
  • bay leaf – 1 pc.;
  • salt;
  • parchment.

Preparation

Peel and grate the carrots, cut the onion into cubes, and shred the cabbage. In a heated frying pan with vegetable oil, fry the onion for three minutes, add the carrots and after five minutes the cabbage. Pour in tomato paste dissolved in a small amount of warm boiled water or broth, stir and cover with a lid. After ten minutes, add pepper, salt and bay leaf, mix again and cook until the cabbage is soft, adding water or broth if necessary. The filling is ready.

Now roll out the puff pastry to a thickness of 2 mm and cut into squares. We determine the size of the pies as desired. Spoon the cooled cabbage filling into the center of the square, close the diagonally opposite edges so that you get a pie in the form of a carefully sealed envelope and place it on a baking sheet previously covered with parchment paper.

Beat the egg, adding a little milk. Lubricate the surface of the pies with the resulting mixture and bake in an oven heated to 220 degrees for ten minutes, and if the pies are large, then fifteen minutes.

Fried pies with cabbage and minced yeast-free puff pastry

Ingredients:

  • yeast-free puff pastry – 500 g;
  • white cabbage – 300 g;
  • any minced meat – 250 g;
  • onion – 160 g;
  • tomato paste – 15 g;
  • egg – 1 pc.;
  • vegetable oil – 250 ml;
  • bay leaf – 1 pc.;
  • ground black pepper;
  • salt.

Preparation

Fry half the peeled and chopped onion in vegetable oil for four minutes, add shredded cabbage, tomato paste diluted in a small amount of warm water, salt, pepper and bay leaf and simmer until soft. In a second frying pan, fry the remaining onion, add the minced meat, add salt and freshly ground black pepper and fry until tender.

Mix the cooled contents of both frying pans and get the finished cabbage and meat filling.

Defrost the puff pastry without yeast and cut it into equal squares or rectangles. Then we carefully roll out each of them evenly. Place the filling in the center of each rectangle, roll it into a triangle or rectangle and press the edges with a fork.

Place the pies in a heated frying pan with vegetable oil, cover with a lid, fry until golden brown, turn over and brown on the other side without the lid.

Pies with cabbage on kefir in the oven

Using kefir dough, you can make lush and surprisingly tasty pies, and it is recommended to use sauerkraut as a filling.

You will need:

  • 500 gr. – sauerkraut
  • 1 PC. – large raw chicken egg for greasing baked goods
  • 3 tbsp. spoons - granulated sugar
  • 250 ml. – medium fat kefir
  • 50 gr. – chopped fresh parsley
  • 11 gr. (1 sachet) – quick-acting dry yeast (or 20 grams of live yeast)
  • 150 ml. – aromatic vegetable oil
  • 2-2.5 cups – sifted wheat flour
  • Salt - to taste

How to cook:

1. Place a saucepan over low heat, pour kefir into it, add the required amount of oil, then heat the ingredients with occasional stirring, add granulated sugar, then add salt and yeast, mix vigorously.

2. Cover the saucepan with a clean towel and leave in a warm, draft-free place for about thirty minutes. Next, add flour in small portions, knead the dough, and leave it under the towel for another hour.

3. As soon as the kefir dough has risen, knead it again and form small balls out of it.

4. Now let's prepare the filling. Rinse the sauerkraut well and squeeze it out, fry it in vegetable oil for about 10 minutes, then add the chopped herbs and simmer under the lid for another 10 minutes.

5. Form thin cakes from the balls, put the filling of sauerkraut and herbs in them, form neat pies of any shape, place them on a large baking sheet covered with oiled paper.

6. Brush pies stuffed with sauerkraut with beaten egg, place in the oven, bake at two hundred degrees for about twenty minutes, as soon as the pastries acquire a golden hue, cool slightly and serve.

How to cook “Pies with cabbage from puff pastry without yeast”

Prepare all the necessary ingredients. Fry the cabbage in advance. To do this, finely chop it with a wide knife and fry in a frying pan until soft, add a little tomato paste diluted with water (or juice) and cook until the liquid evaporates. Ready cabbage can be put into pies and dumplings, or served along with mashed potatoes. It will be very tasty, so I advise you to immediately make more of this cabbage.

Defrost several sheets of ready-made puff pastry without yeast, cut each sheet into 4 equal parts and roll out so that each piece approximately doubles in size.

  • 1 package – ready-made yeast dough
  • 50 gr. – chopped fresh dill
  • Spices for vegetables and salt - to taste
  • 50 gr. – ghee
  • 1 PC. – small carrot
  • 5-6 pcs. – large boiled chicken eggs
  • 0.5 kg. – white cabbage

How to cook:

1. Place the dough on a table lightly sprinkled with flour, roll it out thinner, and cut into squares. Now you can start preparing the cabbage filling.

2. Heat most of the melted butter in a frying pan, add chopped lettuce and fry until soft, stirring occasionally, for about fifteen minutes.

3. Finely chop the cabbage, place it in a frying pan, then fry with onion until golden brown and soft.

4. Place the fried vegetables in a bowl, add grated raw carrots, as well as salt and spices for vegetable dishes, add dill and chopped boiled eggs to the same container.

5. Mix the cabbage filling well with the chicken eggs, distribute it over the butter dough cakes, form triangular pies, place them on a large baking sheet with low sides, greased with oil.

6. Grease the surface of the pies with kefir or beaten yolk, then place the baking sheet in the oven, preheated to 190 degrees.

7. Bake the butter pies for about a quarter of an hour, then cool them completely and serve for lunch.

How to cook “Puffs with stewed cabbage”

Prepare all ingredients.

Thaw the puff pastry and cut into triangles or squares.

Prepare vegetables for the filling. Dice the onion and grate the carrots.

Saute the onions and carrots in oil for 2-3 minutes.

Add shredded cabbage to the pan with vegetables.

Fry the cabbage with vegetables, stirring, for 5-6 minutes over medium heat. Add spices to taste.

Add tomato paste.

Stir and simmer the cabbage for 15 minutes over low heat. Cool completely.

Roll out the dough and place about 1 tbsp. l. fillings.

Make puff pastries, pinching the edges.
