"Fast" envelopes
Well, who among us has not found ourselves in a situation where there is simply catastrophic lack of time to prepare something tasty? And I really want to pamper myself and my loved ones! For such cases, each of us should have our own express recipe, but we will share one of the most successful options.
Ingredients:
- Puff pastry without yeast – 1 package;
- Cottage cheese – 250 grams;
- Egg – 1 piece;
- Sugar – 2-3 tablespoons;
- Vanilla sugar – 1 package (optional);
- Salt - a pinch;
- Flour – 1-2 tablespoons (for rolling out dough);
- Raisins, dried apricots, candied fruits - optional.
Perhaps, what will take the most time is not cooking, but defrosting the product. If you can’t do this in the microwave, you’ll have to be patient, because we need absolutely soft dough. It needs to be defrosted in a curled state, otherwise we will simply break it. When the process is completely completed, we can begin to make envelopes from puff pastry with cottage cheese.
- Let's prepare the filling. Grind the curd until smooth (this is not necessary, but this way the filling will be incredibly tender!) and add a pinch of salt to it. Separately, beat the egg with regular and vanilla sugar. The last step is to mix everything. You can add raisins or other dried fruits, but in this case, do not forget to soak them and rinse them thoroughly.
- Now turn on the oven to 190 degrees, grease the baking sheet with oil and start forming.
- Roll out the dough to a thickness of approximately 4-5 mm. In order not to damage its structure, we try not to change the direction of movement. We cut the layer into equal squares, in the center of which we place the curd filling. Its quantity will depend on the size of the square itself, so be guided by the situation. We pinch the edges diagonally and transfer the cookies to a baking sheet.
Baking takes on average 20 minutes. If desired, you can sprinkle the slightly cooled cookies with powdered sugar.

Secrets of making cottage cheese envelopes
Envelopes with cottage cheese amaze with their ease of preparation, uniqueness and originality. They can be prepared with a variety of fillings: sweet, salty, and other spices and ingredients can be added. These could be tomatoes, sweet peppers, mushrooms, pieces of chicken.
But in order to cook them correctly, you need to remember a few secrets:
- Before filling the envelopes with cottage cheese, the dough should stand under cling film for about 20 minutes. Then the dough will be more elastic, and the envelopes will cook quickly and be tender. When making cookies, we don’t use this technique because the dough will become runny and the cookies won’t bake.
- In order for the filling to be tasty when cooked, the cottage cheese must be thoroughly ground before cooking so that there are no lumps.
- The baking tray must be greased with margarine or covered with parchment to prevent the dish from burning.
- Immediately before baking, brush the dough or pita bread with beaten egg. The envelopes will have a beautiful golden crust.
