I can’t say exactly where this cake got such a strange name, but I know one thing for sure: the recipe for making the “Curly Pinscher” cake is quite old, because both my mother and grandmother made it.
So now I make this cake quite often, because its taste reminds me of childhood, and guests are always happy to enjoy such a yummy dish. In general, this is a delicacy for any occasion, and given the fact that it is quite easy to prepare, you should definitely take note of this simple recipe for the Curly Pinscher cake, I am sure it will help you out more than once when you are waiting guests. Step-by-step cooking process

The sequence of stages of baking dessert:

  1. The first thing you need to do is make the dough for the crust using classic technology. To do this, beat the eggs and sugar until foamy, then, continuing to operate the mixer, gradually add mayonnaise, flour, sifted with cocoa powder and baking powder.
  2. When the mass becomes homogeneous and without a single lump, the dough should be poured into a mold lined with parchment (diameter 18–20 cm), then you need to leave the workpiece for 20 minutes. into an oven heated to 180 °C.
  3. After removing the hot cake from the oven, it should cool slightly, after which the crumpet should be freed from the container, the baked goods should be divided into 3 parts, one of which will go to the base of the cake, the others to decorate the cubes. You can simply tear 2 circles with your hands to get small pieces.
  4. Now you should remove the cherries from the syrup and place them on a plate.
  5. Next, you need to prepare the cream in a well-known way: beat condensed milk, chilled sour cream and sugar in a blender bowl, adjusting the amount of sweetness to your taste.

  6. It's time to assemble the cake. To do this, you need to place the separated part of the cake on a suitable sized dish, then soak the crumpet with cherry syrup.
  7. Then you need to dip the chopped cubes into sour cream sauce and place them on the base cake, forming a hemisphere.
  8. Berries (fruits can be pre-sprinkled with sugar) must be placed in such a way as to fill all the voids formed between the pieces of cake.
  9. At the final stage, you should cover the assembled product with film, lightly press down the structure on all sides, maintaining its integrity.

All that remains is to cover the cake with the fondant prepared according to the instructions on the bag, and then send the delicacy to “rest” in the refrigerator.

Cake serving rules, decoration

Before presenting the dessert, it must be sprinkled with coconut flakes, then served. You can also use cherries, mint leaves or other berries as decorative elements.

  • Ghee butter - 2 tbsp. spoons
  • Vanillin - 1 pinch
  • Pitted cherries – 150 grams

Recipe No. 3. Pinscher cake with cherries and raisins

Ingredients:

For the test:

Eggs – 3 pcs; Sugar – 1 glass; Sour cream – 200 grams; Flour -2.5 cups; Soda – 1 tsp; Vinegar; Cocoa – 2 tbsp. spoons.

For cream:

Sour cream – 800 grams; Sugar – 1 glass; Pitted cherries – 1 cup; Raisins – 1 glass.

For the glaze:

Sour cream – 4 tbsp. spoons; Cocoa – 4 tbsp. spoons; Sugar – 6 tbsp. spoon; Butter – 30 grams.

Cooking method:

  • Mix all the ingredients for the dough.
  • Bake the cake in a round pan. The cake should rise.
  • Remove the cake from the mold. Cut off the bottom of the cake - this will be the base of the cake.
  • Prepare the cream - beat the sour cream with sugar.
  • If the raisins are dry, they should be soaked (steamed) in boiling water.
  • Mix raisins and cherries with cream (sour cream whipped with sugar).
  • Place the base of the cake on a plate.
  • Tear the rest of the cake into small pieces with your fingers and place these pieces one on top, dipping each one into the cream.
  • Pour the remaining cream on top of the cake.
  • Prepare the glaze: mix sour cream with sugar and cocoa, heat over low heat until the sugar dissolves. Add butter to the glaze and cool slightly. Drizzle this chocolate glaze over the cake.

PS For better and more accurate distribution of the icing, it can be placed in a pastry bag. A thin stream will come out of the pastry syringe.

How to make “Curly Pinscher Cake”

Sift the flour through a sieve to make the cake more airy.

In a separate bowl, mix eggs, 2 cups of sugar and 2 cups of sour cream, baking powder and vanilla, add condensed milk, mix. Add flour and knead the dough. Now we need to divide the dough into 3 equal parts and add cocoa to two of them.

Next, we bake three cakes from the prepared dough. Bake in an oven preheated to 180 degrees for 20-25 minutes.

For the cream, we mix 1 liter of sour cream with a glass of sugar and beat. Let's start assembling the cake. First we have a cake layer with cocoa, we grease it with cream and put a cherry on it, then there is a cake without cocoa, we also grease it with cream and decorate it with a cherry.

We break the third cake layer with cocoa into pieces and dip it into the prepared cream, placing them on top of the other two cake layers.

We should get such a neat slide. All we have to do is prepare the glaze. Mix milk, 8 tablespoons of sugar and 5 teaspoons of cocoa, add butter. Place this mixture on low heat and heat until the mixture becomes homogeneous. Then pour this glaze over the cake.

Recipe No. 2. Pinscher cake with poppy seeds

But this recipe is interesting because we will add poppy seeds to the dough for the crust that we will cut.

Ingredients:

For the base crust (without poppy seeds):

2/3 cup flour, 1 teaspoon sugar, 0.5 cup sour cream, 1 egg, 1 tsp.
soda (slaked with vinegar), 3 tablespoons of condensed milk, 1 tablespoon of cocoa. For the cake that we will cut (sponge cake with poppy seeds):
4 eggs, 3 tbsp sugar, 4 tbsp flour, 50g poppy seeds.

For impregnation:

800 grams of sour cream, 1 glass of nuts, 6 tablespoons of sugar.
For glaze:
0.5 cups sugar, 2 tablespoons cocoa, 50g. butter, 2 tablespoons milk.

Cooking method:

Prepare the base crust:

  • mix all the ingredients for it (the dough turns out a little runny),
  • pour the dough into a greased pan and bake.

Preparing the cake for slicing (biscuit with poppy seeds):

  • Separate the whites from the yolks.
  • Beat the whites with a mixer, gradually adding sugar.
  • Continuing to beat, add the yolks one at a time.
  • Add sifted flour and poppy seeds to the mixture. Mix.
  • Bake at 190 degrees. 15-20 minutes.

Prepare the impregnation: beat 800 grams of sour cream with sugar

Prepare the glaze:

  • Mix sugar with cocoa and milk, heat until sugar dissolves, add butter, stir, cool.
  • The glaze should flow in a stream.

Assembling the cake:

  • Place the base crust on a plate.
  • Cut the cake with poppy seeds into cubes of 4 cm sides.
  • Grease the base with the impregnation, place pieces of sponge cake with poppy seeds on top (dip each one into the impregnation), pour the remaining impregnation over the top of the cake.
  • Sprinkle the cake with nuts
  • Drizzle glaze over top.

"Pinscher curly" striped

Another variation. The composition of the cake is almost the same, but the execution is somewhat different.

Ingredients:

  • 2.5 tbsp. premium flour
  • Half a can of condensed milk
  • Milk – 1/3 tbsp.
  • Cocoa powder – 5 tbsp. l. for glaze and 2 for dough
  • Sugar or powdered sugar - 1 tbsp. for dough, 1 tbsp. for cream, 5 tbsp. l. for fondant
  • Flour – 1.5 tbsp.
  • Sour cream – 2.5 tbsp. in cream and 1 tbsp. into the dough
  • Soda (slaked) – 1 tsp.
  • Butter – 2 tbsp. l.
  • 2 eggs

Beat eggs and sugar thoroughly. After the mass increases in volume, add soda, sour cream and condensed milk to it. Mix well but carefully and add all the flour one spoon at a time. Divide the mass in half. Leave one white, and add cocoa powder to the second. In a greased pan in a hot oven, bake both cakes for about 40 minutes.

Let the baked cakes cool and cut them in half - each cake into two thin ones. And then we assemble the cake, alternating light and chocolate cake layers and coating them with cream. So we lay three cakes, and break the last one into small pieces. Pour all the “fragments” into a bowl with the remaining cream, mix and place on top. Pour the top of the cake with glaze made from milk, sour cream, butter, sugar and cocoa.

“Curly Pinscher” with dried apricots and prunes

Let's call this cake Curly Pinscher for a change. Just so as not to get confused - if with prunes and dried apricots, then the curls become curls. So, for the curly version of the “Pincher” you need the following ingredients:

  • Can of condensed milk
  • Milk – 1/3 tbsp.
  • Cocoa – 5 tbsp. l. for glaze and 2 for dough
  • Sugar or powdered sugar - 1 tbsp. l. for dough, 1 tbsp. for cream, 5 tbsp. l. for fondant
  • Flour – 1.5 tbsp.
  • Sour cream – 3 tbsp. in cream and 1 tbsp. into the dough
  • Soda (slaked) – 2 tsp.
  • Butter – 2 tbsp. l.
  • Prunes and dried apricots 1 tbsp.
  • 1 chocolate bar without filling
  • 1 tbsp. walnuts (chopped)
  • 2 eggs

Preparation:

For the dough, mix eggs with a glass of sugar, a glass of sour cream, a can of condensed milk, soda and all the flour. After mixing, beat it all with a mixer. Divide the resulting dough for the cakes into two parts: a quarter and three quarters. From the smaller part we bake a thin light cake. Add cocoa powder to another part of the dough and prepare a chocolate cake from it.

While the cakes are baking, whip the cream from sour cream and sugar and cook the fudge (sour cream, sugar, milk, cocoa, butter). The composition and method of preparing cream and glaze for all versions of Pinscher are the same. And for this option, we also prepare a filling of dried fruits: wash the dried apricots and prunes well, dry them and cut them into small pieces (you can grind them in a blender).

We take the ready-made cooled cakes and make the base of the cake from white, placing it on a dish and liberally coating with cream and sprinkling with dried fruits. We break (cut) the chocolate cake into pieces. Having placed half of the pieces of chocolate cake dipped in cream on the cake, sprinkle them with nuts and dried fruits, and then lay out the remaining “fragments”, also dipping them in the cream. Sprinkle the top of the entire cake with nuts, prunes and dried apricots again, and then pour over the fondant. And finally, sprinkle with chopped chocolate shavings. These will be the curls of our Curly Pinscher.
