  • Water – 250 ml

Step 4. Gradually add flour. Add the remaining flour in 2-3 additions, mixing the dough well each time.

After the last addition of flour, knead the dough with your hands.

Depending on the quality, you will need a little more or less flour. The dough should be elastic, but at the same time airy and pliable.

After an hour, roll out a thin layer of dough on a wooden surface using a rolling pin. Use a special die to form circles, place each of them on parchment and cover with cling film.

After 10 minutes, throw the blanks along with the parchment into hot sunflower oil. Fry over medium heat on both sides until golden.

Make a hole in the side of each donut using a knitting needle or stick. Fill with melted chocolate or your favorite jam using a pastry syringe.

Cooked filled donuts are generously sprinkled with powdered sugar, but only after they have cooled a little.

The filling for such a pastry can be anything, although the classic German recipe contains plum jam. It can easily be replaced with strawberry or raspberry jam, custard, condensed milk, or chocolate-based ganache.

Airy kefir donuts without yeast or eggs

To make your baked goods sweet and fluffy, you don’t have to use dry or fresh yeast. Kefir with absolutely any percentage of fat content gives donuts their splendor, softness and delicate texture. After a person tries a delicious delicacy, he will never guess that it is prepared on a yeast-free basis.

Ingredients:

  • 250 ml. kefir;
  • 3 tbsp. l. granulated sugar;
  • ½ tsp. non-iodized salt;
  • ½ tsp. soda;
  • ¼ tsp. vanilla sugar;
  • 450 gr. wheat flour;
  • 2 tbsp. l. + for frying vegetable oil;
  • powdered sugar - for decoration.

Cooking process:

  1. Pour the kefir into a container and dissolve the soda in it. Add vanillin, sugar, and a little salt to the mixture. Mix the ingredients well, waiting until the kefir foams a little.
  2. After the mass doubles in volume, pour in refined vegetable oil. Mix everything thoroughly with a whisk, gradually add flour.
  3. Knead a smooth, homogeneous dough, and knead it on the table for at least 5-6 minutes with your hands. Form the dough into a ball and place it in a bowl covered with film for 20 minutes.
  4. Roll out a half-centimeter layer of dough on the table using a rolling pin. Using a glass or mold, cut out donuts and make holes in the middle with a pastry bag tip.
  5. Heat vegetable oil in a deep frying pan. Place the pieces in it and fry on both sides. Sprinkle finished products with powdered sugar or dip in chocolate paste.

Delicious donuts prepared without a crumb of yeast in them are recommended to be eaten once a week. In this case, they will not harm a person who adheres to a balanced or dietary diet. The recipe for this delicious delicacy can be easily adjusted, significantly reducing its initial calorie content.

Korean donuts with kefir

These very tender, soft, airy kefir donuts, with a crispy crust and an interesting twisted shape, are eaten in an instant. It's simply impossible to tear yourself away from them. Korean donuts can be rolled in powdered sugar, or more often it is sugar mixed with cinnamon. Cook with pleasure and pamper your loved ones with this wonderful pastry.

Ingredients for “Korean Kefir Donuts”:

For kefir

  • Milk - 1 l
  • Sourdough (3g Orsik) - 1 pack.

Dough

  • Kefir (Orsik) – 250 ml
  • Chicken egg - 2 pcs
  • Sugar - 90 g
  • Yeast (dry) - 11 g
  • Butter - 80 g
  • Wheat flour / Flour (500g) - 450 g
  • Vanilla sugar - 1 packet.
  • Salt - 4 g

Additionally

  • Vegetable oil – 400 ml
  • Powdered sugar (for sprinkling) - 2 tbsp. l.

Cooking time: 60 minutes

Number of servings: 16

Recipe for “Korean donuts with kefir”:

To make these charming donuts, we need to prepare real natural kefir from Orsik starter. Pour warm milk into a glass from a yogurt maker, add Orsik kefir starter, mix well. Place the Orsik cordless thermos yogurt maker, pour boiling water up to the mark, close the lid and leave for 6-10 hours to ferment.

Here it is, handsome, thick, tender, very tasty.

Immediately add yeast, a spoonful of sugar to warm kefir, stir, and leave for 10-15 minutes. If the kefir is cold, it needs to be slightly warmed in a micro.

As soon as the foam appears, it means the yeast is “working” and now we add the rest of the ingredients. Melted butter, salt, eggs, remaining sugar and vanilla sugar, mix (everything sank into foam).

Add sifted flour in two additions, knead with a wooden spoon. Adjusting the flour depends on the size of the eggs and the flour itself. In any case, it is better to mix the last flour on the table.

Pour a little flour onto the table, lay out the dough and knead with your hands, gather into a lump. Place in a bowl, cover and leave in a warm place for 40 minutes.

This is what it looked like after 40 minutes. I put the bowl in the micro without turning it on and put a glass of hot water in the corner there.

Divide the dough into 16 parts, more is possible, then the products will be smaller. Flour them a little.

Roll each ball into a rope measuring 20-22cm, then twist it a couple of times with one hand towards you, and the other away from you. Connect the ends well, lift it slightly above the table and it will twist itself into a spiral. You no longer need to use flour; as a last resort, lightly grease your hands with oil.

Let them rise on the table for 10 minutes, covering them with a light towel or film.

In the meantime, heat the frying oil to 200°C. Then reduce the heat so that the oil cools slightly to 150-160°C and begin to fry our donuts until golden brown.

Immediately place on a paper towel to remove excess oil.

We do this with all preparations. They turn out incredibly beautiful and lush. Well, you must agree, it has a very unusual, beautiful shape.

Sprinkle with powdered sugar, mine doesn’t melt, and serve. Enjoy your tea!
