Accordion potatoes in foil with lard and bacon
If you want to get a truly juicy dish, bake the Accordion in foil, especially if the filling includes meat products, lard, ham or bacon. Open baking produces a deliciously crispy crust, but cooking with foil also achieves this.
Take:
- Potatoes – 5 pcs.
- Bacon - 5 pieces.
- Lard – 50 gr.
How to bake:
- Wash the tubers, make as many longitudinal cuts as possible, without finishing them about 5-7 mm. to end. Make the slices no more than 5 mm thick.
- Cut the bacon into thin strips. Divide the piece of lard in the same way. To make cutting food more convenient, freeze them slightly before doing so.
- Insert the lard into the slits, alternating with the bacon slices. Since we are cooking in foil, there is no need to secure the pockets with a toothpick.
- Wrap each tuber in foil. Place the preparations on a baking sheet.
- Place in the oven to bake, set the temperature to 180 o C. Large tubers are cooked for about 45 minutes; for small ones, reduce the baking time. Unroll the foil in a quarter of an hour, then you will get a beautiful golden brown crust. And be sure to increase the fire power to 220 o C.
Instead of the oven, the tubers can be baked in a slow cooker. To do this, set the gadget to the “Baking” mode by turning on the timer for 50 minutes.
How to cut
Now we cut the potatoes with an accordion, without cutting all the way, so that the thickness between the cuts is approximately 0.5 centimeters. It turned out like a fan of potatoes. I had to ruin a lot of potatoes before I was able to cut them properly. And it turned out thanks to an ordinary tablespoon. Place the vegetable in it and cut it into the necessary pieces. The knife rests on the iron base and does not cut the potato completely. This simplifies and speeds up the process several times. Add salt.
Now we need to prepare the filling. Today it will be raw smoked sausage. Cut it into circles.
Cut each piece in half.
Forming
Insert a piece of sausage into each cut.
You can prepare it this way, bake it in cooking foil, wrapping each potato, or simply on a baking sheet.
Bake
Place on a baking sheet and place in a preheated oven at 180 degrees. Cooking time 30-40 minutes.
To ensure crispy potatoes, open the foil 10 minutes before the end of cooking.
This way it will bake, of course, faster, but I find it more convenient to do it on a baking sheet - you save both foil and time. It needs to be greased with vegetable oil, put cooked potatoes on it for baking, cover with a lid or foil, and put in the oven. The cooking time will increase by 10 minutes, and the cooking temperature will remain the same - 180 degrees.
Serve to the table
I suggest serving the dish to the table as soon as it comes out of the oven. An excellent solution for a family dinner or for a holiday table, if unexpected guests came or you had a simple evening get-together with friends and decided to have a snack. This is an independent dish; it should be served with a light salad or pickled tomatoes. As you understand, cooking will take very little active time, and each time the recipe can be supplemented with ingredients and cooked with a different filling.
How to cook accordion potatoes with lard
A thrifty housewife will always have a piece of lard - this is enough to make an accordion. It will be great if you take lard with meat layers.
You will need:
- Tubers – 4 pcs.
- Lard – 150 gr.
- Dill - a couple of sprigs.
- Garlic – 2 cloves.
- Pepper, salt.
How to cook:
- Peel the potatoes and cut them into pockets. The width of the step when slicing is at your discretion; the thinner, the more lard you will add. The accordion will turn out fatter.
- Cut the lard; the width and length of the pieces should be such that they fit comfortably into the filling. Finely chop the garlic and dill, pepper the mixture, stir.
- Rub each tuber with the mixture and insert a slice of lard into the slits. If you bake the dish without foil, secure the pockets with a toothpick.
- Wrap the tubers in foil, each separately. Place on a baking sheet, making sure the foil is on top. Otherwise the juice will leak out.
- Cooking time is 35-45 minutes depending on the size of the workpiece. Shortly before the end, I advise you to unwrap the foil so that the potatoes are fried until beautifully browned. The temperature in the oven can be increased to 220 o C.

The recipe will talk about the simplest, but no less tasty way to prepare potatoes with garlic and dill. It will serve perfectly both as a separate dish and as a side dish for some meat or fish dish.

Potatoes baked in an accordion with meat in the oven
It is better to take fatty pork, which is minced for cooking.
Necessary:
- Potatoes – 5 pcs.
- Minced meat – 200 gr.
- Garlic cloves – 2 pcs.

- You can use any meat, but pork is preferable. Turn the meat through large meshes, this will make it tastier. Add crushed garlic, seasonings for minced meat, pour in sour cream. Mix the mixture thoroughly.
- Make an accordion out of the tubers and fill the pockets with minced meat.
- Place the stuffed potatoes in a greased pan. Hide the blanks under foil. Send to bake at 180 o C. After 40-50 minutes, depending on the size of the tubers, remove the pan from the oven.
- Grate the cheese with coarse shavings and sprinkle on the dish. Return the pan to the oven and continue baking until the cheese is melted and then lightly browned.
Recipe 6: Accordion potatoes with ham
Baked accordion potatoes in foil are an original recipe for preparing regular potatoes with ham or bacon. It would seem that what could be simpler than potatoes and pork, and how can you prepare an elegant dish from these ordinary products? The secret is simple - a large potato tuber, delicious ham or smoked pork belly, herbs - rosemary and oregano, a small piece of food parchment and foil.
- 1 large potato (about 150 g);
- 45 g fatty ham;
- 2 g smoked paprika;
- sprig of rosemary;
- a pinch of oregano;
- 10 ml extra virgin olive oil;
- 15 g hard cream cheese;
- 2 g coarse sea salt.
Peel the potatoes and trim one side so that the bottom becomes flat.
Place two sticks on a flat board and place a potato between them, flat side down. We take a sharp knife, cut strictly perpendicular to the surface, make cuts in increments of approximately 5 millimeters.
The knife will cut through the potatoes only to the sticks, the lower part will remain intact, and the top will be cut petals.
We take chilled fatty ham, it is advisable to keep it in the freezer for about half an hour before cooking. We cut the ham very thinly, the slices should be no more than two millimeters thick.
We insert slices of ham between the potato slices - our potatoes begin to resemble an open accordion.
Take a small sheet of waxed parchment, put the potatoes and ham, pour with extra virgin olive oil.
Next, add seasonings and spices - sprinkle with coarse sea salt, ground smoked paprika, oregano and add a small sprig of rosemary.
Lift the edges of the parchment, fold the two wide edges together, then roll up the narrow edges on the sides like candy.
We fold the food foil in two layers. Wrap our potato “candy” tightly in foil.
Preheat the oven to 190 degrees Celsius. Bake the potatoes for about 40 minutes, depending on the size, and most importantly, the thickness of the tuber. Meanwhile, cut the hard cream cheese into thin cubes.
Then we take out the almost finished potatoes (don’t turn off the oven), unwrap the packaging, and place cheese cubes on the potato slices. Place the opened package in a hot oven and bake for a few minutes until golden brown.
As soon as the potatoes are browned, which will take 4-7 minutes, take them out of the oven and serve them hot, piping hot.
Tip: to prepare several servings, cut a wide piece of foil, then parchment, place everything on a baking sheet at once, lay out the accordion potatoes, first pack the potatoes tightly in a wide parchment envelope, then cover everything with foil.

Counting calories? Bake potatoes with sausage. There is less fat, and the figure will suffer a little. You can take boiled or smoked sausage; it is acceptable to replace it with sausages and ham.

This dish can be prepared not only at home in the oven. It will be a great addition to an outdoor barbecue. Everything is very simple, we do everything according to the recipe, wrap the potatoes in foil, put them in the coals of a fire or on the grill. Cook for 30-40 minutes. To check readiness, take out one piece, carefully unwrap it, if ready, take it out and serve. If not, we send it to the coals for some more time.

How to cook potato accordion with cheese, butter and garlic
Very simple and quick preparation. In addition, the dish contains very few calories, and the cheese crust will delight any fussy eater.
Required:
- Tubers – 3 pcs.
- Butter – 120 gr.
- Garlic cloves – 3 pcs.

How to cook:

The many-sided, versatile potatoes can be part of a quick snack or a gourmet dish. An “accordion” prepared according to a simple recipe in the oven will provide a worthy accompaniment to both a solemn crowded feast and a quiet family dinner.
You can put any filling into the cuts - slices of vegetables, pieces of meat, smoked lard. Guests will not be able to help but pay due attention to the hostess’s imagination. Toasted, ribbed, like a real accordion, tubers next to fancy delicate roses of juicy crispy radishes will become a wonderful table decoration.
- large potatoes – 6 pcs.
- hard cheese – 70 g
- butter – 60 g
- sunflower oil – 1 tbsp. l.
- green onion - a few feathers
- dried marjoram – 1 tsp.
- dried basil – 1 tsp.
- ground black pepper – 1/2 tsp.
- salt - to taste
Wash the potatoes to remove dirt using a stiff vegetable brush.
Peel the tubers and make deep transverse cuts on each one at a distance of 1 cm from each other, without cutting all the way through.
In a small bowl, combine marjoram, basil, salt and black pepper.
Preheat the oven to 180°C.
Grease a refractory pan with sunflower oil. Open the potatoes a little and place them in the pan with the cuts facing up. Sprinkle with spice mixture.
Cut the butter into small pieces and place on the potatoes.

Compound:
- Tubers – 6 pcs.
- Champignon mushrooms – 100 gr.
- Lard – 200 gr.
- Sunflower oil, salt, seasoning from a potato bag.
Preparation:
- Form the tubers into an accordion using the tips above.
- Chop the champignons into slices. Cut a piece of lard into slices commensurate with the cuts (you can make it not too thin if you like fried lard).
- Dip the potatoes in spices and roll on all sides.
- Stuff with chopped champignons and lard, alternating fillings. I recommend brushing the mushrooms with sunflower oil before adding them.
- Transfer the blanks into a mold and hide under foil. Cook at 180 o C, cooking time – 40-50 minutes. Lovers of beautiful golden brown potatoes should open the dish 15 minutes before the end of baking. In this case, it is advisable to increase the temperature to 220 o C.
Delicious potatoes “Accordion” in the oven with vegetables
A bright, festive dish with minimal calories. Aromatic potatoes will help out any housewife if she needs to treat her friends quickly and tasty.
Need to:
- Potatoes – 5 pcs.
- Carrot.
- Tomato.
- Garlic – 2 cloves.
- Sour cream (heavy cream) – 200 ml.
- A pinch of turmeric, sweet paprika, pepper, salt, dried dill.
How to cook:
- Make neat pockets on the tubers.
- Finely grate the carrots and pass the garlic cloves through a press. Mix in one bowl. Add all the seasonings listed in the recipe and mix the filling thoroughly. Pour in half the sour cream, stir again. Taste for salt.
- Cut the tomato into slices.
- Place a spoonful of filling and a slice of tomato into each pocket.
- Place the semi-finished products on the bottom of the greased form.
- In a separate bowl, dilute the remaining sour cream with water and fill the accordion.

- Tubers – 2 pcs.
- Brisket – 70 gr.
- Bulb.
- Garlic – a clove.
- Sour cream – 60 gr.
- Seasonings, salt.
Baking recipe:
- Make transverse cuts on the tubers, divide the brisket into thin slices.
- Chop the onion into small cubes and turn the garlic into a paste. Pour sour cream over the slices, sprinkle with any seasonings, and mix well.
- Dip the brisket slices into the sauce and place in the potato pockets.
- Place the stuffed pieces in the mold, pour over the rest of the sauce.
- Cover with a sheet of foil and place in the oven. Cook at 180°C for approximately 30 minutes. Then remove the foil and bake the dish for another 20 minutes.
