  • The variety of tomatoes does not matter. The drink is made from red, pink, yellow tomatoes. The main requirement is that they must be sweet and meaty.
  • The method of obtaining homemade juice also does not play a big role. Modern housewives have several spinning devices in their arsenal. Made through a meat grinder or juicer. Recently, a blender has been increasingly used, which can be used to extract juice very quickly.

Take:

  • Tomatoes.

  1. Divide the washed tomatoes into halves, remove the part at the stem. Cut into pieces of arbitrary sizes.
  2. Place in a saucepan, add water, completely covering the slices.
  3. Cook while heating slowly until the pieces are softened.

  1. Squeeze out the juice from ripe tomatoes.
  2. Heat slowly and wait until it boils.
  3. Add the spices specified in the recipe, adding your favorite ones.
  4. Let the contents of the pan come to a high boil. Pour, swirl. Turn the workpieces over, wrapping them in a towel. After cooling, transfer to a permanent storage location.

Ingredients:

  • juicy tomatoes – 10 kg (you will get 8.5 liters of liquid),
  • salt - to taste.

Cooking steps:

  1. Wash the tomatoes, remove the greens, cut into 4 or 2 parts.
  2. Pass the tomatoes through a juicer.
  3. Sterilize 8 liter jars. Mix freshly squeezed juice with salt and bring to a boil on the stove. While the tomato is boiling, you need to remove the foam from it.
  4. Pour the boiled juice into jars and cover with a tin lid. There is no need to turn it over, just like wrapping it. The tomato addition to winter dishes is ready!

It is better to choose smaller jars, because a 3-liter jar of tomato cannot be used immediately, and it is undesirable to store it in the refrigerator for weeks.

  1. Thoroughly washed tomatoes are passed through a juicer.
  2. Boil the resulting juice.

Ingredients:

  • Fresh tomatoes – 11 kg.
  • Cinnamon – 3.5 teaspoons.
  • Granulated sugar – 450 gr. (if you like it sweeter, increase the weight to 700 g).
  • Salt – 175 gr.
  • Garlic – 5-6 cloves.
  • Essence - a large spoon (if you take 9% vinegar, then 275 ml.).
  • Ground red pepper - half a teaspoon.
  • Allspice – 30 peas.
  • Cloves – 6-8 buds.
  • Nutmeg – a pinch.

We preserve:

  1. Divide the tomatoes into pieces. Grind through a juicer.
  2. Pour the juice into the pan. After boiling, reduce the heat intensity.
  3. Continue cooking for half an hour. Add salt and sugar. Cook for another 10 minutes.
  4. Add chopped garlic, the rest of the spices, and pour in the essence.
  5. Cook for 15-20 minutes. Turn off the burner and fill the jars. Twist it, cool it, put it in the pantry or cellar.

Juice with vinegar through a juicer

A drink brewed with vinegar has a more tart taste. To prepare it you will need:

  • 2.5 kg tomatoes,
  • 15 g granulated sugar,
  • 5-10 g salt,
  • 7 ml 9% vinegar.

The washed tomatoes are cut into pieces and passed through a juicer. The colander is covered with gauze folded in 2 layers, and the squeezed juice is poured into it. When the main liquid has drained, lift the gauze by the edges and squeeze out the remaining mass with your hands. Then the cake is processed, otherwise the drink will be too liquid. The waste is placed in a blender, broken up and filtered. If you don’t have the device at home, you can use a sieve.

The pan with the preparation is placed on the stove. As soon as its contents become hot, add salt, vinegar and sugar. At the first sign of boiling, turn off the burner and pour the contents into jars.

The drink prepared according to this recipe requires sterilization. Liter jars covered with boiled lids are immersed in a tank of hot water for 10 minutes, two-liter jars for 15-20 minutes. Immediately after sterilization, the containers are rolled up, turned upside down, and wrapped in a warm coat or blanket until cool. Tomato juice without cooking with pulp

You can prepare thick juice with pulp with your own hands. Preservation does not require cooking, however, the cans of the drink will have to be sterilized.

We take:

  • Tomatoes – 1.2 kg.
  • Salt – 2 teaspoons.

How to do:

  1. Select the ripest red tomatoes. Make a cross-shaped cut on the fruit. Scald and immediately rinse with cold water. Quickly remove the skin.
  2. Pound with a masher until it turns into a puree. Pass through a sieve, discarding the seeds.
  3. Strain the juice through a double layer of gauze.
  4. Add salt, stir well until completely dissolved.
  5. Pour into containers. Place it in the bathhouse to sterilize. The duration of sterilization depends on the volume of the jars. For liter bottles, 15-20 minutes after the moment of boiling is enough.

Canned tomatoes


This red fruit is the most popular in all preserves, both entirely in a single genus, and together with other vegetables and fruits. Tomato juice in a juicer can also be rolled up, like whole tomatoes. In the future, the resulting preparation is used as an addition to side dishes or as an ingredient in other dishes. In winter, it can be used as a component of borscht, kharcho, added to stews or used as a base for sauce.
