Ingredients:

  • tomatoes – half a kilogram;
  • onion – 100 grams;
  • cucumbers – 100 grams;
  • carrots – 100 grams;
  • sugar – 150 grams;
  • salt – 100 grams;
  • vinegar - 50 milliliters;
  • pepper – one and a half kilograms;
  • vegetable oil – 200 grams.

A delicious salad for the winter from tomatoes and other vegetables is prepared in several stages:

  1. First you need to thoroughly rinse the root vegetables.
  2. Then you should clean them.
  3. After this, you need to grate the carrots on a coarse grater, divide the onion into half rings, and chop the pepper into small pieces. Tomatoes and cucumbers should be cut into pieces one and a half centimeters thick.
  4. Next, all the ingredients must be put in one bowl, covered with salt and sugar and poured with oil.
  5. Now the products need to be put on fire and cooked, stirring constantly.
  6. After the vegetable mass boils, it must be cooked with the lid closed for another 10 minutes.
  7. Lastly, the future delicious red tomato salad for the winter should be seasoned with vinegar and cooked for five minutes.

Spicy tomato salad with onions and garlic for the winter

If you like to eat something tasty and spicy, then you will probably like a salad of tomatoes with onions and garlic with hot pepper. This salad goes well with meat dishes.

Ingredients:

  • Tomatoes – 1 kg
  • Onion – 2 pcs.
  • Hot pepper pod
  • Garlic – 6 teeth.
  • Grows. oil – 2 tbsp.
  • Vinegar 9% – 50 ml

  • Sugar – 3 tbsp.

  • Jars of 1 liter – 2 pcs.

Preparation:

First, prepare the jars - wash them well with soda and sterilize for 5 minutes, boil the lids separately for 5 minutes.

Place 3 teeth at the bottom of the jars. garlic and 2 bay leaves, ½ tsp. allspice and peppercorns.

Cut the hot pepper crosswise into thick rings and also place equally in the jars.

Cut the onion into slices, cut the tomatoes into slices and place them in jars, alternating layers. Place a layer of greens in the middle of the jars and some greens on top.

Pour a liter of water into a saucepan, add salt and sugar, and bring to a boil. Then pour in the vinegar and turn off the stove.

Pour the hot marinade into the jars and close the lids.

Place the jars in a large saucepan with warm water to sterilize, carefully pour 1 tbsp into the jars. vegetable oil, cover again with lids. From the moment the water boils in the pan, sterilize the jars for 15 minutes.

Then take out the jars and roll them up tightly, turn them over, wrap them in a towel and let them cool.

Vegetable winter salad of tomatoes, peppers and carrots

The main function of any winter preparation is to saturate the body with vitamins in winter, when it is difficult to get fresh vegetables and fruits. A vegetable winter salad that can be easily preserved at home does an excellent job for this purpose (Figure 4).

To prepare it you will need 1 kg of tomatoes, one and a half kilograms of cucumbers, 800 grams of sweet bell peppers, 0.5 kg of onions, 70 grams of sugar, 3 tablespoons of salt, 120 ml of vegetable oil, a mixture of peppers (0.5 teaspoon), a teaspoon of acetic acid (70%) for every 500 grams of dish and a large bunch of fresh parsley. If you prefer spicy dishes, you can add half a chilli pepper to these ingredients.

Note: The given amount of ingredients will be enough to prepare 4 liters of salad.

The stages of preparing a winter vegetable salad are as follows:

  1. We thoroughly wash all vegetables, remove peels and stalks.
  2. Cut the cucumbers into large oblong slices, chop the onion into half rings, chop the pepper into rings, and chop the tomatoes into large slices. Finely chop the parsley.
  3. Place all the vegetables in a large enamel pan and mix carefully.
  4. In the vegetable mixture you need to add salt and sugar, vegetable oil, a mixture of peppers and finely chopped chili. Mix again and place on medium heat.
  5. The dish must be brought to a boil and boiled for 30 minutes, then immediately poured into sterilized jars. For preservation, add acetic acid to each container (a teaspoon per half-liter jar) and cover with sterilized lids.

After this, place the jars in a large saucepan with water and sterilize for 20 minutes, after which we immediately roll up the metal lids, cool and transfer to a cool place for storage.

The combination of tomatoes with bell peppers and carrots is considered no less successful, tasty and healthy. Using our recipe, you can easily prepare this salad at home.

From the products you will need 1 kg of tomatoes, 100 grams of carrots, 1 large bell pepper, 2 cloves of garlic, 2 bay leaves, 100 grams of dill and horseradish root. Separately, you will need the brine components: 1 liter of water and 60 grams of coarse rock salt without additives.

Note: This amount of ingredients is enough for one serving of salad, but if you plan to prepare a large amount of the dish, the number of components should be increased proportionally.

Preparing this winter salad will not take much time. First you need to wash and peel the carrots and horseradish root, and then grate the root vegetable on a coarse grater and cut the root into thin slices. The bell pepper also needs to be washed, peeled from the stem and seeds and cut into strips of any size.

Now you need to wash and sort the tomatoes. For cooking, it is better to use firm tomatoes that will not release a lot of juice. They need to be cut into large pieces and placed in a separate enamel pan. Tomatoes should be laid in layers, alternating them with a vegetable mixture of peppers, carrots and horseradish. Place garlic cloves and bay leaves on top.

Salad of tomatoes, zucchini and sweet peppers

Treat yourself in winter with a delicious vegetable salad of tomatoes, zucchini and sweet peppers. This salad from a jar will perfectly cheer you up and diversify your daily menu in winter.

Ingredients (for about 6 cans of 700 g):

  • Tomatoes, onions – 10 pcs.
  • Sweet pepper – 5 pcs.
  • Zucchini – 2 pcs.
  • Tomato pasta – 350 g
  • Water – 1 l

  • Salt and sugar - 1 tbsp each.

Make the marinade - pour a liter of water into a saucepan, add tomato paste, salt, sugar, oil, vinegar and bring to a boil.

Cut the zucchini into large cubes, pepper and onion into half rings and place in a saucepan with the marinade, simmer over low heat for 20 minutes. Cut the tomatoes into slices and boil everything together for another 20 minutes. Add finely chopped parsley and simmer for another 10 minutes.

Place the hot salad in sterilized jars and immediately seal with sterile lids.

Winter salad with green tomatoes and bell peppers

A very tasty vegetable salad that contains many vitamins.

Ingredients:

  • bell pepper of all colors 1 kg.
  • green tomato 2 kg.
  • onions 1 kg.

For the marinade:

  • refined oil 1 tbsp.
  • vinegar 9% 1 tbsp.
  • granulated sugar 80 g.
  • warm water 300 ml.
  • coarse salt 50 g.

Preparation:

First you need to prepare the vegetables, rinse and let them dry. Then cut the tomatoes into medium-sized slices, cut the onion into half rings, and divide the pepper into 6-7 parts.

Let's start preparing the marinade. Pour water into the pan, add salt and sugar, then add vinegar and refined oil, mix. Place the vegetables in a saucepan with the marinade, mix the resulting assortment and cover with a lid. Let the vegetables brew for 2 hours.

Then put the vegetable mix on the stove and wait until it boils, then reduce the heat and cook for 10 minutes.

We fill the jar with a delicious, vitamin-packed salad and save it until winter, when it will be on the table on time.

Salad of tomatoes, eggplants and sweet peppers

If you love eggplants, then try making a simple and tasty vegetable salad from tomatoes, eggplants and sweet peppers. This salad will perfectly diversify your everyday winter table.

Ingredients:

  • Tomatoes – 3.5 kg
  • Eggplants – 9 pcs.
  • Sweet pepper – 12 pcs.
  • Garlic – 2-3 heads
  • Hot pepper – 1 pc.
  • Grows. oil – 200 ml
  • Sugar – 200 g
  • Salt – 1.5 tbsp.

Salad of ripe tomatoes with onions for the winter - a simple universal recipe

Tomato and onion salad is an excellent universal winter vegetable appetizer that will suit any dish and will appeal to everyone at home, both children and adults.

Ingredients:

  • Tomatoes – 1.5 kg
  • Onion – 2 pcs.
  • Grows. oil - to taste
  • Salt – 3 tsp.
  • Sugar – 4 tbsp.
  • Bay leaf – 3 leaves
  • Seasonings: mustard, allspice, peppercorns - 1 tsp each, onis - ¼ tsp, cloves
  • Water – 1l
  • Cans of 0.5 l – 3 pcs.

Preparation:

Pour a liter of water into a saucepan, add salt and sugar, bring to a boil, then remove from the stove.

Cut the tomatoes and onions into slices and place in clean jars.

In each jar put 1 bay leaf and 1 tsp. spices (first mix them in a plate), 1 tsp. vinegar and pour hot marinade (to the top).

Cover the jars with lids and sterilize for 5 minutes. (from the moment the water boils in a large saucepan), then roll up all the lids well.

Be sure to place a towel at the bottom of a large saucepan so that the jars do not burst during sterilization. The temperature of the marinade in jars and a large saucepan when you put them on sterilization should be approximately the same so that the jars do not immediately crack due to temperature changes.

Kuban salad - tomatoes, cabbage and cucumbers

Try making a delicious salad with cabbage for the winter; it also includes tomatoes, cucumbers and sweet peppers - this is an excellent hearty vegetable snack.

Ingredients:

  • Tomatoes – 2 kg
  • Cucumbers, sweet peppers and cabbage – 1.5 kg each
  • Carrots and onions – 500 g
  • Grows. oil – 500 ml
  • Vinegar – 200 ml
  • Sugar – 13 tbsp.
  • Salt – 9 tsp.

Preparation:

Chop the carrots and cabbage into strips. Cut the remaining vegetables as for a regular salad.

Place all the vegetables in a saucepan and add salt, sugar, oil and vinegar.

Ingredients:

  • Tomatoes – 2 kg
  • Onion – 3 pcs.
  • Garlic – 100 g
  • Hot pepper – 1 pc.
  • Grows. oil – 100 ml
  • Sugar - 100 g
  • Salt – 2 tbsp.
  • Vinegar - 50 ml
  • Dill, parsley – 30 g each

Preparation:

Cut the tomatoes into quarters, the onion into half rings, chop the garlic, chop the hot pepper into small pieces, and you can leave the greens in sprigs.

Place vegetables and herbs in a saucepan, pour in oil, vinegar, add salt and sugar.

Stir well and leave for half an hour so that the vegetables release juice and are saturated with salt and sugar.

Gypsy-style tomato salad with sweet peppers (whole tomatoes in three-liter jars)

If you like to eat whole tomatoes prepared for the winter and want to try a new recipe, then try garnishing the tomatoes with sweet or hot gypsy peppers. This recipe contains such classic ingredients as tomatoes, horseradish, dill umbrellas, garlic, and also bell peppers.

Ingredients (for 3 cans of 3 l):

  • Tomatoes (small) – 6 kg
  • Sweet pepper – 3 pcs.
  • Hot pepper – 1 pc.
  • Garlic – 3 heads
  • Vinegar 9% - 3 tbsp. (for 1 jar)
  • Salt – 2 tbsp, sugar – 4 tbsp. (for 1 jar)
  • Parsley
  • Seasonings: bay leaf, allspice, peppercorns, dill with umbrellas, horseradish leaves

Preparation:

Sterilize the jars for 5 minutes. over the steam.

Cut the sweet pepper lengthwise into 4 pieces. Peel the garlic clove and cut it in half lengthwise.

Place in jars: 2 horseradish leaves (1 on the bottom and 1 in the middle), 2 dill umbrellas (1 on the bottom and 1 on top), garlic cloves (half on the bottom, half on top - 1 head per jar).

Then add whole tomatoes and sweet peppers (1 piece per 1 jar).

Place hot peppers (whole) in any jar.

Place about 30 pieces on top. pepper - peas and 10 pcs. allspice, 2 bay leaves in each jar.

Boil some water for the marinade, add salt and sugar, and pour in vinegar. Pour the hot marinade into jars and seal with sterile lids.

How to make green tomato salad without sterilization and cooking

If the harvest of green tomatoes disappears, then give them a second life in the form of this salad. It turns out very tasty. And it's not difficult to prepare. The main thing is to follow the step-by-step description.

This salad is also good because it does not require cooking or sterilization. That is, you save your time and thereby preserve the maximum amount of nutrients and taste.

In order for the product to last for a long time, you need to carefully prepare the jars (more on this below) and store them in a cool room or refrigerator.

Ingredients:

  • 1.2 kilograms of green tomatoes (yellow or brown, in a word, unripe)
  • Bunch of fresh parsley
  • Head of fresh garlic
  • 300 grams peeled bell pepper
  • 2 tablespoons vegetable oil
  • A quarter of a small hot pepper (red)
  • Tablespoon coarse salt
  • 2 tablespoons granulated sugar
  • 2 teaspoons nine percent vinegar

Yield: approximately 2 liter jars.

Preparation:

1. Wash the tomatoes very well and wipe them afterwards. Cut them into neat sized slices. The crust from the stalk must be cut off. Place in a large container, such as a plastic salad bowl.

2. Wash the pepper and remove the seeds inside. Cut into 2 parts and remove the white partitions. Now you need to chop it into not too long strips.

For best results, use red pepper. It is sweeter and will look nicer in a jar in contrast to the tomatoes. Send to tomatoes.

3. Peel the garlic and finely chop it with a knife. Do the same with hot peppers. But first it’s better to get the seeds out of it. Send them to vegetables.

4.Finely chop the washed, dried parsley. Send to the bulk. Mix everything thoroughly. All that remains is to add salt, add vinegar and vegetable oil, and add sugar. Now stir everything again. Take odorless oil.

5.Leave to marinate for an hour. I usually stir every 15 minutes during this time. This way the tomatoes and peppers marinate better.

6.While the vegetables are pickling, prepare the jars. They need to be washed and sterilized. Do it the way you are used to doing it. I sterilize them by placing them in a cold oven. I turn on the heat and let it warm up for 15 minutes at 160 degrees. I pour boiling water over the lids separately.

7. First, place the vegetables tightly in the jars. Then pour the juice evenly. Close with lids, maybe nylon ones. Turn it upside down and put it in the refrigerator that way. They must stand there upside down for two days. Then you can turn it over again and put it in the cellar. But you can also store it in the refrigerator.

Salad "Mother-in-law's tongue" with eggplant

If you love eggplants and like spicy food, then try making yourself such a salad for the winter. It will be an excellent addition to winter meat dishes and simple side dishes.

Ingredients:

  • Tomatoes and eggplants – 2 kg each
  • Hot pepper – 2 pcs.
  • Sweet pepper – 500 g
  • Garlic – 1 head
  • Sugar - 200 g
  • Salt – 2 tbsp.
  • Vinegar - 200 ml

Preparation:

Mince the tomatoes and peppers (sweet and hot), put everything in a saucepan and add salt, vinegar, sugar.

  • Vinegar essence - 2 tsp.
  • Water – 1 l

Ingredients:

  • Tomatoes – 3 kg
  • Sweet pepper, onion, carrot – 500 g each
  • Grows. oil - 250 ml
  • Vinegar 9% – 200 ml
  • Sugar – 200g
  • Salt - 100g

Preparation:

Cut the tomatoes into slices, peppers into strips, onions into half rings, and grate the carrots.

Place all the vegetables in a large saucepan, set over low heat and simmer for 20 minutes. (stir occasionally).

Then add sugar, salt, vinegar, oil - stir and boil for 40 minutes.

Prepare sterile jars and lids.

Jars can be sterilized in the oven or in another convenient way, and the easiest way is to simply boil the lids.

Place the hot salad in hot jars and roll up immediately.

Winter salad of green tomatoes, without sterilization

Not long ago, housewives sterilized filled jars, but this was a long and inconvenient process. It’s better to immediately sterilize the jars, then spread out the salad and roll it up.

Ingredients:

  • green tomatoes 6 kg.
  • carrots 1 kg.
  • bell pepper 1 kg.
  • hot pepper 2 pods.
  • onions 1 kg.
  • garlic 3 heads.
  • salt 120 g.
  • sugar 120 g.
  • vinegar 9% 250 ml.
  • refined oil 230 ml.
  • water.

Preparation:

Cut tomatoes and red pepper into cubes. Grate three carrots and hot peppers. Place all the ingredients in a saucepan, add refined oil and place on the fire until it boils. Don’t rush to pour a lot of water right away; the tomatoes will release juice. When the contents boil, add salt, sugar and vinegar. Reduce heat and cook vegetables for a few minutes. Then immediately fill the jars and seal them.

Tomato and cucumber salad for the winter

  • A few sprigs of fresh parsley, to taste

  • Half a kilo of tomatoes
  • A couple of cloves of garlic

Ingredients (for 2 600 g jars):

  • Tomatoes – 700 g
  • Onion, carrot - 1 pc.
  • Hot pepper - to taste
  • Garlic - 1 tooth.
  • Vinegar – 1 tbsp.
  • Sugar – 2 tsp, salt – 1 tsp.
  • Seasonings: basil 2 - 3 sprigs (can be replaced with parsley), pepper - peas 6-10 pcs.

Preparation:

Cut the tomatoes into slices, the onion into rings, grate the carrots, finely chop the hot pepper and garlic.

Place all the vegetables in a convenient bowl, add salt, sugar, seasonings, vinegar - stir well and leave for 5 minutes.

Then place the salad in sterile jars and fill with plain boiling water.

If you see air bubbles in the jars, you just need to press the vegetables a little with a tablespoon so that the air comes out.

Cover the jars with boiled lids and leave for 5 minutes, while preparing the dishes for sterilization.

I bring to your attention a video that I recently came across. I haven't actually tried this recipe yet, but I plan to do so soon. It’s convenient to take out a jar and use it for its intended purpose - make it the basis of some dish or simply eat it as a salad.

Tomato salad with sweet peppers and cucumbers for the winter

If you like tomatoes and cucumbers prepared for the winter, try sealing a salad of tomatoes with cucumbers and sweet peppers in jars. It turns out to be a very simple and tasty vegetable appetizer that will perfectly diversify your winter table and complement any dish.

Ingredients (for 3 liter jars):

  • Tomatoes, cucumbers – 1.5 kg each
  • Sweet pepper – 700 g
  • Onion – 500 g
  • Water – 1 l
  • Vinegar 9% - 8 tbsp. (or 1 tbsp essence)
  • Sugar – 1.5 tbsp
  • Salt (non-iodized) – 1 tbsp
  • Seasonings: hot pepper

Preparation:

Cut the cucumbers into slices and place the bottom layer in clean jars.

Add peppercorns (about 10-12 per jar).

Place the next layer of tomato slices, then onion slices.

Cut the bell pepper into strips and place in the next layer.

Pour a liter of water into a saucepan, add salt, sugar, vinegar - bring to a boil, then immediately pour into jars.

Place the jars for sterilization and cover with clean lids.

Sterilize liter jars for 15 minutes, and 500 ml jars for 10 minutes.

After sterilization, roll up the lids immediately.

Salad with tomatoes for the winter “You will lick your fingers!”

In this recipe we will be filling tomatoes with a variety of vegetables and seasonings.

Ingredients:

  • green tomato 3 kg.
  • carrots 0.5 kg.
  • bell pepper 0.5 kg
  • a couple of heads of garlic.
  • greens (parsley, dill) 1 bunch each.
  • horseradish leaves 2 pcs.
  • ground black pepper 1 tbsp.
  • vinegar 9% 1 tbsp. on the jar.
  • salt one tsp
  • sugar one tbsp.

To prepare the brine, we need 1 liter of water and 1 tbsp. salt.

Preparation:

We thoroughly wash the vegetables and herbs and wait until they dry. Pass the garlic through a press. We clean the peppers from seeds and cut them into pieces, grate the carrots. Make a cut on the top of the tomato so that you can take out the inside with a teaspoon. After extraction, cut the pulp into small cubes and sprinkle with sugar, salt, pepper and garlic and mix everything well.

We fill the empty inside of the tomato with chopped products. Fill the bottle with tomatoes, arranging each layer with herbs, adding 1 tbsp to each jar. l. vinegar.

We make the brine. Bring the water to a boil, add salt, and fill each bottle. Then sterilize for 20 minutes and seal with lids. We turn the jars upside down, cover them with a blanket and wait for them to cool. Then we transfer it to a cool, dark place for storage.

Ukrainian winter salad (without marinade and sterilization)

This simple recipe for preparing preparations for the winter does not even require tedious sterilization of ready-made jars of salad or preparation of marinade. And if you need additional guarantees for long-term storage, you can simply boil the vegetables longer - increase the time of stewing the vegetables by 15-20 minutes.

Ingredients (for 3 500 g jars):

  • Tomatoes – 1 kg
  • Carrots, peppers, onions – 300 g each
  • Hot pepper – 1 pc.
  • Grows. oil – 70 ml
  • Sugar, salt - 2 tbsp.
  • Garlic - 3 teeth.
  • Greens (dill, parsley)
  • Tarragon (to taste) – 1 sprig
  • Vinegar 9% - 2 tbsp. l.

If you like spicy food, but you don’t have hot pepper on hand, you can replace it with simple ground red pepper (for example, ¼ tsp).

Preparation:

Cut the tomatoes into slices, onions and peppers into half rings, grate the carrots, chop the garlic and herbs.

Place all the vegetables in a saucepan, add butter, sugar, salt - mix well and leave for 1 hour.

Place the saucepan on low heat and immediately stir everything again and cook for 15 minutes. (after boiling, stirring).

Then pour in the vinegar and leave to simmer for another 5 minutes. (You can increase the time if desired).

Place the boiling salad in sterile jars and immediately cover with boiled lids.

Recipe for tomatoes with mustard for the winter

And here there had to be a unique recipe that would allow storing tomatoes until the New Year (3-4 months). This recipe, where tomatoes are sprinkled with dry mustard, was very popular several years ago, but it still arouses interest among many. However, this recipe doesn't work. Tomatoes literally rot in a month and stink wildly, DO NOT EVEN TRY and do not translate the products like me and many others who believed this method and the authors who broadcast in their videos))
