Potato sorcerers with minced meat are one of the most delicious dishes of Belarusian cuisine. Initially they consisted of dough with meat filling. Later, sorcerers were transformed into potato pancakes with filling. No flour or eggs were added to the potatoes. The necessary elasticity of the mass was given by natural starch, which settled at the bottom of the vessel after excess moisture was squeezed out of the potatoes. You can cook sorcerers not only with meat. The filling can be very varied, depending on the personal preferences of the hostess.

“Sorcerers” in Belarusian

The classic combination of meat and potatoes in cooking is used in a wide variety of variations. I just want to share one interesting dish with you. If you haven't tried it yet, I recommend it!

Ingredients:

  • Potatoes – 1 Kilogram
  • Minced meat - 300 grams (+ onion and garlic optional)
  • Salt and pepper - To taste
  • Vegetable oil - To taste (for frying)
  • Egg – 1 piece

How to cook:

1. Wash the meat (pork + beef - ideal), mince with onion and garlic. Add salt and pepper to taste. Mix thoroughly. 2. Peel the potatoes and grate them. The following ingredients will be required:

  • medium potato tubers (from 10 to 12 pcs.);
  • dried mushrooms, preferably white (60 g);
  • wheat flour (5 tbsp.);
  • starch (about 1 tbsp);
  • a pair of onions;
  • sunflower oil;
  • seasonings

The process of preparing sorcerers from potatoes with minced mushrooms:

  1. The mushrooms are pre-soaked in water (no more than 4 hours) and cooked until tender.
  2. The mushroom broth is passed through a sieve, and the mushrooms themselves are very finely chopped and fried with onions and spices.
  3. The potatoes are boiled and turned into a smooth puree.
  4. Pour flour and starch into it and mix.
  5. Place the prepared filling into the potato cakes and carefully seal the edges.
  6. Next, they are rolled in flour and fried until a nice golden crust appears.

For minced meat, you can use both fresh and frozen mushrooms.

Leave half the grated onion for minced meat. Season with salt and pepper mixture.

Mix and form small balls with your hands, about the size of a quail egg. This must be done in advance so that by the time the sorcerers are sculpted, everything will be at hand. For now, place the minced meat in the refrigerator.

Grated potatoes contain a lot of juice.

You need to squeeze it out with your hands or with gauze and set it aside.

After a few minutes, drain the liquid; starch will settle at the bottom of the bowl.

It is important to leave some juice in the dough; the moisture should be felt.

Remove the starch from the bowl, break the egg, add flour and salt.

Mix. If the dough is too liquid, add a little more flour.

Place a frying pan with vegetable oil on the fire and heat well. Now you can start sculpting the sorcerers. Take about a tablespoon of potato dough into your palm. Make a flat cake out of it, put a minced ball in the center.

Recipe

Take large potatoes and peel them

Ideally, three on a potato grater, but I was lazy and grated it on a fine cheese grater, which is also quite appropriate

Next, squeeze the grated potatoes through several layers of gauze. it should be a dry mass

Squeeze the potato juice into a separate bowl. after it settles a little, drain it, and starch should remain at the bottom

We add this starch to our squeezed potatoes

Add a glass of flour, one chicken egg, salt and knead our potato mixture

Finely chop four onions and divide in half. We add one part raw to the minced meat immediately

Fry the other part of the onion and also add it to our minced meat.

Here is our minced meat. Don't forget to add pepper and salt to taste

We take our potato mass and knead it into a pancake, on which we spread our minced meat
