How to make a classic chicken salad

We use baked, smoked or fried chicken.

Remove the skin from the chicken, separate the meat from the bones, then use your hands to separate the breast, thighs and wings into thin strips. They don't all have to be the same size.

Preparing the filling. Pour extra virgin olive oil and vinegar (half the amount of oil), salt and pepper into a small bowl. Stir with a fork until the sauce is smooth.

We tear lettuce leaves into a deep salad bowl with our hands.

Sprinkle with a small amount of sauce and place chicken pieces on top.

Easy and simple chicken salad recipe without mayonnaise

This quick and easy cold chicken salad features an inventive combination of flavors: grilled chicken breast is combined with crispy, lightly fried white onions, boiled potatoes, black olives and infused lemon wedges.

Cooking time 30 minutes.

Ingredients for 4 servings

  • 400 gr. chicken breast
  • 2 white onions
  • 2 large lemons
  • 40 gr. pitted olives
  • 2 boiled potatoes
  • extra virgin olive oil
  • celery leaves (or parsley)
  • salt
  • pepper
  • 250 gr. water
  • 250 gr. Sahara

Preparation

We start cooking by frying the onions.

Peel the onions and cut them into thin quarter rings. Pour some oil into the pan and add the chopped onion.

Fry by adding salt and pepper. Cook until brightly translucent, without overcooking, the pieces should remain crispy. After this, put it in a separate plate and let it cool.

Meanwhile, prepare sugar syrup in a 1:1 ratio of 250 grams of water and 250 grams of sugar. We cut the lemons into thin slices; when the syrup boils, put the lemon slices into it.

Cook for 5 minutes, then strain through a sieve and let cool.

Cut the chicken breast into strips and bake on the grill (electric or cast iron) until cooked. Transfer to a plate and let cool. Meanwhile, peel the boiled potatoes and cut them into small pieces. When all the ingredients are ready, assemble the salad.

Place chicken, olives, onions, “candied” lemon slices, chopped celery leaves and potatoes in a large salad bowl.

Season with olive oil, salt and pepper and serve with toasted toast in the oven.
