Today I am preparing tomatoes for the winter in their own juice. Why? Because they turn out very tasty, and making them is as easy as shelling pears. Their main advantage is that you can do it yourself. Without chemicals and various additives. And they will retain their taste and aroma.
How nice it is to open such preparations in winter and enjoy their taste with your family. And the juice and fruits will be gone from the jars before you have time to blink an eye. This is a natural product and healthy.
They can be prepared with or without sterilization. With vinegar or citric acid. The choice is yours. Their main advantage is that you can do it yourself.
Without sterilization
The first simple recipe is sweet tomatoes without sterilization.
For a liter jar we will need:
- Small tomatoes - 700 grams;
- Large - 1 kilogram;
- Salt - a tablespoon;
- Sugar - 1.5 tablespoons;
- Vinegar - a tablespoon.
How to do:
- To prepare tomato juice, cut large fruits crosswise on top, lower them into boiling water for a few seconds, then pour cold water over them. Now the skin can be easily removed.
- Cut peeled tomatoes into slices and place in a deep bowl. Using a blender, turn them into a homogeneous mass.
- Add salt and sugar and wait until it boils. Cook with constant stirring, skimming off the foam, until it completely disappears. Before removing, add vinegar.
- We pierce small fruits with a toothpick in the area of the stalk to avoid cracking when in contact with hot water.
- We put them in jars, fill them with boiling water, and let them sit for fifteen minutes.
- Drain the water and fill the tomatoes with boiling tomato sauce to the very top. Roll up, turn over, cover warmly. After complete cooling, lower the workpiece into the basement.
Advice! If the fruits have a dense, tight skin, then it is advisable to pour boiling water over them twice.
Tomatoes in tomato juice for the winter without sterilization - a simple recipe
Preparations for this recipe retain almost all vitamins. It is good to prepare it in liter jars. Everything is eaten without a trace, we won’t strain the juice and you can use it when frying seasoning for borscht, we just drink it with a bang. So think about it, housewives. The choice is always yours. And we will marinate them with citric acid.
Ingredients:
- 3.5 kg tomato (of which 2 kg for juice)
take a liter of juice
- 1.5 tbsp. spoons of sugar
- 1 tbsp. l. not full salt (even a little less)
- 2 mountains allspice
- 1 tooth garlic
- 1/2 tsp. citric acid (1 tbsp vinegar)
Cooking method:
Wash the fruits (those that are used for juice), cut off any spoilage and cut them into pieces, then pass them through a meat grinder. Then we measure how many liters of mass we get.
Add chopped garlic and everything else according to the recipe (except lemon) and mix everything.
And let it cook for 20-30 minutes, stirring occasionally. Before turning it off, taste it. Maybe you need to adjust something to your taste. At the end of cooking, add citric acid (according to calculations) into the mixture.
In the meantime, boil water and pour it over the washed and placed tomatoes in sterile jars. And leave them for 15-20 minutes, cover them carefully with a towel. And they will stand like this until the juice is cooked.
And as soon as the tomato sauce boils for the allotted time, drain the water from the jars and fill them with aromatic sauce. Check that there are no voids. Then you already know. Roll up the lids and check for leaks.
We hide it in a blanket and leave it there to gradually cool down. Can be stored indoors, but better in a cool place. Bon appetit.
With sterilization
And this is another delicious recipe for tomatoes for the winter in their own juice that you’ll lick your fingers, only with sterilization.
Products:
- 2 kilograms of overripe tomatoes;
- 2.5 kilograms of small ones, maybe cherry ones;
- Head of garlic;
- 50 grams of sugar;
- Salt – 75 grams;
- Laurel leaf;
- Peppercorns.
How to make for the winter:
- Wash large tomatoes, remove stems and damage. Twist and press through a sieve to remove seeds and skin.
- Boil the resulting puree with salt and sugar for 5 minutes, skimming off the foam.
- We fill the sterilized jars with small tomatoes, pierced with a toothpick. In each we put chopped garlic, a couple of peppercorns and a laurel leaf.
- Fill the jars with boiling water and let sit for five minutes. Drain the water, pour in the boiling juice, cover with boiled lids.
- Place jars of tomatoes in a saucepan with hot water and a napkin at the bottom. Sterilize for 10 minutes.
Now you can roll it up and cover it with a blanket until it cools. Then place it in the pantry.

By easily changing the list of different spices, you can always get different unusual flavors of preservation.
Tomatoes in their own juice with tomato paste
The recipe for tomatoes in their own juice with tomato paste is quite easy to prepare. But the rolls turn out delicious and beautiful.
Have to take:
- 150 grams of tomato paste;
- 2 liters of water;
- Laurel leaf;
- 100 grams of sugar;
- A heaped teaspoon of salt;
- Ground black pepper;
- A piece of hot pepper;
- 1.5 kg of medium-sized tomatoes.
How to cook with tomato paste:
- First let's boil the water. Pour some boiling water, add tomato paste, mix thoroughly. Mix the diluted paste with the rest of the water. Add spices and boil for 5 minutes.
- Pierce well-washed vegetables with a fork.
- We fill the prepared jars with them. Fill with boiling pouring liquid up to the neck.
- We roll up our winter preparation, wrap it warmly, let it cool completely and put it into storage.

The most delicious recipe with the addition of tomato paste
There are many ways to preserve a rich harvest. We have already looked at recipes for making ketchup, fiery adjika, and horseradish. The recipe for canning tomatoes in their own juice is also good. Here's a snack for you, and juice for you. And all this pleasure from one can.
Cooking method:
- We wash four 1.5-liter jars with Feri dishwashing detergent, laundry soap or soda. Who's used to it? All 3 methods are good.
- Sterilize glass containers in the microwave.
- Place the fleshy sweet tomatoes with greens (Trio, Easter egg, Igranda) aside. These varieties are perfect for placing in jars. The fruits of the listed varieties will not burst due to high temperatures, it has been verified.
- Fill glass containers with vegetables.
- Boil 4 liters of water. Pour boiling water over the tomatoes and cover with lids. We note the time - 10 minutes.
It took 3 liters of water to fill all the jars. This means we need to prepare 3 liters of tomato juice. Logical?
- Take 1.7 liters of tomato paste and the same amount of water, 3 teaspoons of sugar, 3 table salt, 20 black peppercorns, 2 bay leaves. Place all ingredients in a saucepan and boil.
- 10 minutes have passed. It's time to drain the water from the jars and pour in the prepared sauce with spices. But first we’ll pour 9% vinegar into the jars. For a liter jar - one teaspoon, for a 1.5 liter jar - one dessert spoon.
Ready? Close the jars tightly with lids. Traditionally, we let our winter preparations cool upside down.
Skinless tomatoes in juice
The recipe for tomatoes in their own juice for the winter is unusual, since the preparations are cut and without filling. My mother-in-law shared this recipe with me.
Products per liter jar:
- Tomatoes;
- 5 cloves of garlic;
- 8 pieces black peppercorns;
- 3 cloves;
- A teaspoon of salt;
- 2 full teaspoons of sugar;
- Citric acid on the tip of a knife.
How to do:
- Wash the jars of soda and rinse well with running water. Place in the oven for 15 minutes.
- Place garlic, pepper, cloves in jars, add sugar, salt, and citric acid.
- Large tomatoes are suitable for this recipe, since we will cover them with chopped ones. Tomatoes must be peeled and without peel. So that the process of removing the skin does not take much time, we put the tomatoes in boiling water for a minute and then send them into cold water. Now we can remove the skin without any problems. Cut the tomatoes into two halves and put them in jars with spices.
- Prepare the saucepan for sterilization. Cover the bottom with a towel, pour in water, and heat slightly. Carefully place the jars covered with lids. Sterilize at a gentle boil.
- After five minutes, the tomatoes will settle and release juice. Now we need to add the tomatoes to the top of the jars.
- We will add tomatoes until the jar is filled to the top with juice.
- Sterilize for another fifteen minutes.
- You can roll tomatoes using their own juice.
After the jars have cooled, we take them to the cellar. Now you will always have delicious tomatoes on your table.
Canning tomatoes will not take much time, but the taste will be excellent.
With horseradish and garlic
We take:
- 8 kilograms of tomatoes;
- 5 liters of homemade tomato juice;
- 100 grams of salt;
- 200 grams of sugar;
- Horseradish root;
- 0.5 kilograms of sweet pepper;
- Head of garlic;
- 2 pods of hot pepper.
How to cook:
- For pickling, choose small, firm tomatoes. We wash them, make several punctures, and put them in clean, sterilized jars.
- Fill with boiling water and heat the tomatoes for thirty minutes.
- Grind horseradish root, hot and sweet peppers, and garlic in a blender. Place the spicy pulp in tomato juice, add salt and sugar. Cook the sauce over low heat for twenty minutes.
- Drain the cooled water from the vegetables and pour in the sauce.
- Now you can roll up the tomatoes with horseradish and garlic.
After cooling, we take it to the cellar.
Recipe without vinegar
Now I will tell you how to cook tomatoes in their own juice for the winter without vinegar with bell pepper.
According to the recipe we will need:
- 2 kilograms of tomatoes;
- 1.5 kilograms of tomato for juice;
- A bunch of parsley;
- 0.5 heads of garlic;
- 2 sweet peppers;
- A tablespoon of salt;
- 2 tablespoons sugar;
- Peppercorns.
How to close:
- We wash the vegetables and pierce them with a skewer. Peel the pepper from seeds and cut into four parts.
- Place vegetables, herbs, and garlic cloves in layers in prepared sterilized jars. Pour boiling water over them for half an hour.
- At this time, prepare tomato juice using a juicer. Add salt, sugar and black pepper to it. Boil for about ten minutes.
- Drain the water from the tomatoes and immediately fill them with tomato juice.
- Sterilize jars of vegetables for fifteen minutes. Let's roll up.
Tomatoes in their own juice without vinegar are ready.
Spicy tomatoes in their own juice
We take:
- 3 kilograms of small dense tomatoes;
- 2 kilograms of soft tomatoes;
- 60 grams of salt;
- 60 grams of sugar;
- A small pod of hot pepper;
- 3 cloves of garlic;
- Horseradish root;
- Black pepper, allspice peas.
How to cook:
- Place washed small tomatoes in sterilized jars.
- Cut large tomatoes into slices, put them in an enamel container, cover with a lid and put on fire. Heat the vegetables until hot, but do not bring to a boil. Grind soft vegetables using a sieve.
- Pour salt, sugar into the tomato juice, add peppercorns, grated horseradish, garlic, finely chopped pepper without seeds. Boil the tomato sauce, pour in the tomatoes.
- Sterilize the jars for ten minutes and roll them up.
Cool the rolls under a warm blanket. We store it in the basement.
How to cook tomatoes in their own juice for the winter without vinegar
The easiest way, and a minimum of ingredients, just tomatoes. But how delicious they are. Do it and enjoy the winter.

Substandard vegetables are suitable for juice. We wash them, cut off spoiled areas and stems. Then we put them in a saucepan and put them on the fire to cook.
After this, strain through a fine sieve. And in the end we will get extraordinary juice. Let's leave it aside for now. Next we will need harder fruits.
Rinse them under the tap with cold water. And dry it slightly.
To prevent their skin from bursting, we will pierce them in several places with a toothpick.
Place them in clean glass containers. Pour boiling water over it, just be careful and let it warm up for 15 minutes.
While our preparations are heating up, put the juice on the fire and boil for 5 minutes.
After this, drain the water from the containers and fill it with a beautiful red filling.
Cover with metal lids. We hide it in a blanket until it cools down.
