Cut the chicken into small pieces, pour red and black pepper, ground cardamom and nutmeg into the meat, add wasabi, a little vinegar and a little olive oil, 10 cloves of crushed garlic, salt and mix well. Cover the contents with a plate and place the weight. Leave under pressure for half an hour.
  2. Cut the onion into small squares, peppers, tomatoes and cucumbers into small cubes, mix, add salt and pepper. If desired, you can pour in a little vinegar and leave to marinate a little. Fried zucchini and eggplant are sometimes added to vegetables.
  3. Now you need to make the sauce. First, pour kefir into a suitable container, then add mayonnaise little by little, stirring constantly. Next, add the remaining 10 cloves of crushed garlic, chopped dill and squeeze the juice of one lemon. Mix all this well.
  4. Remove the meat from the marinade, place in a frying pan and pour in sour cream until the meat is completely covered. Simmer over low heat until the sour cream has partially boiled away and acquired a dense consistency. Next, stir the contents of the frying pan, turn the heat up to high and cook with constant stirring, avoiding burning.
  5. When the meat is fried until red, remove the pan from the stove, mix it with vegetables and pour over the sauce. Wrap the resulting mass in pita bread while it is hot.

Yogurt sauce for shawarma

You will need:

  • Large bunch of basil, cilantro or other aromatic herbs
  • 50 g parmesan
  • 3 cloves garlic
  • 150 ml olive oil

Wash and dry the greens, grate the Parmesan cheese and put everything in a blender. If desired, add a handful of pine or any other nuts. Grind the sauce until smooth.

About meat

As for the meat for Arabic shawarma, there are some subtleties here. The fact is that for this dish you cannot take the very top layer of meat, which is fried on a vertical grill. This layer is removed, and the next one, which is under it, is already used for cooking. Also, you should not put meat in contact with the skewer in real shawarma. It is cut in a very thin layer, strictly along the entire length from top to bottom, then cut into smaller pieces. Before skewering the meat, it is marinated overnight.

When all the components: meat, sauces, fillings are wrapped in pita bread, put the shawarma on the grill for 1 minute. Only after this the dish is ready.

Shawarma sauce with curry

  • 200 ml milk

Shawarma sauce with mango

In Arabic and Israeli cuisine, this sweet-savory shawarma sauce is called amba.

  • 2 tbsp. olive oil
  • 0.5 tsp each coriander, cumin, curry, turmeric and chili flakes
  • 2 cloves garlic
  • 60 g sugar

  1. Prepare all the necessary ingredients for the dish. Remove sour cream, mayonnaise and kefir from the refrigerator. Peel the garlic and wash under running water. Dry with a paper towel.

  2. Take a deep bowl and mix mayonnaise, sour cream and kefir in it. Finely chop the garlic with a knife blade and throw it into the same container.
