The salads presented in this selection are not only tasty, but also interesting because they contain no meat at all. However, for this reason, the dishes never cease to be very appetizing and satisfying.

If it is decided that meat salad should appear on the table, you can safely add boiled chicken or smoked sausage to any of the recipes.

For corn, it is recommended to choose jars with production dates in late summer and fall. It is in them that the manufacturer places corn kernels from a fresh harvest (and not dried raw materials).

Simple recipe

This salad of corn, tomatoes and cucumbers can be dressed with mayonnaise and sour cream, vegetable oil, or even served without dressing at all. It will help everyone discover the newest taste of familiar products and diversify their daily menu.

We take:

  • one onion;
  • one cucumber;
  • one corn;
  • three tomatoes;
  • 1 tbsp. l. sour cream or mayonnaise;
  • a couple of sprigs of parsley;
  • salt (to taste).

Prepare a salad of corn, tomatoes and cucumbers as follows:

  1. Clean the cob of hairs and leaves. Corn silks are useful on the farm, so there is no need to throw them away. Place them in the shade and dry them.
  2. Place the peeled cob in a saucepan and pour boiling water over it. Cook the young corn over moderate heat for 20 minutes, lightly salt it at the end of cooking - this will make the taste even more aromatic and brighter.
  3. Remove the cooked corn from the water and cool, then use a knife to carefully cut off the kernels.
  4. Wash the fresh cucumber and cut off the stems. Chop the vegetable into strips, cubes or thin rings, as desired.
  5. Wash the ripe tomatoes, dry with a cloth and cut into slices or cubes.
  6. The delicate taste of cucumbers and corn is well emphasized by green onions, but you can also use onions. Peel it and crumble it.
  7. Season the salad with mayonnaise or sour cream, add chopped parsley or dill and serve immediately so that the vegetables do not lose their freshness.

This salad can also be made from canned fruits. But in summer, take only fresh vegetables.

Salad recipe with corn, cucumbers, tomatoes, chicken

Adding boiled chicken to a tomato and cucumber salad makes the dish tasty and healthy. For this salad you will need:

  • cucumbers – 350 – 400 g;
  • tomatoes – 350 – 400 g;
  • green onions – 30 g;
  • hot pepper and ground black pepper to taste;
  • boiled chicken meat without skin and bones – 200 g;
  • 1 can of corn;
  • garlic;
  • a sprig of cilantro and (or) basil;
  • salt;
  • vegetable oil – 50 ml.

Cooking steps:

  • Tomatoes, cucumbers, onions and herbs are washed well first. Allow them to dry from moisture.
  • The ends of fresh cucumbers are cut off and cut into cubes.
  • The tomato is cut off where the stalk was and also cut into cubes.
  • Boiled and cooled chicken in advance is cut in much the same way as cucumbers and tomatoes.
  • Finely chop the onion and herbs with a knife. If there are no cilantro and basil lovers at home, you can take parsley or dill.
  • Open a can of canned corn and drain all the water.
  • Add two types of pepper to taste to oil, preferably odorless, and squeeze out one or two cloves of garlic.

How else can you make a salad from corn, cucumbers and tomatoes? Take:

  • 2 tbsp. l. rice vinegar;
  • one cucumber;
  • a quarter cup of cilantro;
  • 1 tbsp. l. lemon juice;
  • two tomatoes;
  • salt (to taste);
  • a cup of corn;
  • 2 tbsp. l. olive oil;
  • 1/2 pcs. jalapeno;
  • 30 g feta cheese.

Preparation method:

  1. Cut cucumbers and tomatoes into slices and place in a salad bowl.
  2. Add chopped jalapeno and corn.
  3. Mix lemon juice, rice vinegar, salt and olive oil in a bowl. Season the food.
  4. Add feta and cilantro, stir.

Serve delicious food to the table. By the way, this great salad goes well with poultry.

Another recipe

Serve this salad as an independent dish or with meat. You will need:

  • two cucumbers;
  • three tbsp. l. vegetable oil;
  • a bunch of lettuce leaves;
  • four tomatoes;
  • 1 tbsp. l. lemon juice;
  • 100 g canned corn;
  • 1 tbsp. l. mild mustard;
  • a mixture of peppers (to taste);
  • salt (to taste).

Prepare the dish like this:

  1. Wash the vegetables. Cut the tomatoes into slices, cucumbers into strips.
  2. Wash the lettuce leaves, dry with a cloth and tear with your hands.
  3. Place tomatoes, cucumbers, sweet corn and lettuce into a deep bowl.
  4. Make the dressing. To do this, combine vegetable oil, mustard, lemon juice, a mixture of peppers and salt, stir.
  5. Pour the dressing over the salad, stir and serve.

Salad “Good mood”

You will need:

  • a can of canned corn;
  • one bell pepper;
  • vegetable oil;
  • two tomatoes;
  • salt;
  • one fresh cucumber;
  • freshly ground pepper.

Follow these steps:

  1. Wash and dry the vegetables.
  2. Peel the cucumbers and cut them into tiny cubes.
  3. Cut the bell pepper the same way.
  4. Cut the tomatoes into cubes too.
  5. Place cucumbers and tomatoes in a salad bowl, add canned corn and bell pepper.

With eggs and fresh cabbage

We present to your attention a delicious salad of tomatoes, cucumbers, eggs, corn and cabbage. This light snack is tasty, crispy, and its aroma is appetizing. To make three servings, take:

  • one tomato;
  • a couple of boiled eggs;
  • two cloves of garlic;
  • three leaves of young white cabbage;
  • half a fresh cucumber;
  • 0.5 bunch of green onions;
  • 0.5 cans of canned corn;
  • 0.5 bunch of dill;
  • three tbsp. l. lean oil;
  • salt (to taste);
  • ground black pepper (to taste).

Prepare this salad of cucumbers, tomatoes, cabbage, corn and eggs like this:

  1. Shred the cabbage.
  2. Add tomato and cucumber, cut into strips, to the cabbage.
  3. Cut the boiled eggs into strips and add them to the vegetables.
  4. Chop the greens, chop the garlic and add to the salad.
  5. Add corn, add vegetable oil, pepper and salt, stir.

Serve the finished salad immediately.

Salad with cucumber, corn, tomatoes, sausage

In the summer, a salad of fresh vegetables with corn and sausage can easily replace winter meat salads. It will require:

  • doctor's or milk sausage – 300 g;
  • tomatoes – 2 pcs. weighing 200 - 250 g;
  • cucumbers – 2-3 pcs. weighing 200 - 220 g;
  • onion weighing 80 - 90 g;
  • mayonnaise – 150 – 180 g;
  • 1 can of corn;
  • egg – 2 pcs.;
  • ground pepper to taste.

Recipe:

  • The eggs are first hard-boiled, cooled, peeled and cut into slices.
  • The sausage is cut into small cubes.
  • Wash tomatoes and cucumbers well.
  • Tomatoes are cut into thin slices, and cucumbers are cut into cubes.
  • Remove all liquid from the can of corn.
  • The onion is peeled and cut into thin half rings.

  3. Combine all the vegetables and herbs in a salad bowl.

Salad "Crab sweets"

Not many people know how to make a salad with corn, cucumbers, tomatoes and crab sticks. Take:

  • one tomato;
  • 125 g canned corn;
  • one cucumber;
  • 200 g crab sticks;
  • mayonnaise (to taste);
  • 250 g canned fish;
  • three hard-boiled eggs.

For this recipe, use canned fish in its own juice or oil. Fish in tomato is not suitable here. Prepare this dish like this:

  1. Grate the boiled eggs on a coarse grater.
  2. Mash the canned fish thoroughly with a fork.
  3. Cut the tomato and cucumber into large cubes.

Ingredients:

  • 230 g ricotta cheese;
  • natural yogurt;
  • 130 g canned pineapple;
  • vegetable oil;
  • 2 fresh eggs;
  • salt;
  • 6-8 strips of bacon for frying;
  • 120 g sun-dried tomatoes;
  • 1 large fresh sweet apple;
  • 70 g wild rice;
  • 160 g canned corn.

Preparation:

  • cut the pineapple into cubes;
  • fry the bacon in oil and cut into large pieces;
  • peel and cut the apple into strips;
  • break the eggs, stir, add salt and bake 2 egg pancakes in a greased frying pan, then roll them and cut them into “noodles”;
  • Peel the tomatoes and chop into crumbs;
  • Boil rice in salted water;
  • Break the ricotta into pieces with a fork;
  • mix corn, apple, pineapple, rice, egg pancake, bacon and tomatoes, season the salad with yogurt, loosen and spread the ricotta on top. Take it to the table.

Calorie content

What is the calorie content of a salad made from summer vegetables? It should be noted that this indicator is greatly influenced by refueling. Any dietary dish can be transformed into a threat to gain excess weight if you choose the wrong sauce. To understand for sure which salad is best to make, you need to know the calorie content of all components, including dressing. It is known that 100 g of cabbage, cucumber, tomato and corn salad contains:

  • 30.44 kcal (127 kJ) – 1% of the daily value;
  • 1.73 g proteins – 2%;
  • 5.01 g carbohydrates – 1%;
  • 0.27 g fat – 0.25%.

Depending on the origin of the food, the nutritional value may differ from the actual value. The value is given for a diet based on 2000 kcal/day. As you can see, this salad, despite its low calorie content, contains a large amount of proteins and carbohydrates.

Sometimes I cook a dish without a recipe. I just take out of the refrigerator everything that is suitable for my idea, and on the spot I come up with the composition of the future dish. This is what I think many housewives do, especially those who know how to correctly combine ingredients with each other and are not afraid to do this. My next culinary impromptu turned out to be so successful that I wrote down the recipe and now I prepare this salad of tomatoes, corn and cheese according to my own recipe, sometimes deviating from the basic composition, adding new flavors to it. The basis for this snack is ripe tomato fruits, which go perfectly with spicy green onions and tender sweet corn. For a refined taste, I add soft milk cheese like “Fetax” or any similar one. There are options for dressing this salad with different sauces. Most often, I just use sour cream, but when I’m in the mood, I can make my favorite mayonnaise or hollandaise sauce, which only enhance the taste of such a dish. A light, zesty salad can be served as a snack for lunch along with toasted bread. What is typical, the dish is vegetarian and low-calorie, so it can be served during fasting or if you are on a diet. The recipe is for 2 servings.


Ingredients: - ripe tomato fruits - 2 - 3 pcs., - sweet corn - 1 can, - green onions - 1 bunch, - Fetaxa milk cheese - 150 g, - sauce (sour cream or mayonnaise) - 100 g, - salt, spices - to taste.

Step-by-step recipe with photos:


We sort through the green onions, discard the rotten feathers, and rinse the rest with cold water. If the greens have wilted a little, you can add a few ice cubes to the water to “revive” them. Then dry the onion with a towel and chop it very finely with a knife. I used pre-prepared, frozen onions.


Cut fetax milk cheese into neat cubes, no larger than 1 cm in size, otherwise they will fall apart.


We wash the tomato fruits in warm water. Then we cut them in half and cut out the place where the stalk is attached with a small amount of pulp - this is where all the harmful pesticides in purchased fruits are located. After this, we cut the tomato as we like best, depending on the shape and consistency of the fruit - into cubes or slices.


Now open the jar of corn, drain the liquid from it, and pour the grains into the salad bowl.


Mix the salad, add salt, favorite seasonings and sauce.


Serve immediately before the tomatoes release a lot of juice.
