Potato balls with cheese

I would like to offer you a good recipe for a side dish of potatoes in the form of cute balls that are deep-fried. Perhaps at first glance it will seem somewhat unusual and uninteresting to someone, but believe me, this is only until you try it.

As the main ingredient for preparing this dish, you can use potatoes already boiled in their skins (or without it) or ready-made mashed potatoes, which are often left over from previous meals. But in the selection of additional ingredients you can always show your imagination. A variety of additives may be appropriate here: pre-boiled beans and/or carrots, chopped fresh or dried herbs, any spices (turmeric, paprika, cumin, chili, suneli hops, cumin, etc.), mayonnaise.

These potato balls with cheese are equally suitable as a side dish for fish or meat dishes, as well as for vegetable or mushroom dishes.

Another important point: since we will be deep-frying the potato balls, do not forget to refresh your memory about the rules for working with boiling oil.

Ingredients:

  • 5 small potato tubers;
  • 100-150 g of hard cheese (if not, processed cheese will do);
  • 2 medium-sized cloves of garlic or 1 large;
  • 1 egg (preferably large or 2 small);
  • spices - to taste;
  • about half a glass of wheat flour and breadcrumbs;
  • 1.5 cups or a little more vegetable oil;
  • 1 dessert spoon of semolina.
  • The preparation time for the side dish is 30 minutes (if you use a microwave oven to cook the potatoes).
  • Yield: 3-4 servings of side dish.

How to cook:

To speed up the cooking process, bake the potatoes in the microwave. To do this, wipe the thoroughly washed vegetable tubers dry and pierce them in several places (3-4) with a fork a centimeter and a half deep. Then place it on a plate, cover with a lid (we only use dishes that are suitable for use in this device) and bake for 6-7 minutes at a power of 800 W.

Remove the baked potatoes from their jackets and grate them on a medium-mesh grater. We use the same grater to grate cheese and garlic.

Place the prepared ingredients in a bowl and mix. Let's add spices and a raw egg to the resulting mixture, then add literally a dessert spoon of flour, crackers and semolina.

After thoroughly mixing, leave the mixture alone for seven to ten minutes so that the dry ingredients, added last, have time to slightly soften. After all the manipulations, we ended up with a fairly dense potato and cheese mass with additives. Roll it into small balls (the optimal size is about the size of a walnut) and roll in a breading of breadcrumbs and flour.

In a small saucepan, heat the vegetable oil until it clicks. Dropping several balls into it (so that they are not crowded), over moderate heat, fry them thoroughly until golden brown.

Remove the finished potato balls with cheese from the boiling oil using a slotted spoon or a small spoon with holes and immediately place them on paper napkins with which to cover the plate - this way our side dish will get rid of excess fat.

Now all that remains is to decide what to serve this side dish with, and you can start the meal.

Bon appetit!!!

Types of fillings for potato balls

There are different options for filling potato balls. It can't just be cheese. Ham is often added to it. It also happens that housewives prefer to use minced meat for the filling, which does not spoil the taste of the dish. Mushrooms are suitable for this purpose, but they must be fried first. Seafood fans will appreciate potato balls with shrimp or canned tuna.

For those who are on a diet or are not a fan of fried foods, baking is an alternative. The cooking principle is the same, but after the balls are planned, they are baked. To do this, the oven must be preheated. It makes sense not even to grease the baking dish with oil: this will result in a dish with less calories. But in such a situation, it makes sense to make the filling very juicy. Otherwise the potato balls will be dry.

There are several details, knowledge of which will help create a dish even tastier. One of the secrets is jacket potatoes. If you take this as a basis, the balls will keep their shape perfectly. This is due to starch, which does not have the opportunity to boil down during cooking. Follow the sequence: first dip the balls into beaten eggs, and only after that into breadcrumbs. It is advisable to serve freshly prepared. Then the taste will be most pronounced.
