What exactly are potato zrazy? It's essentially potato dough. It consists of 80-90% potatoes. Flour, eggs and spices give it the consistency of the dough. This dough is used to make a kind of cutlets, which are filled with various fillings. It could be meat, as in our case. Or vegetables, rice, eggs, cheese, herbs, mushrooms, root vegetables and so on. They are served as a complete dish with the addition of sauce or as a side dish.
General cooking rules
To prepare delicious zrazy, you need to purchase in advance tasty, good, high-quality products, from which we will cook accordingly. You will need to choose minced meat and potatoes. With the second product, everything is, of course, simpler, so let’s deal with the minced meat then.
How to choose minced meat:
- First of all, pay attention to the light. It should be bright - both pork and beef. If the minced chicken is minced, its color will be pale pink.
- The minced meat should be shiny; dullness means the product is stale.
- Trays with liquid. We often see bloody puddles under the minced meat. You can be calm about them, as this is a normal phenomenon. But dry pallets should be cause for concern. This means that the minced meat is made mainly from tendons.
- The smell should be pleasant, without adding spices, etc. If you smell the aroma of spices, then they have already tried to correct the spoiled smell of meat.
The potatoes you need to choose are those that are white. This applies to both the peel and the tuber itself inside. These potatoes are crumbly and are perfect for mashed potatoes, as they boil well.
Potato zrazy with meat - we cook with pleasure
Ingredients:
- eggs - 1 piece;
- onion - 1 piece;
- minced meat - 355 g;
- flour - 45 g;
- black pepper - 3 g;
- potatoes - 1000 g;
- sunflower oil - 210 ml;
- salt - 15 g;
- crackers - 75 g;
- carrots - 1 pc.
Just potatoes with meat. Sounds like a complete hot dish. Having prepared it, you can really serve it as a “second dish” and not bother with either the meat part or the side dish.
How to cook:
- Heat a frying pan with oil and put the minced meat there and fry it, breaking it up with a wooden spatula so that the mass becomes crumbly; put the minced meat there and fry it. Simmer until color changes. The minced meat will become lighter.
- While the meat is stewing, remove the thin skin from the onion and cut off its roots. Wash the onion head and cut into small cubes.
- Add the onion to the meat, add black pepper and salt. Peel the carrots, wash them and grate them using a grater.
- Add the carrots to the frying pan, simmer everything together until fully cooked, and then remove from the stove.
- Peel the potatoes and coarsely cut into equal slices or cubes. Rinse the potatoes to remove the starch from them, add water and place on the stove to cook. When the water boils, salt it and cook the potatoes until tender; salt it and cook the potatoes until tender.
- Drain the water from the finished potatoes and crush them with a masher.
- Add the egg, mix the mass and add flour; mix the mass and add flour.
- Knead into a smooth, homogeneous dough so that it does not fall off the spoon if you turn it over; smooth, homogeneous dough.
- Form small cakes from the potatoes, place the filling in the center; form small cakes.
- Roll up the potato dough, placing the filling inside; fry in a frying pan with butter.
- Roll the finished cutlets in breadcrumbs and fry in a frying pan with butter until golden brown.
Tip: ready-made zrazy can also be rolled in flour, but this will make them less crispy.
How to cook “Potato zrazy”
Ingredients:
- potatoes - 10 pieces;
- mushrooms - 150 grams;
- minced meat - 300 grams (beef + pork);
- egg - 1 piece;
- onions - 2 pieces;
- flour - 5 tbsp. spoon;
- salt and spices - to taste;
- breadcrumbs - 5 tbsp. spoon;
- vegetable oil - 6 tbsp. spoons (for frying).
- I also peel the potatoes, cut them into small pieces and boil them, then grind them into puree, add salt and spices to taste, beat in a chicken egg and add flour (the amount can be increased), so that the mass sticks together into a lump.
- I already have ready-made minced meat (pork and beef), wash the mushrooms and chop them finely, peel and wash the onions, cut them into small cubes. I fry the minced meat in a frying pan for 5 minutes, then add mushrooms and onions, add salt and spices to taste, and add a little water.
- I divide the potato dough into small pieces, form each into a ball (it should be dense and not stick to your hands).
- I flatten the ball and put a small amount of filling inside.
- I fasten all the edges and make a pie (or cutlet) like this.
- Pour breadcrumbs into a bowl and roll the zrazas in them on both sides.
- I fry the prepared zrazy in a hot frying pan with the addition of vegetable oil. Bon appetit!
1. POTATO ZRAZI WITH MINGED MEAT
Potato zrazy is a super tasty dish. I highly recommend preparing it.
Products:
- Pork without fat - 500 gr
- Potatoes - 1.5 kg
- Onion - 1 head
- Butter - 50 g
- Flour - 0.5 cups
- Vegetable oil for frying - 100 g
- Salt, pepper - to taste
How to prepare potato zrazy:
Grind the pork through a meat grinder and add salt and pepper to taste.
Chop the onion and fry it in a frying pan in vegetable oil for about 5 minutes.
Then add the minced meat and fry for another 10-15 minutes, stirring occasionally.
We peel and boil the potatoes and make a stiff puree from them. Add butter, flour, salt and pepper. Mix everything well.
Add flour in small portions and mix well each time to prevent lumps from forming.
Forming zrazy: Place a portion of potato dough on your palm and make a flat cake out of it, the size of your palm.
Then put the minced meat in the middle and cover it with potato dough on all sides.
As soon as the zrazy are formed, place them in a preheated frying pan with vegetable oil and fry on both sides until golden brown.
Potato zrazy is ready and is best served hot.

Original potato zrazy with cabbage
Potatoes and cabbage are true “friends” that go well together. That is why cabbage filling is actively used for meals. True, you will have to tinker with it a little.
Ingredients:
- potatoes – 9-10 pcs.;
- chicken eggs – 2 pcs.;
- wheat flour – 5 tbsp. l. (a little more flour will be needed directly when molding the zraz);
- vegetable oil - for frying cabbage and ready-made zraz;
- cabbage - ? head of cabbage, medium in size;
- tomato paste – 1 tbsp. l.;
- water – 1 tbsp.;
- salt, spices.
Algorithm of actions:
- Since the potatoes take at least 40 minutes to cook, it is worth starting with this process immediately. When the water in the pan with potatoes boils, add salt and reduce heat. Cook until done.
- Mash into a homogeneous puree. Cool.
- Add flour and eggs to the cooled puree, knead the dough (it will slightly stick to your hands, so you will need flour).
- Shred the cabbage. First fry, then add water, tomato paste and simmer. At the end of the process, add salt and spices.
- Divide the potato dough into approximately equal-sized portions.
- Using your hands and flour, form into fairly thick cakes.
- Place the vegetable filling, raise the edges, mold. Smooth the joint, forming zrazy. Fry in oil.
As an experiment, you can add mushrooms to the cabbage filling.
POTATO ZRAZI WITH LIVER FILLING
Let's prepare some delicious potato zrazy with liver filling.
First of all, I want to share some secrets that are very important to ensure that the “dough” for the zrazas turns out elastic and they do not lose their shape during cooking.
And the point here is not at all in the amount of flour. We use it to a minimum.
Drain all the liquid from the boiled potatoes. It must be completely dry before you crush it!
Allow the puree to cool completely before adding the flour and egg. We form zrazy from cold potato mass.
Products for zraz:
- Potatoes - 6-8 pcs.
- Chicken egg - 1 pc.
- Flour - 2 tbsp. spoons
- Salt - to taste
Filling:
- Beef liver – 500 g
- Onion - 1 pc.
- Vegetable oil for frying onions
- Salt, ground black pepper.
- And also breadcrumbs, one raw yolk.
How to prepare potato zrazy with liver filling:
1. Peel the potatoes, wash them, boil them, not forgetting to add salt. Let's push.
2. Add 2 tablespoons of flour and one raw egg to the cooled mashed potatoes. Mix thoroughly. The mass should be elastic and stick well to your hands.
3. Prepare the filling. Boil the liver. Grind with a blender (you can put it through a meat grinder). Peel the onion, chop finely, fry in vegetable oil until soft.
Combine the liver with onion, salt and pepper. Add a couple of tablespoons of mashed potatoes (to give the filling a homogeneous mass) and mix well.
4. Take enough puree to form an even flat cake on which we spread the filling. Then carefully connect the opposite edges of the cake. We mold it like a pie. Give it the desired shape.
5. Roll on all sides in breadcrumbs. You can simply brush the top with yolk. Place on a baking sheet greased with vegetable oil.
6. Cook in the oven at 180-200 degrees for 15 minutes.
Sauce to your taste. I recommend it with sour cream!
PS. You can make any filling. For example, this economical option:
1. Liver - light boiled - 300 g
2. Boiled pork heart - 50 g
3. Fresh boiled pork lard - 50 g
4. Boiled mushrooms - 100 g
Combine everything and grind in a blender.

Mushroom potato zrazy with meat
These hearty three ingredients will no longer make just a snack or appetizer, it can even be called a dish. Be sure to try it, it's very tasty!
Ingredients:
- mushrooms 190 g;
- potatoes 990 g;
- onion 2 pcs;
- minced meat 410 g;
- yolks 1 pc.
It will take 1 hour to cook.
How many calories – 125 calories.
How to cook:
- Peel the caps and stems of the mushrooms and cut them into cubes or slices.
- Wash the potatoes well, you can even use a dish brush to remove all the dirt. Dry the potatoes with napkins and place in a greased baking dish or pan. Bake the potatoes for thirty minutes at 180 Celsius.
- Remove the thin skin from the onion, cut off the roots and wash it. Next, cut the onion into small cubes.
- Combine mushrooms with onions and minced meat, mix well. Pour oil into a frying pan and add minced mushrooms. Fry the meat, breaking up any lumps.
- Cover the minced meat with a lid and simmer until the ingredients are completely cooked.
- Remove the finished potatoes from the oven and let them cool.
- Peel the potatoes, mash them and add yolks and spices.
- Bring the mixture until smooth and form into flat cakes.
- Place a little filling in the center of each, wrap immediately and fry in a frying pan with butter until cooked.
Tip: If your dough is spreading, you can add a little flour.
Recipe for potato zrazy with egg
Another good “partner” for potato dough is boiled chicken eggs, especially in combination with green onions. Zrazy with this filling is best prepared in the spring, when the body needs more vitamins and greens.
Ingredients:
- potatoes – 10-12 pcs. (the quantity is affected by the size of the tubers);
- chicken eggs for dough – 1-2 pcs.;
- flour – 5 tbsp. l.;
- breadcrumbs;
- salt;
- chicken eggs for filling – 5 pcs.;
- onion greens – 1 bunch;
- vegetable oil.
Algorithm of actions:
- Salt and boil the potatoes; for flavor, you can add bay leaves and onions (dip, boil, remove).
- Strain the water. Cool slightly, knead thoroughly and knead the dough, adding eggs and flour.
- Boil chicken eggs until hard-boiled. Grate.
- Wash the onion feathers and dry them. Cut into small pieces.
- Mix grated eggs and chopped onion. You can add a little salt.
- Since zrazy resemble pies, they are prepared accordingly. Divide the dough into lumps of the same size.
- First form a flat cake, place a little egg-onion filling in the center. Form zrazy.
- Fry in oil on both sides, placing in a frying pan so that there is free space between the slices.
The dish is perfectly complemented with rich sour cream.
Potato zrazy with minced chicken
Potato zrazy with chicken is made in the same way. The only difference is in the preparation of the minced meat. For this recipe, use only boiled chicken meat, which is chopped not in a meat grinder, but on a board. For juiciness, add a sufficient amount of chopped onion (1/4 of the weight of the meat), ground pepper and nutmeg to the minced meat. If chicken breast is used for the filling, then when adding the minced meat, a small piece of butter is placed in each “cutlet”.
In the oven, potato zrazy with chicken turns out no less tasty than fried in a frying pan. With this method of preparation, the “cutlets” do not have a high percentage of fat content and are most suitable for dietary nutrition.
As noted above, minced meat is not the only filling for this dish. Exotic fillings made from seafood or crushed walnuts, crackers and butter go well with the potato base. Next, we will consider a set of products more familiar to the stomachs of our compatriots, namely, potato zrazy with mushrooms.
Spicy potato zrazy with onions
The filling for zraz can be selected based on the tastes of family members. But sometimes you can experiment (if the family is ready for this) and offer zrazy with a spicy addition.
Ingredients:
- potatoes – 1 kg (10-12 tubers);
- wheat flour – 2 tbsp. l.;
- butter – 30 g;
- chicken eggs – 1 pc.;
- turkey fillet – 150 g;
- onions – 2-3 pcs.;
- ketchup – 2-3 tbsp. l.;
- sweet bell pepper – 1 pc.;
- cheese – 150 g;
- marjoram;
- salt;
- vegetable oil.
Algorithm of actions:
- The first stage will not cause any difficulties - you just need to boil the potatoes until tender.
- Grind the hot potatoes with butter into a puree. Cool. Add flour and eggs. Knead the dough.
- Form zrazy (without filling). Roll in breadcrumbs. Fry in oil until a fragrant crust appears.
- Transfer the zrazy to a large roasting pan. Sprinkle with salt and marjoram. Sprinkle with ketchup.
- Cut the turkey into bars. Fry in oil.
- Chop the onion thinly and fry in another frying pan, also in oil.
- Cut the cheese and pepper into small cubes.
- Place the turkey on the zrazy, followed by a layer of onion, then cubes of sweet pepper and cheese. Bake in the oven.
Spicy zrazy prepared in this way looks fantastic and tastes excellent.
Simple potato zrazy with cheese
I offer you one of the fastest, simplest, but nevertheless very tasty recipes. The filling is based only on cheese and herbs, but this combination makes the dish simply fantastically tasty. During the frying process, the cheese will melt and the filling will be very tender and piquant. The recipe is very successful! I recommend!
To prepare you will need:
- Medium size potatoes – 5 pcs.
- Greens - to taste
- Cheese – 100 g.
- Flour – 3 tbsp.
- Raw egg – 1 pc.
- Breadcrumbs
- Salt and pepper to taste

Potato zrazy is good in all respects; it can be a simple or complex dish, everyday or festive. And there are several options for bringing it to readiness, the most common is frying, the less known (but more healthy) is baking in the oven.
Ingredients:
- potatoes – 1 kg;
- flour – 4-5 tbsp. l.;
- chicken eggs – 1 pc.;
- salt;
- carrots – 1 pc.;
- onions – 1-2 pcs. small in size;
- fresh boletus – 300 g;
- spices.
Algorithm of actions:
- According to tradition, you first need to boil the potatoes. Mash to a puree, adding a little flour and an egg.
- For the filling, saute the grated vegetables.
- Boil and fry the mushrooms, cut into pieces.
- Combine with vegetables.
- Form cakes from potato dough. Hide the filling inside.
- Grease a baking tray or baking container with vegetable oil. Place the zrazy.
- Bake until golden brown.
Serve in the same bowl (if the dish is beautiful) or transfer to a plate. Sprinkle with herbs.
How to prepare “Zrazy from puree”
Peel and boil the potatoes. To make the potatoes cook faster, I advise you to cut them into small pieces. Then mix the potatoes with the egg and butter. To make the puree stronger, add a little flour, 1-2 teaspoons. Add some salt. And use a masher to knead the mashed potatoes.
Wash and finely chop the green onions. Add it to the minced chicken. Salt and pepper the minced meat. Mix everything well.
Now we make zrazy from the puree. Scoop out the mashed potatoes with a tablespoon, place them in your palm, form a flatbread and place a teaspoon of minced meat in the center of the flatbread. Maybe two. Carefully seal the zrazy like a pie. You can add a little more puree on top.
Fry zrazy from mashed potatoes in vegetable oil until golden crisp. Bon appetit.
Zrazy with mashed potatoes and minced meat, baked in the oven
Most often, vegetable cutlets are stuffed with minced meat. It is usually fried with onions. If desired, in addition to salt and spices, the fried onion and meat is additionally flavored with finely chopped herbs, boiled eggs, cheese shavings or mushrooms. But even without these components it turns out very aromatic and incredibly tasty.
These “cutlets with a surprise,” especially if they are breaded, absorb a lot of oil from the frying pan. Therefore, for those who care about their health, it is best to put them in the oven.
By slightly greasing the top with leison, you can get a rather interesting solid crust, slightly crunchy after baking.
We will need:
- potatoes – 1 kg;
- minced meat – 500 gr.;
- onions – 2 pcs.;
- fresh chicken egg – 3 pcs.;
- sunflower oil – 1 tbsp. l.4
- flour, salt, ground black pepper - to taste.
Preparation:
- After peeling the medium-sized tubers and cutting them into large pieces, place them in a saucepan with water. Add salt and cook until tender, but so that the vegetable does not fall apart, but retains the appearance of being sliced.
- Chop the onions into thin centimeter pieces and place in a frying pan with sunflower oil. Let sauté lightly for a couple of minutes, and then mix with fresh mixed minced meat (preferably homemade beef and pork). Lightly salt and pepper the resulting mixture. Fry for about 5 minutes, stirring occasionally.
- Grind the slightly cooled potatoes in a meat grinder or mash them with a potato masher. Add a couple of fresh eggs, 1-2 tablespoons of flour and mix thoroughly until the dough is smooth.
- Place a couple of spoons of the resulting vegetable mass on your palm and, with kneading movements, turn it into a round cake. Place the minced meat filling in the center and turn this “structure” into an oblong cutlet.
- Place the pieces on a baking sheet lined with baking parchment. Beat a fresh egg with a pinch of salt and apply the resulting simple ice cream onto the surface immediately using a brush.
- Preheat the oven to 180 degrees, place the sheet with the contents inside and simmer until a golden brown crust appears, similar to baked yeast pies. Cool slightly and, using a spatula, transfer from the baking sheet to serving plates or large servings.
- The ideal companion for a dinner with baked zrazy would be sour cream and garlic sauce or a mixture of mayonnaise with finely chopped dill and onions.
Serve hot with vegetables, it will be very tasty!
How to cook delicious zrazy with minced meat
Our dish in Ukraine is called kartoplyaniki, which is quite consistent with the content of the dish. And here's the recipe. The products are neat, attractive and therefore look very appetizing. I would like to make these as soon as possible and try them.
In fact, all today's dishes have a similar preparation scenario. Therefore, you can watch the video once, and it will remain in your memory. And you can always change the filling at your discretion.

Potato zrazy with mushrooms is lean, without eggs and flour
We need:
- 700 g champignons;
- 1 kg of potatoes;
- 2 pcs onions, large size;
- salt, pepper to taste;
- semolina for breading;
- vegetable oil.
Preparation:
- Chop the onion and fry in vegetable oil.
- Add chopped mushrooms to the onion and fry until the liquid evaporates. Salt and pepper.
- Make puree from peeled and boiled potatoes, add salt and pepper.
- We make zrazy, stuff it with filling and bread it in semolina.
- Place in a frying pan with a small amount of hot oil and fry on both sides.
Carefully remove and place on a plate. Cool until warm.
Lenten potato zrazy with mushrooms
To prepare you will need:
- potatoes - 1.5 kg
- fresh champignons – 200 g
- onions - 1-2 pcs.
- salt - to taste
- vegetable oil - for frying
- breadcrumbs - for coating
Preparation
These Lenten zrazy are prepared in almost the same way as in the previous recipe. First, cook in their jackets, peel and mash the potatoes, and add salt to taste. Then cut the mushrooms and onions into small pieces and fry until tender in a frying pan with vegetable oil. Salt the mushroom filling to taste.
Form the mashed potatoes into flat cakes, place the mushroom filling in the center and pinch the edges. To make making zrazy more convenient, regularly wet your hands with water - this will prevent the potatoes from sticking to them.
Roll the made zrazy in breadcrumbs and fry in vegetable oil on both sides until golden brown.
Lenten potato zrazy with beans
To prepare you will need:
- potatoes - 10 pcs.
- white beans - 1 tbsp.
- salt, pepper - to taste
- flour - 3-4 tbsp. l. + for deboning
- vegetable oil - for frying
- garlic - 2 cloves
Preparation
In terms of satiety, such zrazas are not inferior to meat ones. Soak the beans for the filling in cold water for several hours, or even better, overnight. Boil the potatoes as for mashed potatoes, add salt, drain the water and mash until smooth. Add a little flour to make the mass stick better.
Boil the prepared beans, drain the water, and mash into a puree. Add salt and pepper, add the garlic passed through a press.
Next, prepare the zrazy in the usual way: form flat cakes from the potato mixture, place the filling in the center, pinch the edges, roll in flour and fry in vegetable oil on both sides.
When serving, decorate the finished zrazy with fresh herbs.
Lenten potato zrazy with fish filling
To prepare you will need:
- potatoes - 1 kg
- red fish – 0.5 kg
- onions - 2 pcs.
- flour - 4 tbsp. l. + for deboning
- salt, pepper - to taste
- vegetable oil - for frying
Preparation
This version of fasting meals can be used only on those days of fasting when it is allowed to eat fish. The recipe suggests expensive red fish, but if desired, you can replace it with a more affordable one at your discretion.
Boil the potatoes in their jackets until tender, peel them and mash them into a puree. Add about 4 tbsp. l. flour for “binding” the potato mass.
Boil the fish in salted water, cool and cut into small pieces. If there are seeds, remove them. Mix the prepared fish with chopped onion, pre-fried until golden brown.
Make flat cakes from potato dough, place fish filling in the middle and pinch the edges, forming oblong zrazy pies. Roll each one immediately in flour and fry on all sides in vegetable oil until golden brown.
