Step 1.

Now peel the pomegranate and squeeze out the juice. Be sure to take freshly squeezed, canned will not work.

Ingredients:
- potatoes - 5-6 tubers;
- onion – 2 heads;
- egg – 1 pc.;
- sour cream – 3 tbsp. l.;

- cheese – 150 g;
- flour – 3-4 tbsp. l;
- salt, spices and herbs - to taste.
Cooking process:
1. Cut one onion into very thin slices. Grate the potatoes very finely (into porridge), preferably on a special grater. Add salt, add egg and flour and knead potato dough. Fry pancakes in a frying pan with vegetable oil. It is enough to simply brown them without bringing them to full readiness. If it is difficult to turn the cakes, they tear or break, you need to add a little flour to the dough.
2. For minced meat, mix chicken, ground in a blender or using a meat grinder, onion, chopped very finely, salt, spices and herbs. Place some minced meat on the prepared pancake and spread it into a thin layer. Roll up the roll.
3. Place the rolls on a baking sheet, cover with foil and place in the oven for 20 minutes at 200 degrees. In fact, you only need to bake the filling.
4. After the specified time, remove the baking sheet from the oven. Remove the foil. Grease the rolls with sour cream, sprinkle with grated cheese and put back until an appetizing golden brown crust forms.

Instead of the traditional fatty jellied pork legs, you can prepare a tasty and dietary chicken jellied meat. You will need the following ingredients:
- chicken breasts with bones - 700 g;
- drumsticks or thighs - 800 g;
- chicken legs - 1 kg;
- onion - head;
- garlic - clove;
- allspice - 6 - 10 peas;
- bay leaf - 2 - 3 pieces;
- gelatin - 50 - 60 g;
- salt - to taste;
- boiled eggs, parsley, carrots and green peas (optional) - for decoration.
Place all types of chicken in a pan and cover with water. The liquid should cover the chicken by 2-3 cm. Place the dishes over medium heat and cook until boiling. At the same time, boil about 5 liters of water in another saucepan.
When the chicken broth comes to a boil, reduce the heat and simmer for another 20 minutes. Then pour out the liquid. Pour boiling water from the second pan over the chicken. Cook the product for another 2.5 hours, covered, over low heat.
Then add salt, onion, bay leaf and allspice to the broth. Cook over low heat for another 1 hour. When the meat comes off the bones easily, remove the pan from the stove.
Pass the garlic through a press and add it to the broth. Cool the meat and broth until warm. This may take 5-6 hours.
1 hour before assembling the dish, pour a glass of cold water over the gelatin and leave it to swell. Prepare molds for aspic or jelly.
Pass the broth through a colander. Discard the onions, peppercorns and bay leaves. Separate the meat from the bones and skin, chop finely and place in molds.
Place the water with gelatin on low heat and heat slightly while stirring, avoiding boiling. Pour the resulting liquid into the broth and stir the mixture.
If you wish, you can place halves of a boiled egg, slices of carrots, parsley and green peas in the molds on a layer of meat. These are optional ingredients, but they give the dish a more aesthetic appearance.
Carefully pour the broth into the molds. Cool the product at room temperature and then refrigerate for 6 hours. Serve the aspic with horseradish or mustard.
Royal chicken for the New Year's table
This is a dish that should definitely be on the New Year's table. We will bake the whole chicken on a bed of fruit in a honey-orange marinade. From the name it is already clear that the taste is excellent, guests at the holiday will be delighted.
Ingredients:
Step 1.
First, prepare the marinade; to do this, finely grate the zest of one orange. Then cut it and squeeze out the juice from only one half. We don't need the second one.
Step 2.
Now we need an immersion blender and a container for it (special or suitable narrow). Place the mustard in a container and place the blender in it.
Definitely in that order!
Now pour orange juice, apple cider vinegar, honey and sunflower oil on top.
Beat at high speed and do not raise the knives at the beginning of whipping. Only then we gradually raise it. You should get a homogeneous mass.
Step 3.
Then add the orange zest and mix with a spoon.
Step 4.
Be sure to wash the carcass and blot it with paper towels on all sides.
Coat the chicken on all sides with salt and then with our marinade. Don't forget to lubricate the inside too.
It is advisable to tie the chicken legs with twine.

Now we put the chicken in a baking bag and pour the remaining marinade into it (we leave part of the marinade for final lubrication), spreading it a little throughout the bag.
We tie the bag on both sides.
Step 6.
Place in an oven preheated to 180 degrees for about one hour.

A few minutes before the end of cooking, cut the top of the bag and open the chicken.
Set the oven to maximum temperature and let the carcass brown.

While the chicken is coming up, prepare the fruit pillow. Peel the orange and divide it into slices. We peel the apples and cut them into slices, much like oranges.

Now we need to melt 3 tablespoons of sugar in a frying pan, stirring constantly. Having obtained a caramel shade, add butter and mix everything until smooth.
Then add 50 ml of hot water, stir and boil until the syrup thickens for 1-2 minutes.

Place orange slices and apple slices into the resulting caramel. After a minute, turn the fruit over and add two anise stars.
