The gourmet recipe is actually quite simple and does not require any specific ingredients.
You will need:
1 duck, 1.5 oranges, 3 sprigs of rosemary, 200 ml rum, 350 ml pomegranate juice, 60 ml pomegranate sauce, 1 tbsp.
honey, 1 tbsp. coarse salt, 1 tsp. black pepper. Preparation:
1. Clean the duck, remove all excess and prick the skin on the breast and legs with a fork. 2. Mix the zest of 1 orange, chopped half a sprig of rosemary, salt and pepper in a mortar and rub the duck with this mixture. 3. Place in a mold, pour in the juice of 1 orange, pomegranate juice and half the rum. Place rosemary there and place in the oven for 2-2.5 hours at 220 degrees. Baste the duck with juice every 15 minutes. 4. Place the bird on a plate, and simmer the remaining liquid in a saucepan with honey, remaining orange juice, rum and pomegranate sauce. 5. Return the duck to the pan, brush with glaze and bake for another 15 minutes.
Duck with apples marinated according to a new recipe
Well, what's a table without game? It is the duck that is associated with this word. Some will say it's trivial. But! We have an unusual marinade and who is stopping you from decorating this ordinary dish in an unusual way?
Ingredients:
- duck - 1 carcass, weighing about 2 kg;
- apples - 1 kg;
- garlic - 4 cloves (or dried 1 tsp);
- orange – 1 piece;
- lemon - 1 pc.;
- rosemary and thyme (you can use dried herbs seasoning);
- salt – 1 tbsp;
- dried lemon leaves - optional.
For the apple sauce you will also need:
- cane sugar – 50 g;
- lemon zest – 1 tsp;
- orange juice – 40 ml;
- apples – 3 pcs;
- lemon juice – 20 ml;
- fat and juice from duck – 10 tbsp;
- orange zest – 1 tsp.
We will also need an additional 800 grams of apples to make a pillow and stuff our bird before putting it in the oven. For decoration you will need cranberries, lettuce leaves, and herbs.
Kitchen magic:
We take the carcass, gut it, clean it, remove the neck and rump, inspect for the presence of “stumps”, if there are any, remove them using tweezers. Wash thoroughly and dry with paper towels.
Prepare the marinade by grating 1 kg of apples on a fine grater.
Remove the zest from the lemon and orange and add to the applesauce.
Then squeeze the juice out of the orange and lemon and pour it here.
Also add salt, rosemary, lemon leaves, thyme to the marinade and mix.
We put the duck here and rub it completely with our marinade, adding it also inside the carcass.
Cover with cling film and put the bird in the refrigerator for a day to marinate. During this time you will need to turn it over a couple of times.
After the required time has elapsed, cover the mold with foil and prepare the apples from which we will make a pillow so that the duck does not stick. If you have a special device for removing the core of apples, then you can cut them into circles. Well, if not, then remove it in any convenient way and cut the apples not too thinly into slices. Place them on foil.
We clean all the marinade from the duck so that it does not burn in the oven. We put it in the form with apples and rub it on all sides and inside with salt, garlic and black pepper.
We remove the core from the remaining apples that we left for the pillow and stuffing and cut them into 4 parts. We put them in the marinade so that they absorb its aroma.
And then we stuff the duck with them.
Secure with a wooden skewer.
Cover with foil and place in the oven at 180 degrees for 1.5 hours. When the specified time is up, take out the duck and use a spoon to collect the juice and fat released from it into a separate plate, which we will need to prepare the sauce. We also water the bird with it a little.
Then cover with foil and place in the oven for another 30-40 minutes.
Now it's the applesauce's turn. Peel the apples, remove the core and cut into small pieces. Transfer to a saucepan, pour in orange and lemon juice, duck fat, add orange and lemon zest, and cane sugar.
Stir, bring to a boil and simmer over low heat with the lid closed for 15 minutes.
Then grind with an immersion blender until smooth and bring to a boil again. The sauce is ready.
Next, we take the duck out of the oven, pour it again with the released fat and send it to cook for another 20 minutes, but without foil. During this time, the bird will be thoroughly browned and ready to be served.
Decorate the prepared dish with fresh herbs, lettuce leaves, baked apples, and cranberries. Serve it with applesauce.
Fish baked in cabbage leaves
Such a beautiful New Year's dish can be prepared even from inexpensive pollock.
You will need:
800 g of fish, 32 leaves of Chinese cabbage, 4 onions, 2 carrots, 16 tbsp.
tomatoes in their own juice, 8 tbsp. soy sauce and vegetable oil, 4 tbsp. olive oil, 8 tomatoes, 2 tsp each. oregano and dried parsley. Preparation:
1. Remove the thick part from the cabbage leaves, lightly beat off the dense areas and cook in boiling water for 7 minutes. 2. Fry chopped onion and grated carrots in vegetable oil, add tomatoes in their own juice and simmer for 10 minutes. 3. Mix olive oil with soy sauce and herbs, and marinate the fish for 15 minutes. 4. Fold 4 cabbage leaves in an overlapping cross. Place part of the roast in the center, a piece of fish on top, wrap it in an envelope and place it on a baking sheet. 5. Place thin tomato rings on top, add some salt and bake at 180 degrees for about 25 minutes.
Whole baked chicken in the oven with potatoes
To prepare crispy and juicy chicken with a side dish, use:
- 1 chicken carcass
- 1 kg potatoes
- head of garlic
- 1.5 teaspoons each of honey and mustard
- olive oil
- salt

- rosemary - a few sprigs
- 2 teaspoons paprika
- 1 teaspoon black pepper
- 1 teaspoon curry seasoning
- 1 teaspoon Provençal herbs
Since the chicken and potatoes will be cooked together, there is a chance that some of the components may not be completely cooked, so wash the potatoes with a brush at the preliminary stage to thoroughly wash the tubers. Pour water into the pan and cook the potatoes in their jackets for about 15 minutes after the water boils. Drain the water and start preparing the chicken. Wash the carcass and place in a colander to drain. Meanwhile, prepare the marinating mixture. Mix the curry with mustard, two tablespoons of olive oil and honey, add paprika. Stir until you get a homogeneous mixture. Take the chicken, rub it with salt and black pepper. Then grease with the resulting sauce. Both outside and inside. Add a few sprigs of rosemary to the carcass. Leave for 30 minutes.
Cut the cooled potatoes into several pieces without peeling, mix them with Provençal herbs, a few tablespoons of oil, pepper and mix. Place the chicken in a deep baking tray greased with oil. Wrap the tips of the wings and legs with foil, otherwise they will burn. Tie the legs with thread. Then spread out the potatoes. We will need:
- pork - 1-1.5 kg.
- potatoes - 1-1.2 kg.
- onion - 1-2 pcs.
- vegetable oil.
- hard cheese - 200-300 gr.
- spices to taste.
- mayonnaise or sour cream -50-70 ml.
Cooking steps
1. Wash the pork, dry it and cut it into small pieces, beat it with a hammer. Season with salt and pepper, mix well.
2. Peel the potatoes, wash them and cut them into thin rings or slices. Peel the onion, wash it and cut it into half rings or rings. Grate the cheese on a fine or coarse grater.

- onion - 1 pc.
- carrots - 1 pc.
- meat - 1 kg.
- soy sauce 2-3 tbsp. l.
- spices to taste.
- eggs - 2 pcs.
- flour -3-5 tbsp. l.
- greens optional.
Cooking steps
1. Wash the meat, remove the film and veins, cut into strips.
2. Place the meat in a bowl, add spices, eggs and flour, mix well. Add greens if desired. Leave to marinate for 20-30 minutes.
3. Wash the mushrooms, cut off the stems and skin if necessary. Cut into pieces.
4. Peel the onions and carrots and cut them into strips and half rings.
5. Heat vegetable oil in one frying pan and fry the meat in it over medium heat. Don't forget to stir. A couple of minutes before cooking, add soy sauce and carrots. Fry until done.
6. In another frying pan, fry onions and mushrooms, stir.
7. Add meat to the mushrooms, fry for another 10 minutes and serve.

- onions - 1-2 pcs.
- garlic - 2 cloves.
- egg -1 -2 pcs.
- champignons - 400 gr.
- cream cheese - 200-300 gr.
- mayonnaise to taste.
- spices to taste.
- tomato - 2-3 pcs.
Cooking steps
1. If you make minced meat at home, then twist the meat with onions, add spices to it.
2. Wash the mushrooms, cut into pieces and fry over medium heat. Add cream cheese and let it melt. Stir.
3. Add the egg to the minced meat, mix well.
4. Cover a baking sheet with foil. Form the minced meat into large patties and place them on foil. Make a well in each cutlet. Place mushrooms in them.
5. Wash the tomatoes and cut into rings. Cover each nest with a tomato.
6. Lubricate the tomatoes with mayonnaise.

Hot pork with walnuts for the New Year: fast and inexpensive
I often cook pork with walnuts. It turns out quite simple, tasty and inexpensive. I use dried garlic in this recipe, it gives more flavor. You can use more or less nuts.
Ingredients:
- pork pulp - 700-900 gr.
- mustard - 2-3 tbsp. l.
- dried garlic 2-3 tsp. or fresh -4 cloves.
- salt and pepper to taste.
- walnuts -150 gr.
- vegetable oil.
Cooking steps
1. Pork needs to be washed, film and veins removed from the meat. Wipe the meat with a paper towel. Afterwards you need to rub it with spices and dry garlic. If the garlic is fresh, then it needs to be peeled and passed through a press.
2. Now you need to heat a frying pan and fry a piece of meat in it until a golden and crispy crust forms.
3. Now coat the pork with mustard on all sides.
4. Grind the nuts using a blender. Roll a piece of meat in nuts on all sides.
5. Place the meat in a baking dish and bake in the oven at 180-200 degrees for an hour. If after 30-40 minutes the nuts begin to burn, you can reduce the temperature to 150 degrees.
6. Serve with fresh lettuce or wrap portions in lava. This meat is combined with vegetable salads.

You will need:
1 kg of potatoes, 4 tomatoes, 120 ml of olive oil, 1 onion, 3 cloves of garlic, cheese, spices.

1. Heat the oil and fry the onion and garlic in it until soft. 2. Add chopped tomatoes there, and after a minute - potatoes, and leave for 10 minutes. 3. Season everything with spices, place in a baking dish and place in the oven under foil for an hour at 180 degrees. Towards the end, sprinkle with grated cheese.
Crispy chicken tabaka - a classic
Baked chicken is one of the most popular dishes for the New Year's table. We suggest cooking tobacco chicken in the oven with a crispy crust and spices. You will need the following ingredients:
- broiler chicken 1 kg - 1.5 kg
- 4 cloves garlic
- 4 tbsp. tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon sweet paprika
- 1/2 teaspoon each: hot red pepper, black pepper and coriander.
You can also use turmeric, marjoram, or your favorite chicken seasoning.
Oriental dishes cannot be prepared without a bouquet of spices, so pour all the seasonings and salt into a small container, then add garlic cloves passed through a press. Pour in the oil and stir well. Fresh chicken should be thoroughly washed, dried and prepared. Remove any fat and excess skin, then cut the chicken lengthwise to open it. You can easily beat the chicken like this: wrap it in cling film. Place on a board and use a kitchen hammer to hit all joints.
Remove the film and marinate the chicken in spices. Leave for an hour, then proceed to the final stage - baking. You can cook the chicken with or without pressure. In the first case, the carcass is laid out directly on a baking sheet and pressed down with a heavy cast-iron object; in the second, the chicken should be placed skin side up. Bake for one hour at 180 degrees. If using a press, turn the chicken several times to get a nice crispy coating.

Czech duck with cabbage
Serve duck with stewed or pickled cabbage and potatoes.
You will need:
1 duck, 0.5 tsp each.
peppercorns, coriander seeds, cinnamon, paprika, ginger, marjoram and cumin, salt and pepper, nutmeg. Preparation:
1. Mix all the spices and grind in a coffee grinder or mortar. Clean and dry the duck, prick the skin, rub it with the aromatic mixture inside and out and put it under film in the refrigerator for a day. 2. Preheat the oven to 240 degrees. Place the duck in the pan on parchment, breast side down, place in the oven and reduce the temperature to 160 degrees. 3. After 20 minutes, turn the duck over and bake until done, basting occasionally with juice. On average, it will be about an hour.
Tomatoes stuffed with meat and rice
One of the original holiday dishes is stuffed tomatoes. Red vegetables resemble Christmas balls, so, of course, everyone will immediately want to try such a colorful dish.
Ingredients:
- 6 tomatoes
- 400 grams minced meat
- 100 grams of rice
- 100 grams of cheese
- one onion
- 2 garlic cloves
- 30 grams of sunflower oil
- several sprigs of dill
- salt
- pinch of pepper
For a festive feast, it is better to prepare minced meat yourself from fresh meat. But if this is not possible, take a store-bought one. Place the minced meat in a bowl. Wash and chop the dill and add to the minced meat. Peel the onion, chop it, fry in a pan for a couple of minutes. Add to food in bowl. Pepper and, if desired, add spices to taste. Boil the rice, then mix with the minced meat. Mix the resulting filling well.
Wash the tomatoes, dry them with paper napkins, carefully trim the cap and cut out the pulp from the middle. Spoon the filling and press lightly. Prepare a baking dish. Grease the tomatoes and the bottom of the pan with oil. Preheat the oven to 180 degrees. Bake the stuffed tomatoes and check them after 35 minutes. Grate the cheese on a fine grater, sprinkle on top of each tomato and place the dish in the oven for another 7-10 minutes. This hot dish can be served the next day, but as a cold appetizer.
Turkey drumsticks with potatoes
This New Year's dish contains both meat and side dish!
You will need:
4 turkey drumsticks, 8 potatoes, 100 ml olive oil, 1 red onion, 6 cloves of garlic, 16 prunes, spices and herbs.
Preparation:
1. Drizzle the drumsticks with olive oil and roll in spices and herbs. 2. Place the meat with coarsely chopped onion and garlic on foil, and place prunes on top. 3. Add separately seasoned potato slices. Wrap the foil in an envelope, put it in the oven and bake for 45 minutes at 220 degrees. 4. Unfold the foil and put the turkey and potatoes back in the oven for 10 minutes at 220 degrees for a nice crust.
Azu with pork and bell pepper
Choose this recipe if you want something more original than just a piece of baked meat.
You will need:
500 g pork, 1 red pepper, 1 carrot, 1 onion, 2 pickles, 4 tbsp.
vegetable oil, 2 sprigs of parsley, a pinch of turmeric, 2 tbsp. flour, 1 cup broth, spices. Preparation:
1. Cut all the vegetables, including pickles, into strips and fry in vegetable oil. 2. After 7 minutes, add the pork strips and fry for another 15 minutes, stirring. 3. Add flour, fry and fill the mixture with broth or plain water. Add spices and simmer for 15 minutes, and when serving, garnish with herbs.
Hot lavash triangles with cheese and herbs in 10 minutes
An appetizer of pita bread with cheese and herbs that can be quickly prepared in a frying pan with the right set of ingredients. The whole process is; grate the cheese, mix with herbs and wrap in pita bread. Then fry in a saucepan in a frying pan.
Products:
- pita;
- Russian cheese – 65 g;
- royal cheese – 30 g;
- Bukovinian cheese – 30 g;
- mayonnaise – 1 – 2 teaspoons;
- egg – 1 pc.;
- milk – 2 tbsp. spoons;
- vegetable oil - 2 tbsp. spoons;
- dill – 2 sprigs;
- parsley - 2 sprigs;

Grate the cheese on a coarse grater. Add washed and chopped greens to it and mix. Prepare lizone from milk, eggs and spices. Cut the pita bread into strips about 7 cm wide. Grease with mayonnaise. Place a tablespoon of cheese filling on the edge. Fold it in such a way as to form a triangle.
Dip a triangle of pita bread into the lemon and fry in a frying pan with odorless sunflower oil. Can be served immediately. Or if you prepared them in advance, then place the plate with the appetizer in the microwave before serving.
Spicy aromatic fish
It turns out very tender, but with a slight pleasant spiciness.
You will need:
500 g of sea fish, 5 cloves of garlic, 2 onions, vegetable oil, ketchup, paprika, coriander, chili flakes, pepper, salt, mixture of herbs.
Preparation:
1. Salt the fish fillet, roll in spices, place crushed garlic on top and leave for 2 hours. 2. Dip each piece in vegetable oil, grease with ketchup and place in a mold. 3. Sprinkle everything with chopped onions on top and bake for 30 minutes at 180 degrees.
Pollock in the oven with carrots and onions
Baked pollock can be very tasty if prepared correctly.
Take the following ingredients:
- pollock - 1 piece
- mayonnaise - 100 grams
- carrots - 1 pc.
- onion - 1 pc.
- coarse salt
- vegetable oil
- pepper to taste
Thaw the fish, but not completely. This will make it easier to clean. Remove the entrails, fins, and rinse. Cut into medium pieces. Add mayonnaise to the pollock, stir, leave for 15 minutes. You can pepper it. Peel the carrots and onions. Grate the carrots and chop the onion. Then fry the vegetables in vegetable oil for 7-10 minutes. Take a baking sheet, lay out some of the vegetables, arrange the pieces of pollock. Pour the remaining mayonnaise into the mold. Cover the fish with the remaining vegetables on top and pour a little water into the pan. Set the oven to 180 degrees, heat and bake the pollock for about 30 minutes. An excellent side dish for fish would be rice or soft potatoes.
An unusual and tender hot dish can be made from seafood.
Chicken in the sleeve

You will need:
1 chicken, 30 g butter, 1 orange, 4 potatoes, 2 carrots, 300 g pumpkin, 2 sprigs of parsley and thyme, 1 tsp.
paprika and oregano, 1 head of garlic, 1 tbsp. flour, salt and pepper. Preparation:
1. Grease the cleaned chicken inside and out with butter and rub with a mixture of spices. Place half the garlic cloves, parsley, thyme and orange quarters inside. Secure the hole with toothpicks. 2. Cut the vegetables into random pieces, but don’t make them too small. Salt and season them separately. 3. Pour flour into the sleeve and shake. Then add the chicken and vegetables, tighten and mix again. Make a few punctures on top for steam. 4. Bake everything for 1.5 hours at 180 degrees.
Meat in white wine
This new dish for European cuisine will surely delight your family. Pork is used for it - preferably the neck.
Ingredients:
- meat with a small amount of fat - 1 kg;
- minced chicken - 400 g;
- champignons - 500 g;
- onion - 1 pc.;
- garlic - 4 cloves;
- walnuts - 1.5 handfuls;
- hard cheese - 70 g;
- cream - 200 ml;
- mustard seeds, vegetable oil, dried tomatoes, salt and pepper to taste;
- butter - a small piece.
You need to prepare the culinary thread in advance. You can also use simple ones - spool or cotton - but this is not very convenient.
Step-by-step recipe with video:
- Chop the nuts.
- Slice the champignons into slices and chop the onion. Fry it in vegetable oil with chopped garlic, and when it turns golden, add mushrooms and spread butter.
- Heat a little vegetable oil in a separate frying pan and bring the minced meat almost until cooked. Add 1 tbsp. l. mustard, a third of fried mushrooms, salt, pepper and stew the meat under the lid. Remove from heat and leave to cool. It is better to put it on a plate so that a lot of fat is not absorbed.
- The pork neck is cut along the fibers, but not all the way, leaving 1 cm for fastening. The gap between pockets is 1.5 cm.
- The cheese is grated and mixed with the cooled minced meat.
- Fill pockets with stuffing.
- Tighten the workpiece with culinary thread and fry it in a frying pan in butter on all sides, including the cuts. Lightly add salt.
- Pour half a bottle of white wine into the pan, cover with a lid and leave for 1-2 hours depending on the size of the piece.
Take out the meat and let it cool slightly. Start preparing the sauce. Pour mushrooms, nuts into the gravy boiling in a frying pan and pour in 200 ml of cream. Cook until thickened.
Attention!
Before serving, the meat is no longer cut along the grain, but across it. The sauce is served separately.
Baked vegetables in garlic marinade
If desired, add mushrooms, beans and any other ingredients to the dish.
You will need:
1 eggplant, 1 zucchini, 1 pepper, 1 onion, 1 beet, 2 tomatoes, half a hot pepper, 2 tbsp.
vegetable oil, apple cider vinegar and soy sauce, 1 bunch of cilantro, 6 cloves of garlic, spices. Preparation:
1. Cut the vegetables into large pieces and place in a mold. If you use beets or potatoes, make them a little smaller. 2. Mix oil, vinegar, soy sauce, chopped herbs, chopped garlic and spices, and pour the marinade over the vegetables. Leave them to marinate for an hour, covered. 3. Bake vegetables for about 40 minutes at 200 degrees.
Tasty and juicy beef with vegetables
Not every housewife takes up the task of preparing meat for the holiday table, because the dish can turn out tough. But according to our recipe, the beef will taste very tender, and you will also immediately have a vegetable side dish. To prepare you will need:
- piece of beef (400-500 grams)
- 250 grams of eggplant
- 50 grams of bell pepper
- 300 grams of tomatoes
- vegetable oil
- water
- spices and salt
We start by preparing the meat. Wash the beef. Place on napkins to remove excess water. Be sure to remove all white streaks. Cut the beef into oblong pieces. Not too thin, otherwise the dish will be a little dry. Wash the vegetables. Remove the seeds from the pepper, chop it, and also chop the eggplant and tomatoes.
Heat the frying pan well. Fry the meat - first over high heat to “seal” it, then over lower heat. When the beef is browned, add salt and pepper. Then add the peppers and eggplants to the pan. Juicy chicken with nuts and prunes
There are simpler and more delicious dishes with chicken, but we still have a holiday, we want some zest, or, well, prunes.
Ingredients:
- chicken - 1 carcass;
- garlic - 2 cloves;
- prunes (pitted) - 200 g;
- nuts - 200 gr.;
- tomato sauce - 2 tbsp. l.;
- sour cream - 2 tbsp. l.;
- salt and pepper.
Kitchen magic:
Soak prunes in boiling water.
We thoroughly wash our bird, then very carefully remove the skin using a tablespoon. Remove the skin from the back with a sharp knife. Carefully remove the wings and last phalanges along with the skin. These photos show the whole process step by step.
After tightening the skin around the neck, place it on a large flat plate.
We remove the remaining “naked” carcass from the bones and grind the meat into minced meat.
We cut our soaked prunes into strips and throw them into the minced meat. Add chopped walnuts and garlic through a garlic press, season with salt, pepper and mix.
We fill the skin with the resulting minced chicken, giving it a more natural look.
We tie the skin at the bottom with a thread so that the filling does not fall out. We close the remaining loose space with a toothpick.
Mix sour cream with tomato sauce and coat the hand-made chicken with it.
Place in the oven at 170 degrees for 40 minutes.

Heat the oil in a frying pan and simmer the spinach in it, adding it portionwise as the volume decreases. 4. Slice the pork, place it on the spinach and top with sauce.
Hot appetizer of lavash with crab sticks
In addition to the main dishes, you can also make a delicious hot appetizer of pita bread and crab sticks with melted cheese. To prepare you will need:
- Armenian lavash
- pack of crab sticks (120 grams)
- processed cheese 80-90 grams
- 3 cloves garlic
- 2 eggs
- several branches of dill
- 2 tbsp. spoons of vegetable oil
- 1 tbsp. spoon of flour
- salt
Defrost the sticks and cut them into several pieces. Wash the dill and chop it. Pass the garlic through a press. Open a pack of processed cheese; it’s better to take soft cheese. Mix with garlic. Cut the lavash sheet into 4 layers. Spread the first one with cheese, place some of the sticks on it and sprinkle with dill. Cover the top with a second sheet and repeat these steps. Then we form a third layer of filling and cover the top with the remaining piece of pita bread. Let's cover the resulting structure with a cutting board, and place a heavy object on top. Leave for half an hour. Prepare the batter. Break two eggs into a bowl and mix with flour. Add a pinch of salt and whisk. Cut the formed pita cake into several rectangles. Dip each of them into batter, then place in a frying pan. Fry on each side until crust forms. You can serve this dish with some sauce.

Cooking method:
- Potatoes should be washed thoroughly and then boiled in their skins. Let the tubers cool. We clean them and cut them into circles of equal thickness. If the potatoes are large, then the pieces can be cut crosswise into two parts;
- Cut the herring into pieces 3 cm thick, the onion into half rings;
- Peel the apple and cut it lengthwise into two halves. Remove the core and stalk. Cut the apple into long slices, which should be sprinkled with lemon juice;
- We wash the arugula, dry it, tear it with our hands;
- Place all salad ingredients in a bowl and mix;
- To prepare the dressing, mix olive oil, lemon juice and mustard. We dress the salad and you can serve it to the table!
