  • chicken fillet – 600 g
  • pitted prunes – 70 g
  • sour cream - 200 g
  • vegetable oil - 1 tbsp. l.
  • salt - to taste
  • ground black pepper - to taste

Cooking method:

1. Dry the chicken fillet with paper towels and cut into layers 1.5 cm thick. Beat the meat on both sides, salt, pepper and brush with sour cream.

2. Pour boiling water over the prunes and leave until they become soft. Then dry and chop finely.

  3. First soak the prunes in hot water for 7 minutes. Drain, drain on a paper towel and cut into small cubes.
  4. Layer the salad using a serving ring. If you don't have a ring, you can use the sides of a springform pan. A mayonnaise mesh is applied to each layer, except for nuts.
  5. Lay the layers in the following sequence:

  • lay out the yolks, they should also be left a little for decoration;

Cut circles for the dial and clock hands from boiled carrots. Place everything on the salad, draw numbers on the mugs with mayonnaise. Now you can serve it to the table.

Salad "Nadezhda"

This salad is usually liked by everyone, because it contains quite traditional products, it is very tender and pleasant to the taste.

How to cook:

  1. Grate the cucumber using a Korean carrot grater. Place the grated cucumber in a sieve to drain excess liquid.
  2. Cut the tomatoes into four parts, remove the pulp and seeds. Cut the tomato quarters into strips.
  3. We separate the boiled chicken fillet into fibers with our hands. Three cheeses on a coarse grater.
  4. Grate raw potatoes using a Korean carrot grater. Place in a bowl, cover with cold water. We transfer the potatoes, washed from starch, onto a paper towel to remove excess moisture.
  5. Pour vegetable oil into the frying pan. It should be about 1 centimeter. It's good to warm it up. Place drained potatoes in hot oil in small portions and fry until golden brown.

    Watch the process as the potatoes fry very quickly.

The recipe for aspic came to us from France, where they prepare galantine - a similar dish made from beef, rabbit, poultry or fish. Unlike jellied meat, this treat takes less time, and it turns out really bright and festive. We tell you how to make delicious aspic at home.

  • chicken drumsticks – 700 g

Remove vegetables and meat from the pan, add garlic and pre-diluted gelatin to the broth. Place the chopped meat, herbs and, if desired, carrots in the molds, pour in the broth and place in the refrigerator for at least 2 hours.

1. Cut the margarine into pieces, mix with flour and chop with a knife until fine crumbs.

2. Collect the crumbs and gradually pour milk in the center. Also add lemon juice.

3. Knead into a homogeneous dough, wrap it in cling film and put it in the refrigerator for 1 hour.

4. Meanwhile, prepare two types of cream. For the first one, beat condensed milk with softened butter.

5. For the custard, beat the eggs with sugar, add warm milk and flour to the mixture. Place on low heat and cook for 10 minutes, stirring constantly.

6. Remove from heat, cool until warm, add softened butter and vanilla, beat with a mixer.

7. Place the cream in the refrigerator.

8. Remove the dough from the refrigerator and divide into seven equal parts. Roll each thinly directly onto the parchment, place on a baking sheet and bake at 180°C for 5-7 minutes until crispy.

9. Using a plate, level the cakes, form a cake, coating each cake with two types of cream at once.

10. Sprinkle the cake with crushed scraps and place in the refrigerator overnight.

11. The cake must be soaked, then it will be very tender and tasty.

When you think about what to cook deliciously for the New Year, the thought of cakes immediately arises. Of course, you don’t cook such a dish every day. The site has recipes for cakes, for example, a very tasty and beautiful cake made from marshmallows and chocolate.

Cookies "Coconut corners"

But cake is a separate tea party and it’s not always your turn on New Year’s Eve. And I want to put something tasty on the table. Candies in a bowl are a great option, but you can add some unusual homemade cookies to them, for example, coconut corners.

Ingredients:

for test:

  • flour - 150 gr.
  • baking powder - 0.5 tsp.
  • sugar - 65 gr.
  • vanilla sugar - 1 sachet
  • egg - 1 pc.
  • butter - 65 gr.
  • salt - ¼ tsp.
  • apricot jam

for the nut mixture:

butter - 100 gr.

sugar - 100 gr.

water - 2 tbsp. l.

coconut flakes - 80 gr.

How to cook:

  1. Prepare the nut mixture: mix butter with sugar, add water and put on low heat. As soon as the sugar melts, turn off the heat, add coconut flakes, stir and let the mixture cool.
  2. Lightly beat the egg with sugar, add vanilla sugar, baking powder - mix well. Knead into a thick dough with some of the flour. Then place pieces of cold butter on the dough. Sprinkle with the remaining flour and quickly knead the dough.
  3. The dough needs to be rolled out, but it turns out so soft that it is better to roll it out directly on a baking sheet, greased with vegetable oil. You don’t even need to use a rolling pin, but smooth it out with your hands. The dough rectangle is slightly smaller than the baking sheet. Brush the dough with apricot jam.

  4. Then spoon the nut mixture on top.

  5. Bake in a preheated oven for 20-25 minutes at 180 degrees.

  6. Remove the finished cake from the oven, let cool slightly, and cut into corners.

Pineapples in puff pastry

Another recipe for dessert. These rolls are very easy to prepare, they won’t take much time, and guests will appreciate them on the table as a sweet snack.

You will need:

  • any puff pastry (yeast or yeast-free)
  • canned pineapple rings
  • egg

Cooking method:

  1. Remove the pineapple rings from the jar, cut them in half and dry them on a paper towel.
  2. Defrost the dough according to the instructions on the package, roll out thinly into a rectangular layer, cut into strips 1.5-2 cm wide.
  3. Wrap the pineapple half rings with strips of dough. Place on a greased baking sheet. Brush the rolls with beaten egg.
  4. Bake at 180 degrees for 15-20 minutes until golden brown. Before serving, you can sprinkle with powdered sugar.

An already familiar and popular salad can be varied with new ingredients. Because of this, it does not lose its attractiveness and acquires new flavors.

Caesar salad with shrimp

Ingredient:

  • tiger shrimps – 12 pcs.;
  • garlic – 1 clove;
  • olive oil – 4 tbsp. l.;
  • capers – 20 g;
  • Dijon mustard – 20 g;
  • grated hard cheese – 4 tbsp. l.;
  • anchovies – 250 g;
  • mayonnaise – 150 g;
  • natural yogurt – 150 g;
  • romaine lettuce – 160 g;
  • cherry tomatoes – 100 g;
  • canned pitted olives – 12 pcs.
  • wheat crackers – 150 g;
  • salt, pepper - to taste.

Preparation:

  1. Wash the shrimp, remove the intestinal vein and boil in salted water.
  2. Chop the garlic and mix with olive oil.
  3. Pour this brine over the shrimp and let it sit for 10 minutes.
  4. Make the salad sauce: using a blender, mix 100 g of anchovies, 2 tbsp. l. grated cheese, mustard, capers and mayonnaise.
  5. Wash the Romaine lettuce, lightly dry it with a paper towel and tear it into small pieces.
  6. Cut the cherry tomatoes into halves.
  7. Mix the salad with tomatoes in a bowl and pour over the sauce.
  8. Top with shrimp, olives and croutons.
  9. Sprinkle everything with grated cheese and decorate with herbs.

Caesar salad with dried cranberries

Ingredients:

  • chicken breast – 100 g;
  • salad mix - 100 g;
  • croutons - 20 g;
  • dried cranberries – 10 g;
  • Grana Padano cheese - 30 g;
  • Cherry tomatoes – 2 pcs.

For the sauce:

  • mayonnaise – 100 g;
  • soy sauce - 1 tsp;
  • balsamic vinegar - 1 tsp.
  • Worcestershire sauce - 1 tsp.
  • honey - 1 tsp;
  • garlic - 2 cloves;
  • lemon (fresh) – 1 tbsp. l.
  • salt to taste.

Preparation:

  1. We wash the meat and dry it with a paper towel.
  2. Fry the fillet on both sides in a hot frying pan for 5 minutes.
  3. We disassemble the cooled meat into several pieces.
  4. Cut the loaf into cubes and make croutons by placing the bread in hot oil.
  5. Cut the tomatoes in half.
  6. Chop the garlic.
  7. Prepare the sauce by mixing Worcestershire sauce, soy sauce, balsamic vinegar, chopped garlic, honey, lemon juice and mayonnaise.
  8. Cut the cheese into slices.
  9. Place a layer of meat, lettuce, tomatoes and cheese on a flat dish.
  10. Each layer should be poured with the prepared sauce.
  11. To finish, sprinkle the salad with croutons and dried cranberries.

Olivier salad options

It's hard to imagine a New Year's holiday without this famous salad. In 2021, you can prepare it in a special way:

Olivier with mussels and beetroot sauce

Ingredients:

  • canned green peas – 50 g;
  • canned corn – 50 g;
  • potatoes – 200 g;
  • mayonnaise sauce – 8 tbsp. l.;
  • carrots – 50 g;
  • boiled smoked ham – 50 g;
  • eggs – 2 pcs.;
  • chopped onion – 1 pc.;
  • Chilean mussels – 160 g;
  • salt and freshly ground black pepper to taste.

For the beetroot sauce:

  • mayonnaise sauce – 1 tbsp. l.;
  • small beets - 1 pc.;
  • large lemon – 1 pc.;
  • salt, freshly ground pepper to taste.

For decoration:

  • parsley leaves
  • wheat sprouts.

Preparation:

  1. Wash the carrots, potatoes and boil until tender.
  2. Cut these vegetables into cubes.
  3. Hard boil the eggs and cut into small pieces.
  4. Cut the ham and onion into cubes.
  5. Mix all ingredients and season with mayonnaise.
  6. For the dressing, grate raw beets and mix with lemon juice.
  7. After 7 minutes, squeeze out this mass.
  8. Mix beet juice with mayonnaise and beat with a whisk.
  9. To form the salad we use a culinary ring.
  10. Fill the ring one third with salad.
  11. Then we lay out the mussels and the salad again.
  12. We decorate the top again with mussels.
  13. Remove the ring and pour beetroot dressing over Olivier.
  14. Before serving, sprinkle the salad with parsley and wheat sprouts.

Olivier with pear

Ingredients:

  • potatoes – 5 pcs.;
  • carrots – 3 pcs.;
  • pear – 1 pc.;
  • green peas – 100 g;
  • boiled smoked ham – 150 g;
  • green onions – 50 g;
  • mayonnaise – 150 g;
  • lemon juice 2 tsp;
  • salt to taste

Preparation:

  1. Boil jacket potatoes and carrots.
  2. Peel the vegetables and cut them into cubes.
  3. We also chop the ham.
  4. Peel the pear and cut it into cubes too.
  5. Sprinkle it with lemon juice.
  6. Mash the green peas with a fork and season with lemon juice, pepper and salt.
  7. To form the salad we use a culinary ring.
  8. Next, we make layers of: potatoes, ham, pears, carrots and pea puree.
  9. Lubricate the layers with mayonnaise and sprinkle with herbs and onions on top.

When choosing a side dish, you need to take into account several factors: the fat content of the fish and the cooking characteristics. Fatty fish (Black Sea flounder, halibut, mackerel, salmon) go well with green vegetables (green peas, broccoli, spinach, etc.). Sour apples, grapefruit, orange and baked tomatoes will mask the fat content.

Thicker side dishes are suitable for low-fat fish (cod, pike perch, mullet, etc.).

Rice with spinach and raisins

Ingredients:

  • rice – 2 cups;
  • fresh or frozen spinach – 500 g;
  • raisins – 0.5 cups;
  • olive oil – 3 tbsp. l.;
  • white wine vinegar - 4 tbsp. l.;
  • garlic – 5 cloves;
  • coriander – 2 tsp;
  • ground allspice – 0.5 tsp;
  • ground white pepper - ¼ tsp;
  • salt to taste.

Preparation:

  1. Pour boiling water over the raisins and pour over the bite.
  2. Chop the garlic and mix with coriander and salt.
  3. Heat the garlic mixture with olive oil for 30 seconds.
  4. Add spinach and evaporate the moisture.
  5. Add raisins with rice, pepper and cook for 7 minutes.

Vegetable stir-fry

Ingredients:

  • broccoli – 200 g;
  • zucchini – 1 pc.;
  • sweet pepper – 1 pc.;
  • frozen corn grains – 200 g;
  • garlic – 3 cloves;
  • raw peanuts – 20 g;
  • soy sauce – 2 tbsp. l.;
  • vegetable oil – 2 tbsp. l.;
  • salt to taste.

Preparation:

  1. We separate the cabbage into small inflorescences.
  2. Chop the garlic.
  3. Cut the peppers and zucchini into cubes.
  4. Place these ingredients in a frying pan, add oil and a little water and simmer for several minutes until all the water has evaporated.
  5. Grind the peanuts and add to the pan along with the corn and soy sauce.
  6. Cook for another 5 minutes.

Garnish for meat

Meat can be supplemented with porridge, potatoes, and other vegetables: zucchini, eggplant, carrots, cabbage, pumpkin. You can prepare the side dish in different ways:

  • cook;
  • fry;
  • stew;
  • bake on the grill or in the oven.

Side dish of potatoes and beets

Ingredients:

  • beets – 2 pcs.;
  • potatoes – 4 pcs.;
  • rosemary – 1 sprig;
  • garlic – 8 unpeeled cloves;
  • vegetable oil – 4 tbsp. l.;
  • sea ​​salt - to taste.

Preparation:

  1. Peel the beets and potatoes.
  2. Cut into small pieces.
  3. Place the vegetables in a baking dish, add the unpeeled garlic cloves and rosemary leaves.
  4. Pour the contents with vegetable oil, salt and cover with foil.
  5. Preheat the oven to 180 degrees and cook the vegetables for 10 minutes.

Mini lasagna with minced meat and smoked meats

Another option for a hot and appetizing snack that can surprise guests at the festive table. It takes little time to prepare, but the result exceeds all expectations.

To prepare you will need:

  • 550 g minced beef;
  • 550 g raw smoked sausage;
  • 225 ml tomato sauce;
  • 150 g ricotta or mozzarella;
  • 125 g hard cheese;
  • rice paper sheets or phyllo dough - one piece per serving;
  • salt and black pepper;
  • greens for serving.

Preparation:

  • Cut the sausage into very small cubes and add to the minced meat. Add salt and pepper well, you can add dry or fresh herbs and mix until smooth.

  • Fry the resulting mass in sunflower oil until cooked. Add tomato sauce and stir.

  • Add salt and black pepper to the curd cheese and stir.

  • Grease muffin tins with vegetable oil and line with rice sheets or phyllo dough, forming cells that can be filled with filling.

  • Place a portion of spiced cheese on the bottom of each ramekin.

  • Top with a generous portion of fried minced meat and smoked meats.

  • Sprinkle everything with grated hard cheese.

  • Place the pan in an oven preheated to 180°C for 15-18 minutes and bake until the cheese is golden brown.

Advice!

If the volume of the form allows, then it is recommended to repeat the layers several times, then the appetizer will definitely resemble lasagna.
