I want to decorate the New Year's table beautifully and deliciously. But you need to spend a lot of time on everything. Therefore, for you, I have made a selection of simple and quick salads that will delight your loved ones. They are prepared from affordable and budget products, which is important for every housewife.

In addition to the classic Olivier salad and herring under a fur coat, which almost always accompany holiday feasts, there are many other salads. In this collection I will introduce you to new and excellent recipes. But don’t also forget about the rest of the simple snacks and hot dishes on the New Year’s table.

Salad for New Year 2021 - a simple and tasty recipe

A simple and light salad. It turns out tender and tasty. The ingredients include pineapple, which not everyone likes. In this case, I advise you to replace it with fresh cucumbers, corn or grated apple. This New Year's appetizer is prepared quite quickly. Be sure to try it.

Ingredients:

  • Chicken fillet - 1 pc.
  • Korean carrots – 150 gr
  • Boiled eggs - 2 pcs.
  • Canned pineapple - 3-4 rings
  • Hard cheese - 100 gr
  • Mayonnaise - 150-200 gr

It will be ideal if you use homemade mayonnaise for your salads, prepared with your own hands.

Preparation:

1. First boil the chicken fillet. To do this, pour water into a saucepan and put it on fire. After boiling, add 0.5 teaspoon of salt and add a completely thawed piece of breast. Bring to a boil again and cook for about 20 minutes (poultry takes longer, check for doneness). When the meat is boiled, leave it in the broth for another 20-30 minutes. Then remove and let cool completely.

2. When the fillet has cooled, cut it into cubes and place it on the dish prepared for the salad as the first layer. Spread evenly over the surface. Lubricate this layer with mayonnaise (1-2 tablespoons).

3. Cut the Korean carrots with a knife so that they are not so long. By the way, it can easily be prepared at home. You will find a suitable recipe here.

4. Next, spread the carrots in the next layer. Then grate the boiled eggs on a fine grater and place them on top of the carrots. Make a mesh out of mayonnaise. Cut the canned pineapples into cubes and place in another layer. Cover with mayonnaise mesh again. Place the final layer of finely grated hard cheese. Also distribute it over the open sides.

5. In principle, the salad is ready. All that remains is to decorate it with herbs (dill or parsley). And top with Korean carrot strips. To soak it better, put it in the refrigerator for 1-2 hours.

Puff Salad “Liver”

INGREDIENTS:

  • Chicken liver – 350 grams
  • Pickled cucumbers - 2-4 pieces (depending on size)
  • Large egg - 4 pieces
  • Carrots – 4 pieces
  • Onions - 4 pieces (or 2 large ones)
  • Mayonnaise – 100 grams
  • Salt - To taste
  • Refined oil - 2-3 tbsp. spoons (for frying onions)
  • Greens - To taste (to decorate the salad)

PREPARATION:

1. Boil carrots, eggs and liver until tender. Cool.

2. Peel the onion and cut it into small cubes. Fry in vegetable oil until cooked.

Add a pinch of salt.

3. Separate the whites and yolks. Set aside the yolks for the very last layer, and grate the whites on a coarse grater. From part of the protein I made flowers to decorate the salad.

4. Cut the cucumbers into small cubes. If the cucumbers are not large, then take four pieces; two large ones are enough.

5. Peel the carrots and grate on a coarse grater. I set aside a piece of carrot to decorate the salad.

6. Cut the liver into strips or cubes, as desired.

7. Let's start assembling the salad. The first layer is chicken liver and mayonnaise mesh.

8. Next is a layer of fried onions.

9. Next is a layer of cucumbers.

10. Next - the protein layer and the mayonnaise mesh.

11. Next - a carrot layer and a mayonnaise mesh.

12. The last layer is grated yolks.

13. Decorate the salad to taste, let it stand for 10-15 minutes, and then serve.

New Year's smoked chicken salad with pineapple

This incredibly tasty and impressive salad will definitely delight your guests. It is also prepared quite easily and quickly. And this is important when you need to serve a festive table with a lot of snacks.

Ingredients:

  • Smoked chicken meat – 250 gr
  • Walnuts - 100-150 g (more is possible)
  • Pineapples – 300 gr
  • Hard cheese – 150 gr
  • Garlic - 2 cloves
  • Mayonnaise (or sour cream) - 150-200 g

Preparation:

1. First, prepare all the ingredients. Cut the smoked chicken meat into cubes. Grate hard cheese on a fine grater. Finely chop the walnuts with a knife (leave a few for decoration). Chop the garlic as you like and mix with mayonnaise (or sour cream). Cut the canned pineapples into cubes if they are arranged in rings in your jar (you can immediately buy them in pieces).

2. Next, we begin to form the salad. Take a cooking ring or square mold. This is for convenience, but you can do without it. Place the meat in the first layer and brush it with sauce. Then add and smooth out the ground walnuts. Next add a layer of pineapples. Mix all the grated cheese with the remaining sauce and add a final layer.

3. Now the resulting salad needs to be decorated. Using a piping bag, make a mesh of mayonnaise or sour cream so that you get even squares. Then arrange the walnuts and pineapple pieces in a checkerboard pattern. Remove the pan and the appetizer is ready to serve.

Greek salad with creamy orzo pasta and crispy chickpeas


Just like a traditional salad, there are lots of colorful ingredients like zesty feta cheese, salty Kalamata olives and refreshing cucumber. Ingredients:

  • Boiled potatoes - 2 pcs.
  • Boiled carrots - 1 pc.
  • Onion - 1 pc.
  • Sprats - 1 jar
  • Boiled eggs - 4 pcs.
  • Pickled cucumbers - 3 pcs.
  • Processed cheese - 2 pcs.
  • Mayonnaise - to taste
  • Greens - for decoration

Preparation:

1. Peel the pre-boiled and cooled potatoes. Then grate on a coarse grater. Place it on the dish as the bottom layer and level it out. For convenience, you can use the cooking ring. Next, make a mayonnaise mesh on top.

2. Also grate the boiled carrots on a coarse grater and place in the next layer, also covering them with a mayonnaise mesh. Place finely chopped onions on top and spread evenly. Place the sprats from the jar (without oil) onto a plate and mash them thoroughly. Then place a new layer in the salad. Next, add grated eggs and cover with mayonnaise again.

3. Cut the pickled cucumbers (you can also use pickled ones, at your discretion) into small cubes. Lay them out in a new layer and cover with mayonnaise mesh.

Ingredients:

  • Onion,

Preparation:

1. Cut the pre-boiled and cooled chicken fillet into cubes. Place in a deep dish. Then chop the green onions. Cut the olives in half and add everything to the same bowl with the meat.

2. Take the walnuts and chop them with a knife into fine crumbs, but not to dust. Add to dish with other ingredients. Next, put the canned beans there. Add a little salt and pepper. Pour in vegetable oil, soy sauce and squeezed lemon juice. Mix everything well and the salad is ready to serve.

New Year's salad with Korean carrots and smoked chicken

I fell in love with this salad as soon as I tried it for the first time while visiting my sister. It is prepared very simply and quickly, since we mostly buy all the products in the store ready-made. This dish turns out to be quite satisfying and will especially appeal to lovers of Korean carrots, but it will not be too spicy, so feel free to serve it on the holiday table, it will be eaten first.

To prepare, take the following products:

  • Smoked chicken breast – 250 gr.
  • Canned red beans - 1 can
  • Korean carrots - 100 gr.
  • Marinated mushrooms (for example, honey mushrooms) - 180 gr.
  • Square crackers - 1 pack
  • Mayonnaise

Cooking steps:

Cut the chicken breast into small pieces.

Add Korean carrots, beans, mushrooms and mayonnaise to it and mix everything well.

Before serving, add croutons to the salad and stir. That's it, bon appetit!

Delicious New Year's salad "Count"

This salad is called a serious competitor to Olivier and herring under a fur coat. In fact, I think they can't be compared. Each of them has its own unique taste and charm. Just try this snack at least once and you will be completely delighted with it.

Ingredients:

  • Red onion (large) - 1 pc.
  • Boiled potatoes (medium) - 2 pcs.
  • Boiled beets (medium) - 2 pcs.
  • Canned peas – 100 g
  • Prunes – 100 gr
  • Walnuts – 50 gr
  • Boiled eggs - 6 pcs.
  • Boiled pork meat (you can use chicken) - 300 g
  • Mayonnaise – 400 gr
  • Salt, pepper - to taste

Onion marinade:

  • Vinegar 9% - 4-5 tablespoons
  • Water – 100-150 ml

Preparation:

1. Chop the onion very finely and place on a plate. Fill it with water and vinegar. Stir and leave to marinate for 10-15 minutes. Then drain the marinade.

2. Cut the boiled meat into small pieces and place it on the prepared dish as the first layer. To make the salad easier to form, you can use a cooking ring. Place 1/3 of the pickled onion on top and brush with mayonnaise.

3. Then grate the boiled potatoes on a coarse grater and place in the next layer. Also place 1/3 of the onion on it and brush with mayonnaise again. Top with grated boiled beets and remaining red onion. Cover it with mayonnaise too.

4. Next, lay out a layer of canned peas and brush it with the same sauce. Chop the prunes and chop the walnuts not very finely. Mix and lay out a new layer.

5. Peel the eggs. Grate the whites and yolks separately on a coarse grater. Place the grated whites in the next layer, add a little salt and pepper. Lubricate with mayonnaise.

6. Place grated yolks as the last layer. Then decorate as you wish and place the finished salad in the refrigerator for a couple of hours to soak well. After this, your “Count” can be served on the New Year’s table.

Simple salad with crab sticks without mayonnaise

After reading the name, you most likely immediately thought that it would be a “Crab” salad. But no. But I want to assure you that it tastes just as good as it, maybe even better, since it doesn’t get boring over time. The ingredients used for its preparation are the simplest and most accessible. And your guests, after trying it, will definitely ask you for the recipe.

We will need:

  • Chicken fillet - 700 gr.
  • Crab sticks - 1 pack.
  • Tomatoes - 500 gr.
  • Red onion - 1 pc.
  • Wine vinegar
  • Sour cream 10% mj. - 100 - 150 gr.
  • Salt, ground black pepper - to taste

Cooking steps:

Cut the chicken into small pieces, add salt and pepper, mix everything well. After 20 minutes (wait for the chicken to marinate), place them on the grill grate and bake for 20 minutes at 200 degrees. If you don't have a grill, you can bake the chicken pieces in the oven.

Cut the red onion into thin half rings and pour in wine vinegar to marinate for 10 - 15 minutes.

We cut crab sticks and tomatoes coarsely, much like chicken.

Mix all the ingredients, add a little salt and pepper, season with sour cream. If desired, you can add herbs, such as parsley.

Cooking method step by step:

Step 1. First of all, we need to make the sauce. To do this, mix all the ingredients except milk and lemon juice, mix well with a whisk, and add milk to the finished mass. After this, put the saucepan on high heat, as soon as it boils, cook for 1 minute, then reduce and cook for another 2-3 minutes until thickened, stirring constantly. Once the sauce has thickened, add lemon juice and remove from heat, let it cool.

Step 2. In the meantime, we will prepare the salad. Finely chop the chicken breast and pickled cucumbers. Grate the eggs on a coarse grater and the cheese on a fine grater. Squeeze the garlic under pressure, add the sauce and stir.

Step 3. Now let's prepare the breading. Finely chop the dill, grate the carrots and beets on a fine grater.

Step 4. Form small balls from the salad and roll them in different breadings.

Please note that it is best to use gloves for this step. This way the breading will not stick to your hands, and it also looks more aesthetically pleasing.

  • Pickled (or pickled) cucumbers - 150 g
  • Boiled eggs - 4 pcs.

Preparation:

  • 300 grams boiled chicken

  • 150 grams of cheese

The appetizer is perfect for busy housewives looking for quick salads. When you need to quickly set the table without much fuss with preparing dishes.

I highly recommend preparing it, you will love the salad for 2021 Year of the Bull, as the representative of the year will appreciate this dish.

Ingredients:

  • 300 g Chinese cabbage
  • 300 g smoked chicken fillet
  • 200 g fresh cucumbers
  • 200 g hard cheese
  • 140 g canned corn
  • 100 g mayonnaise
  • Salt, pepper to taste
  • For serving lettuce
  • Cherry tomatoes for decoration

Chop the Chinese cabbage and place in a bowl.

Cut the fresh green cucumber into strips; no need to use a grater, otherwise the vegetables will release juice. You can peel off the skin or leave it as is. Just don't forget to wash it.
